Asian Chicken Salad with Sesame Dressing (Costco Copycat) image

All the flavors of the Costco Asian Salad Kit, including delicious honey miso dressing with chicken, almond and crispy noodle toppings.

1/4 cup plain yogurt ((mayonnaise is an easy substitute here too))
2 tablespoons mellow white miso paste
4 teaspoons rice vinegar
2 teaspoon chopped ginger
2 teaspoon soy sauce
2 teaspoons honey
2 teaspoons sesame oil
1/4 cup orange juice
2 cups cooked chicken breast meat (, cubed)
1 head of lettuce (, chopped)
1/4 cup sliced almonds
3/4 cup wonton strips
3/4 cups crispy chow mein noodles

Steps:

  • To make the dressing, add all the ingredients in a blender or food processor until smooth.
  • Layer the salad with lettuce, chicken, almonds, wonton strips and chow mein noodles before pouring on the dressing.
  • Enjoy the fact you didn't spend $10 on the kit. ;)

Number Of Ingredients 10

Rotisserie chicken (1/2 bird)
1 cup sour cream
1/2 cup mayo
4 stalks celery, chopped finely
1/3 cup sweet onion, chopped finely
Salt 1 teaspoon
Sugar 1 teaspoon
1 tablespoon Lemon juice
1 teaspoon Parsley
White vinegar - 1 tbsp

Steps:

  • 1. Remove chicken from the bones - remove the skin as well (not great in this salad) 2. You will use about 1/2 of the chicken from a Costco rotisserie chicken. You want to chop it up finely - I used a food chopper, and it worked great. 3. Chop celery and sweet onion very finely - again, I used a food chopper. 4. In a separate bowl, mix together mayonnaise, sour cream, salt, sugar, lemon juice, parsley, and vinegar. 5. Combine chicken, celery, and onion in a large bowl. 6. Fold in the dressing and combine together. 7. Refrigerate a few hours for best results!
