Asian Orzo and Rotisserie Chicken Salad image

Put the rotisserie chicken to work in this Asian Rotisserie Chicken and Orzo Salad with edamame and toasted slivered almonds. Serve this salad as a side!

2 cups frozen edamame (shelled)
1-1/2 cups orzo pasta, cooked
3 cups chopped rotisserie chicken
1 red pepper, chopped
4 green onions, sliced
1/4 cup slivered almonds, toasted
1 cup KRAFT Asian Toasted Sesame Dressing

Steps:

  • Cook edamame in saucepan of boiling water 3 min.; drain.
  • Rinse edamame with cold water; drain well. Place in large bowl.
  • Add remaining ingredients; mix lightly.

For a salad with the best texture, shred the chicken instead of cubing it. The technique is simple: Holding a fork, tines down, in each hand, pull the meat into pieces along the grain.

2 cups fresh cilantro leaves and soft stems
1/4 cup fresh lime juice (from 2 limes)
1/4 cup vegetable oil
Coarse salt and ground pepper
1 rotisserie chicken (about 2 1/2 pounds), skin and bones removed, meat shredded (about 4 cups)
1/4 medium red cabbage (8 ounces), cored and thinly sliced crosswise
1 red bell pepper (ribs and seeds removed), thinly sliced
2 scallions, thinly sliced
1 large head romaine lettuce, torn into bite-size pieces
1/2 cup cashews

Steps:

  • Make dressing: In a blender, combine cilantro, lime juice, and oil; season with salt and pepper. Blend until smooth.
  • In a large bowl, combine chicken, cabbage, bell pepper, and scallions; season with salt and pepper. In another large bowl, toss lettuce with 1/2 cup dressing. Divide among four bowls, and top with chicken mixture. Drizzle all with remaining dressing, and sprinkle with cashews.

1 (9 ounce) frozen sugar snap peas
1 (16 ounce) package orzo pasta, cooked and drained
1 cup water chestnut, drained and chopped
3 cups diced cooked chicken
3 green onions, chopped
1 medium red bell pepper, diced
1/2 cup vegetable oil
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons hoisin sauce
1 (2 ounce) package slivered almonds, toasted

Steps:

  • Cook sugar snap peas according to package directions; drain well and let cool slightly.
  • In a large bowl combine orzo, water chestnuts, chicken, green onion, red bell pepper and sugar snap peas.
  • In a small bowl, whisk together oil, vinegar, soy sauce and hoisin sauce.
  • Pour over orzo mixture, tossing gently to coat.
  • Stir in toasted almonds.
  • Cover and chill until ready to serve.

This recipe is based on Paula Deen's salad recipe that is posted, but I modified it so much that it's almost a totally different dish. My version is cooked and contains some different ingredients.

1 lb asparagus, chopped
1 (16 ounce) package orzo pasta, cooked and drained
3 cups diced cooked chicken
3 green onions, chopped
1 red bell pepper, chopped
2 tablespoons soy sauce
2 teaspoons hoisin sauce
1 (2 ounce) package slivered almonds, toasted
1/4 teaspoon fresh ginger, minced (or powdered)
1 garlic clove, minced
1 tablespoon sesame oil (or vegetable oil)
1 tablespoon sriracha sauce (careful, it's spicy!)

Steps:

  • Cook the garlic and ginger in the oil for 1-2 minutes.
  • Add the red peppers and asparagus, and sautee for 2-3 minutes.
  • Add the soy sauce, hoisin sauce, and sri racha; simmer for 5 minutes.
  • Stir in the orzo, chicken, and toasted almonds until well combined. Serve warm or chilled.
