CHINESE CHICKEN PIZZA WITH HOISIN SAUCE



Chinese Chicken Pizza with Hoisin Sauce image

Number Of Ingredients 9

1 (4-inch) ball prepared dough, at room temperature
2 tablespoons olive oil
1/4 cup hoisin sauce (available in the Asian section of most grocery stores)
2 grilled skinless, boneless chicken breasts, diced or equivalent amount of store-bought BBQ chicken, or any left-over chicken
4 scallions, finely sliced
2/3 lightly-packed cup cilantro leaves, stems removed before measuring
1/2 red bell pepper, seeds and membranes discarded, sliced into paper-thin strips
1 cup grated mozzarella
Salt and freshly ground pepper

Steps:

  • Sprinkle your rolling surface with a handful of flour or cornmeal. Place dough directly in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • Place dough in the center of the cooking grate, directly over the heat for one to three minutes, until the crust is well marked and browned. Flip dough and spread hoisin sauce evenly over cooked side of crust. Spread chicken, scallions, cilantro, and bell pepper evenly over crust. Sprinkle cheese over the top. Move to Indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
  • Remove from grill, season with salt and pepper, and slice. Serve immediately.

4 rhodes frozen texas rolls or 6 dinner rolls, thawed to room temperature
1/4 cup hoisin sauce, divided
2 cups shredded rotisserie chicken
1 cup grated mozzarella cheese, divided
2 tablespoons green onions
1/3 cup yellow pepper, strips
1/3 cup red pepper, strips
grated carrot
chopped fresh cilantro

Steps:

  • Spray counter lightly with non-stick cooking spray.
  • Combine rolls into a ball and roll into a 13-inch circle.
  • Cover with plastic wrap and let rest 15 minutes.
  • Remove wrap and place dough on a sprayed 12-inch pizza pan.
  • Spread dough evenly with 2 tablespoons hoisin sauce.
  • Combine chicken with remaining hoisin sauce and stir until evenly coated.
  • Sprinkle crust with 2/3 cup cheese.
  • Top with chicken, green onions, red and yellow peppers and remaining cheese.
  • Bake at 425°F 8-12 minutes.
  • Remove from oven and top with carrots and cilantro.

The ingredients may seem unusual, but one bite, and you'll keep coming back for more!! Definitely not the traditional American pizza, very nice when you just want something "a little different". The combination of flavors is extraordinary! I use part-skim mozzarella to keep the fat-content low. Usually serve this with a green salad, but as I think of it, egg rolls would also be a great side! Sometimes I add veggies (onions, green pepper, mushrooms, etc.) before baking. MMM!

8 ounces boneless skinless chicken breasts, cut into cubes
2 tablespoons creamy peanut butter or 2 tablespoons crunchy peanut butter (I prefer creamy)
4 cloves garlic, minced
2 teaspoons minced fresh ginger
1/4 cup brown sugar
3/4 cup white wine vinegar or 3/4 cup rice wine vinegar
1/4 cup soy sauce
black pepper, to taste
1/8 teaspoon crushed red pepper flakes (optional)
3 tablespoons water
1/2-3/4 cup shredded mozzarella cheese
1 prepared pizza crust ("12-14-inch")

Steps:

  • Heat oven to 400 degrees.
  • In nonstick pan sprayed with cooking spray, cook chicken just until cooked through and no longer pink; remove from pan.
  • Whisk together next 9 ingredients, and add to pan.
  • Cook over medium-high heat, stirring constantly.
  • When sauce is bubbly and starts to thicken, return chicken to pan.
  • Cook 3-5 minutes, until sauce becomes almost like a syrup.
  • Sprinkle cheese over prepared pizza crust in pizza pan.
  • Spread chicken mixture on top of cheese.
  • Add veggies (if using).
  • Bake at 400 degrees about 15 minites, until crust browns and cheese is melted.
  • Let stand 5 minutes before serving.

  • In a medium bowl, combined 7 tablespoons of BBQ sauce with the chicken, toss to coat evenly, set aside.
  • On a lightly floured surface roll each of the dough balls out into a 12-inch circle and transfer to a pizza pans. Divide the chicken mixture evenly among the two pizzas. Top with sliced onions, fresh mozzarella, and shredded mozzarella. Drizzle the remaining 1 tablespoon on top of the pizzas. You can use 1 additional tablespoon of sauce, if you'd like. Bake the pizzas for 10 -13 minutes. For the last minute, turn the broiler on to help the cheese get bubbly and the crust to crisp up. That's optional.
  • Top the hot pizzas with fresh cilantro, scallions and red pepper flakes. Slice and serve the pizzas immediately. Leftovers can be covered tightly and stored in the refrigerator. To reheat just place in an oven that's been preheated to 325 degrees F for 5 - 8 minutes.
