ASIAN MARINATED STEAK

Asian Marinated Steak image

This easy to make steak recipe serves a crowd with two pounds of meat because the tasty marinade and sliced steaks are so satisfying. It's a quick marinade to make and requires little hands on time, perfect for parties or weeknight dinners!

Categories     main dish

Time 4h25m

Number Of Ingredients 7

2 cloves garlic, minced
2 tablespoons rice vinegar
3/4 teaspoon fish sauce
1/4 cup soy sauce
2 teaspoons mirin
1/4 cup oil
2 pounds top sirloin

Steps:

  • Mix marinade ingredients in a container, and add beef. Turn the meat to ensure it is coated on all sides, and place in refrigerator. Marinate 4-5 hours or overnight, turning once or twice to ensure the marinade gets all sides evenly.
  • Remove steaks from the fridge one hour before cooking to let them come to temperature. Preheat your grill to medium high with another section at medium low.
  • Sear beef 3-4 minutes per side on medium high. Move to medium low to finish cooking until internal temperature reaches 145 degrees.
  • Remove beef and let it rest, tented by tin foil for 5-10 minutes. Once the meat has rested, slice against the grain for serving.
  • Serve with rice, julienned carrots and sliced green onion and vegetables of your choice.

PERFECT SOY-GRILLED STEAK

Perfect Soy-Grilled Steak image

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

Time 30m

Yield 4 servings

Number Of Ingredients 7

1/4 cup soy sauce
1 teaspoon peeled and minced ginger
1/2 teaspoon peeled and minced garlic
1 tablespoon honey, molasses or hoisin sauce
Freshly ground black pepper to taste
Juice of 1/2 lime
1 16- to 24-ounce boneless steak (rib-eye, skirt or strip), or one 24- to 32-ounce bone-in steak (rib-eye or T-bone)

Steps:

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

ASIAN MARINATED FLANK STEAK

Asian Marinated Flank Steak image

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

Categories     Steak

Time 13m

Yield 1 flank steak, 6-8 serving(s)

Number Of Ingredients 7

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!
