Chicken Spareribs with Rice image

I got this recipe somewhere along the way and have tweaked it to make it mine. It's one of my favorites and I hope you'll try it. It's a different take on Chinese spareribs

SPARERIBS
1 tablespoon(s) vegetable oil
2-3 pound(s) chicken thighs, skinless and boneless
3/4 cup(s) water
1/4 cup(s) soy sauce
1/3 cup(s) light brown sugar, packed
4 tablespoon(s) ketchup
2 tablespoon(s) apple cider vinegar
1 teaspoon(s) garlic, chopped
1/4 teaspoon(s) ground ginger
2 tablespoon(s) green onions, chopped
1 tablespoon(s) cornstarch
RICE
1 1/2 cup(s) long grain rice
3 1/3 cup(s) water
1/2 teaspoon(s) salt
1 tablespoon(s) vegetable oil
2 - eggs
1/3 cup(s) soy sauce
1/4 cup(s) green onions, chopped

Steps:

  • Cook rice according to directions. (In ingredients I have the amount of rice and water for 6 servings for the rice that I use) Add salt and oil to water and rice.
  • In medium size bowl, combine water, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger and green onions. Stir until combined and set aside.
  • Trim chicken thighs of fat and you can either leave whole or cut into bite size pieces, whichever you prefer. Place oil in pan over medium heat and add chicken. Cook chicken 5-7 minutes or until cooked through.
  • Add the soy sauce mixture to the chicken. Bring to a boil, reduce heat and cook for about 10 minutes. Turning occasionally.
  • In a small bowl or cup, add cornstarch and 1 Tablespoon of water. Mix and add to chicken. Stir until the sauce has thickened.
  • In a small frying pan, scramble up the eggs. Add the soy sauce, green onions and eggs to the finished rice. Enjoy!

I got this recipe out of a TOH issue a couple years back. My two year old always calls it Chinese. This is very quick and very delicious. My kids just eat it up. I make it with rice (with added dried garlic, dried chives and garlic salt) with the extra sauce poured over it. Add any veggie to your liking. ** Sometimes I do need to double the cornstarch and water**

8 bone-in chicken thighs
2 tablespoons canola oil
1 cup water
2/3 cup packed brown sugar
2/3 cup soy sauce
1/2 cup apple juice
1/4 cup ketchup
2 tablespoons cider vinegar
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/2 teaspoon ground ginger
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Directions:.
  • In a Dutch oven, brown chicken over medium heat in oil in batches on both sides; drain. Return all of the chicken to the pan.
  • In a large bowl, combine the water, brown sugar, soy sauce, apple juice, ketchup, vinegar, garlic, pepper flakes and ginger; pour over chicken. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until chicken juices run clear.
  • Remove chicken to a platter and keep warm. Combine cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken. Yield: 4 servings.

After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

3 tablespoons hoisin sauce
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon sake
1 teaspoon rice vinegar
1 teaspoon lemon juice
1 teaspoon grated fresh ginger
½ teaspoon grated fresh garlic
¼ teaspoon Chinese five-spice powder
1 pound pork spareribs

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.
  • Place the broiler rack in the center of the oven. Cook for 40 minutes, turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

1/2 cup apple juice
1/4 cup ketchup

Steps:

A quick and easy chicken dish, that tastes a lot like spareribs!

1 Tbsp canola oil
2 lb boneless, skinless chicken thighs
3/4 c plus 1 tbsp water
1/4 c light soy sauce
1/3 c light brown sugar
3 Tbsp ketchup
2 Tbsp apple cider vinegar
1 tsp minced garlic
1/4 tsp ground ginger
1 Tbsp cornstarch
cooked white rice

Steps:

  • 1. In lg skillet, over meg-high heat, heat oil until hot. Add chicken and brown on all sides. In bowl, whisk together 3/4 cup water, soy sauce, brown sugar, ketchup, vinegar, garlic and ginger.
  • 2. Stir sauce into skillet. Bring to a boil. Cover, reduce heat to low. Simmer 15 mins, turning chicken over occasionally. In small bowl whisk together remaining water and cornstarch. Stir into chicken and sauce.
  • 3. Cook until thickened. Serve over hot rice.

Yummy! This is my own creation and everybody just loves them!! I like to make these on the grill in the warm weather months. When I do that, I reserve about 1/2 the marinade BEFORE marinating the meat, and use the reserved marinade to brush the ribs with while grilling........or I'll just make 2 batches of marinade, and use the second batch just for brushing while grilling. Prep time does NOT include marinating time.

2 lbs boneless pork spareribs
2 teaspoons olive oil
1/3 cup pineapple juice
1/3 cup light soy sauce
4 tablespoons hoisin sauce
3 tablespoons dry white wine
2 tablespoons rice wine vinegar
2 tablespoons creamy peanut butter
1/8 cup packed brown sugar
3 garlic cloves, minced
3/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
4 green onions, thinly sliced

Steps:

  • In a small bowl, whisk together oil, pineapple juice, light soy sauce, hoisin sauce, wine, vinegar, peanut butter, brown sugar, garlic, ginger, pepper and onions until well-blended.
  • *If grilling, reserve about 1/2 of this mixture (BEFORE it touches raw meat!) for brushing meat while grilling OR double the marinade recipe for brushing during grilling*.
  • Place spare ribs in a glass pan and coat with the sauce. Cover and refrigerate for 8 hours or up to 24 hours.
  • Bake at 375 degrees Fahrenheit for about 45 minutes. Or grill for 10 to 15 minutes, turning ribs occasionally and brushing with the reserved marinade.

If you're strapped for time, 30 minutes is the minimum marinating time. Add cornstarch and water to the marinated ribs and mix well. With the cornstarch, there should be little or no liquid in the mixture.
  • Place the ribs on a heatproof plate for steaming. We used small dim sum style plates as you can see in the photos, but you can use a large, shallow heat-proof bowl for the whole batch. Once you have plated the ribs, sprinkle the peppers and the fermented black beans over the top.
  • Next, bring some water to a simmer in a metal steamer or in a wok with a steaming rack set in the bottom. Place the plate(s) into your steamer apparatus, cover, and steam for 10 minutes, or until the ribs are opaque and cooked through. Serve as dim sum or as a delicious one plate meal over rice!
