ASIAN BEEF WITH MUSHROOMS & SNOW PEAS
Asian Beef with Mushrooms and Snow Peas - simple dinner that uses basic ingredients! Tender mushrooms, crisp snow peas, and thinly sliced sirloin steak are sautéed with garlic. Your family will love this easy weeknight dinner!

- Combine all the sauce ingredients in a bowl - whisk to combine. Set aside.
- Bring water in a medium pan to boil. Add snow peas, boil them for 5 minutes, drain. Set aside.
- Heat a large skillet until hot, add 2 tablespoons olive oil - it should sizzle.
- Immediately add thinly sliced mushrooms - cook them on high heat, turning occasionally, until they brown nicely. Salt them midway, just a little bit. Do not add too much salt, as you will be adding tamari sauce later.
- Remove mushrooms to a bowl.
- To the same skillet, on high heat, add 2 tablespoons of olive oil, which will sizzle right away. Immediately add thinly sliced meat.
- Note: You might want to do this in 2 batches. You will want each slice of beef to touch the bottom of the skillet and for meat slices not to be crowded. This will ensure that beef will brown on high heat.
- Cook beef on one side until it browns nicely.
- Turn over all beef slices to the opposite side, and cook more, on high heat, until all slices brown nicely. Remove this batch to a bowl.
- Add the second batch of beef, and repeat.
- Return all of the cooked beef slices back to the skillet.
- Add the snow peas and cooked mushrooms, then the Asian sauce.
- Stir everything to combine on high heat, for about 1 minute. Turn off heat. Cover the skillet with a lid.

- In a bowl, mix together the soy sauce, sherry, cornstarch, brown sugar and ginger. Add the beef to a separate bowl and pour one-third of the liquid over the top. Save the rest of the liquid. Toss the beef and set aside.
- Heat the oil in a heavy skillet (iron is best) over high heat. Add the snow peas and stir for 45 seconds, getting as much color on them as possible. Remove to a plate.
- Allow the skillet to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Spread out the meat as you add it to skillet, but do not stir for a good minute. (You want the meat to get as brown as possible as quickly as possible.) Sprinkle half the scallions over the meat. Flip the meat to the other side and cook for another 30 seconds. Remove to a clean plate.
- Repeat with the other half of the meat, allowing the skillet to get very hot again first. After flipping, add the first plateful of meat, the reserved liquid, the crushed red pepper and snow peas. Stir over high heat for 30 seconds, and then turn off the heat. Check the seasonings and add salt only if it needs it. The mixture will thicken as it sits. Serve immediately over rice.

- Combine the following in another small bowl: cornstarch, blend in oyster sauce, sesame oil, sugar, water, ginger-sesame sauce, garlic and chicken broth.
- Cover and leave in fridge overnight.
- Combine the following in a medium size mixing bowl in this order: corn starch, stir in soy sauce, gradually add water, red wine and sugar.
- Slice beef against the grain in strips approximately 2 inches long.
- Add to marinade bowl. Toss with a fork until well coated.
- Cover and leave in fridge overnight.
- Heat oil in a large nonstick frying pan or work at medium high.
- Add ginger, drained marinated beef and chili flakes.
- Slice green onion and add to pan.
- Toss until meat browns.
- Add stir-fry sauce and snow peas.
- Toss until sauce thickens slightly and snow peas are tender but crisp.
- Serve over rice.

- In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.
- Heat oil in a wok or skillet over medium high heat.

- Slice beef across the grain into thin slices the thickness of a quarter. Use only the lean part. Toss beef slices with soy sauce and cornstarch. Remove string from snow peas by breaking the blossom end of the bean and pull the strings down the sides. Leave the pea pods whole. Wash and drain. Heat 1 tablespoon oil. Ch'ao the pea pods for a minute, only until they are a darker brighter green and not even slightly wilted. Remove. Heat 3 tablespoons oil until very hot.
