EASY ASIAN GROUND PORK LETTUCE WRAPS



Easy Asian Ground Pork Lettuce Wraps image

This ground pork lettuce wraps recipe is a total crowd pleaser! Tender browned ground pork mixed with crunchy veggies and a tangy sweet and sour sauce, all wrapped up in a cool and crisp bibb lettuce leaf, makes for a surprisingly satisfying meal in under 20 minutes.

1 tablespoon olive oil
1-lg. ground pork
1 medium onion, diced
2 cups colorful coleslaw mix
1 (8-oz.) can whole water chestnuts, drained and diced
salt and pepper, to taste
1 /4 cup hoisin sauce
2 tablespoons soy sauce
2 tablespoon rice vinegar
1 tablespoon freshly grated ginger
2 cloves garlic, minced
2 heads Boston bibb lettuce
sliced green onions (optional)
toasted black sesame seeds (optional)
lime wedges (optional)

Steps:

  • Add 1 tablespoon of olive to a large skillet set over medium-high heat. Add the ground pork, season it with a little salt and pepper, and brown it, breaking it up as it's cooking. Continue cooking it until there's no pink remaining, about 5-6 minutes.
  • Add in the diced onions and stir in the sauce ingredients: garlic, fresh grated ginger, hoisin sauce, soy sauce, and rice vinegar. Continue cooking until the onions become translucent, about 1-2 minutes.
  • Turn off the heat, and then stir in the coleslaw mix and chopped water chestnuts. Season with additional salt and pepper to taste.
  • To serve: spoon approximately 1/4 cup of the ground pork mixture into the lettuce leaf of your choice. Add toppings as desired. Roll or fold like a taco and enjoy!

1/2 cup white vinegar
1/4 cup sugar
1/8 teaspoon salt
2 medium carrots, julienned
1/2 medium onion, cut into thin slices
FILLING:
1 pound ground pork
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon mirin (sweet rice wine)
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon fish sauce, optional
ASSEMBLY:
8 Bibb lettuce leaves
1/2 English cucumber, finely chopped
1 small sweet red pepper, finely chopped
3 green onions, chopped
1/2 cup each coarsely chopped fresh basil, cilantro and mint
1 jalapeno pepper, seeded and finely chopped
1/4 cup salted peanuts, chopped
Hoisin sauce
Lime wedges

Steps:

  • In a small bowl, mix vinegar, sugar and salt until blended. Stir in carrots and onion; let stand at room temperature 30 minutes., In a large skillet, cook pork, ginger and garlic over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if desired, fish sauce., To serve, drain carrot mixture. Place pork mixture in lettuce leaves; top with cucumber, red pepper, green onions, carrot mixture and herbs. Sprinkle with jalapeno and peanuts; drizzle with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over filling.

1/2 cup honey
1/2 cup hoisin sauce
1/4 cup soy sauce
1/4 cup ketchup
4 garlic cloves, minced
4 teaspoons minced fresh gingerroot
1 teaspoon Chinese five-spice powder
1 boneless pork shoulder butt roast (3 to 4 pounds)
1/2 cup chicken broth
32 Bibb lettuce leaves
Shredded carrots, sliced green onions, shredded red cabbage and toasted sesame seeds, optional

Steps:

  • Combine first seven ingredients; pour into a large resealable plastic bag. Add pork; turn to coat. Refrigerate overnight., Transfer pork and marinade to a 4-qt. slow cooker. Cook, covered, 5-6 hours on low or until tender. Remove; when cool enough to handle, shred meat using two forks. Skim fat from cooking juices; stir in chicken broth. Thicken if desired. Return pork to slow cooker and heat through. Serve pork in lettuce leaf and garnish with desired toppings.

2 lbs ground pork
1/2 onion, chopped
1 tablespoon minced ginger
3 cloves garlic, minced
3 tablespoons rice wine or 3 tablespoons dry sherry
4 tablespoons hoisin sauce
2 tablespoons oyster sauce
2 tablespoons soy sauce
1/4 cup chopped water chestnut
3 tablespoons cilantro, chopped
1/3 cup toasted pine nuts
iceberg lettuce (2 heads)

Steps:

  • Cut lettuce ahead of time into cup shapes to have it ready; choose leaves towards the center of the head of lettuce.
  • Use kitchen shears to cut any shapes needed, if necessary; set aside to chill.
  • Saute pork in a large skillet until it is browned.
  • Remove meat from skillet and drain off any fat.
  • Add onions to skillet and cook for 5 minutes or until tender, then stir in garlic and ginger.
  • Add wine and pork to the skillet and stir until wine reduces.
  • Add hoisin, oyster and soy sauces, stirring to mix well.
  • Stir in water chestnuts and cilantro and heat through.
  • Place on platter and garnish with toasted pine nuts.
  • Serve meat with lettuce cups.

Fans of Asian food will flip over these pretty lettuce packets, filled with a blend of minced chicken, peanuts, gingerroot, and sesame.

1/2 cup apricot preserves
1/3 cup fresh lime juice
2 tablespoons lite soy sauce
2 garlic cloves, minced
1 teaspoon cornstarch
1 tablespoon dark sesame oil or vegetable oil
2 boneless skinless chicken breast halves, finely chopped
1/2 cup chopped seeded cucumber
1/2 cup grated carrot
2 tablespoons chopped peanuts
1 teaspoon grated gingerroot
1 teaspoon chopped garlic
16 leaves (about 2 heads) butterhead (Bibb or Boston) lettuce

Steps:

  • In small bowl, combine preserves, lime juice, soy sauce and garlic; mix well. Spoon 1/4 cup sauce into 1-cup measuring cup. Stir in cornstarch until smooth; set aside. Refrigerate remaining sauce in bowl until serving time.
  • Heat oil in medium skillet over medium-high heat until hot. Add chicken; cook 5 to 7 minutes or until browned, stirring frequently. Stir in cucumber, carrot, peanuts, gingerroot and garlic. Stir in reserved sauce with cornstarch. Cook 2 to 3 minutes or until bubbly and thickened, stirring constantly. Spoon mixture into shallow dish. Cover; refrigerate 30 minutes or until cooled.
  • Spoon 2 tablespoons chicken mixture onto center of each lettuce leaf. Fold sides of lettuce in toward center; roll up like burrito. Secure with toothpicks. Place seam side down on serving platter. Serve immediately, or cover and refrigerate until serving time. Serve wraps with sauce.
