ASPARAGUS WITH DIJON VINAIGRETTE



Asparagus with Dijon Vinaigrette image

A simple asparagus side dish that really celebrates Spring. Serve it cold or room temperature, leftovers are wonderful chopped and mixed into a salad.

1 tsp Dijon Mustard
1 1/2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
2 tsp fresh chopped parsley
kosher salt and pepper to taste
1 pound thin asparagus (tough ends trimmed off)

Steps:

  • In a medium bowl, whisk mustard, vinegar and 1 tbsp oil. Add parsley and season with salt and pepper.
  • Steam or boil asparagus for 2-3 minutes until cooked and tender. Drain and run under cold water to stop the cooking.
  • Transfer asparagus to a serving dish and drizzle with the vinaigrette.
  • Can be served warm or chilled.

1/4 cup Dijon mustard
1/4 cup olive oil
4 garlic cloves, minced
1/4 teaspoon cayenne pepper
1 slice Brioche bread (1/2 inch thick), toasted
1 pound fresh asparagus, trimmed
1/2 cup shredded Asiago cheese

Steps:

  • In a small bowl, combine the mustard, oil, garlic and cayenne. Place bread in a food processor; cover and process until fine crumbs form. In a small bowl, combine bread crumbs and 1 tablespoon mustard mixture., Place asparagus in an ungreased 13-in. x 9-in. baking dish; drizzle with remaining mustard mixture. Sprinkle with bread crumb mixture and cheese. Bake, uncovered, at 425° for 14-18 minutes or until golden brown.

2 teaspoons Dijon mustard
2 tablespoons sherry or red-wine vinegar
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1 pound thin asparagus, trimmed and cut into 2 1/2-inch lengths

Steps:

  • Whisk together mustard, vinegar, and 1 tablespoon oil in a medium bowl. Season with salt and pepper.
  • Heat remaining 1 tablespoon oil in a large skillet over medium heat. Add asparagus, and season with salt and pepper. Reduce heat to medium-low. Cook, stirring frequently, until asparagus are just tender, 10 to 12 minutes. (If the spears begin to brown, reduce heat to low.)
  • Transfer asparagus to a serving dish. Drizzle with the vinaigrette, toss, and serve immediately.

3/4 lb asparagus spear (or one 10 oz. package frozen spears)
1/2-3/4 cup skim milk (or if not diabetic, whole milk)
2 teaspoons cornstarch
1 teaspoon Dijon mustard
1 dash white pepper (or black)
1 teaspoon grated parmesan cheese

Steps:

  • Snap off and discard the woody bases of the fresh aspargus. Cook the fresh asparagus, covered, in a small amount of boiling water for 8-10 minutes. Or better yet steam for 8-10 minutes till tender. If frozen, cook according to package directions. Drain asparagus; transfer to a serving platter and keep warm.
  • To make the sauce:.
  • In a small saucepan stir together milk and cornstarch. Cook and stir over medium heat until the mixture is thickened and bubbly. Cook and stir for 2 minutes more. Stir in mustard and pepper.
  • Spoon sauce atop asparagus. Sprinkle with Parmesan cheese. Enjoy!

3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 cups milk
2 tablespoons country-style Dijon mustard
1 to 2 teaspoons prepared horseradish
1/4 teaspoon salt
1/4 teaspoon pepper
24 fresh or frozen asparagus spears
8 thin slices fully cooked ham, (about 3/4 pound)
1 to 2 hard-boiled large eggs, sliced or chopped

Steps:

  • In a saucepan, melt butter; stir in flour until smooth. Gradually stir in milk and cook until bubbly and thickened. Stir in mustard, horseradish, salt and pepper. Remove from the heat., Place three asparagus spears on each ham slice. Roll up; secure with toothpicks if necessary. Place in a 13-in. x 9-in. baking pan; cover with sauce. Bake at 375° for 20 minutes or until asparagus reaches desired doneness. Place egg over sauce just before serving.

Simply Steamed Asparagus

Steps:

This is my simple, healthy and tasty way to make asparagus! This is also good with balsamic vinegar in place of lemon juice. Yes, this is has very strong flavors but I love it! I recently made this with carrot ribbons made with my vegetable peeler and it was a great addition.

1 (12 ounce) bag frozen thin asparagus spears (I use Trader Joe's frozen) or 1 (12 ounce) bag fresh thin asparagus spears (I use Trader Joe's frozen)
1 lemon, juice of
1 tablespoon whole grain Dijon mustard
black pepper
cooking spray

Steps:

  • Spray large skillet with oil. Heat over medium-high.
  • Add asparagus spears. Try to get them all flat in the pan. Turn a few times until lightly browned and heated through, but still bright green and crisp tender.
  • Stir together juice of 1 lemon, Dijon mustard and black pepper to taste (I put a lot). Pour mixture into pan with asparagus and toss. Cook 1 minute until heated.
  • Serve immediately.
  • I like to serve this with simple baked chicken breasts or fish.
