This hearty, Franco-Asian beef stew gets a fresh kick from basil and hot chiles.

3 clove garlic
3 stalk lemongrass
2 tbsp. soy sauce
2 tbsp. vegetable oil
1 tsp. kosher salt
1 tsp. sugar
tsp. Chinese five-spice powder
3 1/2 lb. beef chuck
2 1/2 tbsp. vegetable oil
1 medium onion
2 clove garlic
1 tbsp. minced fresh ginger
1/4 tsp. crushed red pepper
2 tbsp. tomato paste
5 c. beef broth
4 carrots
3 star anise pods
1 whole stalk lemongrass
kosher salt
Cooked rice noodles
1/2 c. torn basil leaves
1 long fresh red chile

Steps:

  • In a mini food processor, mince the garlic with the lemongrass. Add the soy sauce, oil, salt, sugar, and five-spice powder and pulse to combine. In a large bowl, toss the beef with the marinade to coat thoroughly. Let marinate at room temperature for 30 minutes.
  • In an enameled cast-iron casserole, heat 1 tablespoon of the oil over moderate heat. Add half of the meat; cook until lightly browned. Transfer to a bowl. Repeat with 1 tablespoon of the oil and the remaining meat.
  • Add the remaining 1/2 tablespoon of oil to the casserole along with the onion, garlic, ginger, and crushed red pepper. Add 1 tablespoon of water, cover, and cook over low heat, stirring occasionally, until the aromatics are softened, about 5 minutes. Add the tomato paste and cook over moderately high heat, stirring, until glossy, about 1 minute. Add the broth and bring to a boil, scraping up any browned bits.
  • Return the meat to the casserole. Add the carrots, star anise, and lemongrass. Simmer over low heat, stirring occasionally, until the meat is tender, 1 hour and 45 minutes. Using a slotted spoon, transfer the beef to a bowl. Boil the sauce over high heat until reduced to 4 cups, 3 minutes. Discard the star anise and lemongrass. Return the beef to the casserole. This star of this meal is the barely tender basil that gets stirred into the umami-packed stir-fried beef after it has been taken off the heat. The basil adds a freshness with hints of anise that balance out the heavy soy flavor.

1 1/2 cups long-grain white rice
1/4 cup low-sodium soy sauce
5 teaspoons fish sauce
2 tablespoons fresh lime juice, plus lime wedges for serving
1 tablespoon sugar
1 tablespoon vegetable oil
1 1/4 pounds ground beef
2 scallions, chopped
2 Fresno chile peppers, halved lengthwise, seeded and thinly sliced
1 cup snow peas, halved
2 cloves garlic, very thinly sliced
2 cups fresh basil leaves

Steps:

  • Cook the rice as the label directs. Set aside off the heat, about 5 minutes, then fluff with a fork.
  • Meanwhile, combine the soy sauce, fish sauce, lime juice and sugar in a small bowl. Whisk to dissolve the sugar.
  • Heat the vegetable oil in a large nonstick skillet over high heat. When the oil is hot, crumble the beef into the skillet and cook, undisturbed, until slightly crisp on the bottom, 2 to 3 minutes. Cook, stirring with a wooden spoon to break up the meat, until cooked through, 1 to 2 more minutes. Remove to a paper towel-lined plate with a slotted spoon. Discard the fat in the skillet and wipe the skillet clean.
  • Return the skillet to medium-high heat and add the soy sauce mixture. Bring to a simmer, then add the beef, scallions, chiles, snow peas and garlic. Cook, stirring, until the vegetables are crisp-tender, 1 to 2 minutes. Remove from the heat and add the basil. Stir until just wilted, 30 seconds to 1 minute.
  • Divide the rice among shallow bowls. Spoon the stir-fry on top. Serve with lime wedges.
