Creamy Blueberry Gelatin Salad image

2 (3 ounce) packages grape gelatin
2 cups boiling water
1 (21 ounce) can blueberry pie filling
1 (20 ounce) can unsweetened crushed canned pineapple, undrained
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Cool for 10 minutes. Stir in pie filling and pineapple until blended. Transfer to a 13 x 9 x 2 inch dish. Cover and refrigerate until partially set, about 1 hour.
  • For topping, in a small mixing bowl, combine the cream cheese, sour cream, sugar and vanilla. Carefully spread over gelatin; sprinkle with walnuts. Cover and refrigerate until firm.

2 packages (3 ounces each) grape gelatin
2 cups boiling water
1 can (21 ounces) blueberry pie filling
1 can (20 ounces) unsweetened crushed pineapple, undrained
TOPPING:
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Cool for 10 minutes. Stir in pie filling and pineapple until blended. Transfer to a 13x9-in. dish. 2 (3 ounce) packages raspberry flavored Jell-O® mix
2 cups hot water
1 (20 ounce) can crushed pineapple, drained
1 (21 ounce) can blueberry pie filling
1 (8 ounce) package cream cheese
½ cup white sugar
1 cup sour cream
1 teaspoon vanilla extract

Steps:

  • Combine hot water and gelatin; stir until dissolved. Stir in pineapple and blueberry pie filling. Pour into a 9x13 inch dish and chill in refrigerator until firm.
  • Cream together cream cheese and sugar. Beat in sour cream and vanilla. Spread over firm gelatin. Chill until serving.

This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

2 (3 ounce) packages grape flavored Jell-O® mix
2 cups boiling water
1 (8 ounce) can crushed pineapple, undrained
1 (21 ounce) can blueberry pie filling
1 (8 ounce) package cream cheese, softened
1 cup sour cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
  • In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

1 can blueberry pie filling

1 teaspoon vanilla

Steps:

  • Mix jello, boiling water, pineapple and pie filling together and refrigerate until set.
  • When the jello is set, mix topping ingredients together and spread over jello.

This is a delicious salad or dessert that requires little effort but looks and tastes heavenly. I used raspberry gelatin in place of cherry because it's what I had. I also threw in some raspberries with the blueberries. Don't make your cream cheese mixture too soon or you'll sample a little too much before the jello is ready...cooks beware! I used frozen fruit, but I'd love to try it when fresh fruit is in season. I found the recipe in Taste of Home Parties, Potlucks, and Barbecues from Mildred Livingston in Phoenix, Arizona. Cook time excludes chilling time.

6 ounces cherry gelatin
2 cups boiling water
15 ounces blueberries, drained (canned)
8 ounces cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
1 cup sour cream (8 ounces)
1/4 cup pecans, chopped

Steps:

  • In a large bowl, dissolve gelatin in boiling water.
  • Stir in blueberries and pour into an 11x7x2" dish. Chill until set.
  • In a large mixing bowl, beat cream cheese and sugar until smooth.
  • Add vanilla and sour cream and mix well.
  • Spread over the gelatin layer after gelatin is set.
  • Sprinkle with the pecans.
  • Chill for several hours or overnight.
