- In a large skillet, cook and crumble beef over medium heat until no longer pink, 4-6 minutes; drain. Add water and one envelope taco seasoning; cook until thickened. Cool slightly., Beat sour cream, cream cheese and remaining taco seasoning until blended. Spread in a 3-qt. dish; add ground beef. Top with lettuce, cheddar, tomatoes, pepper and olives.

Steps:
- Place ground beef and onion in a large, deep skillet. Cook over medium high heat until beef is evenly brown and onions are soft. Drain and set aside.
- In a medium saucepan over low heat, melt the cheese. Mix in the ground beef, onion and diced tomatoes with green chile peppers. Serve warm.

LOADED NACHO DIP
This cheese dip is literally loaded with all kinds of texture and flavor. It's a super easy crock pot recipe and if you use the liner like recommended. The dip is full of ground meat and yummy bacon. The onions are cooked with the meat mixture so they are nice and soft. This dip makes a lot, so it would be perfect for a crowd.

- 1. Brown ground beef, chopped bacon, onion and garlic together until done. Drain well. Sprinkle meat mixture with taco seasoning and stir. Put a liner in a 5 quart crock pot. I always use a crock pot liner as I hate cleaning cooked-on cheese out of my crock pot. If you don't use a liner, spray the crock pot well with non-stick spray before adding beef mixture. Dump beef mixture into crock pot. Set temperature at low.
- 2. Add in the quart of chunky salsa and stir. I generally use mild or moderate but if you like it fiery, use hot. Stir in the black and green olives, diced green chilies, milk and cubed Velveeta. Let cook on low for at least an hour, stirring occasionally. Turn crock pot down to keep warm setting and serve.

- In a blender or food processor, thoroughly mix cream cheese, sour cream and mayonnaise. Spread the mixture evenly in the bottom of a medium serving dish.
- In individual layers, top the mixture with cocktail sauce, mild salsa, diced green onion, red bell pepper, green bell pepper, shredded Cheddar cheese and shredded lettuce.
- Arrange cucumber slices around the edge of the serving dish. Chill in the refrigerator at least 2 hours before serving.

- Combine together softened cream cheese and sour cream in a blender (or with hand mixer).
- Add in Taco Seasoning and mix well.
- Smooth into flat pie dish.
- Add lettuce, tomatoes, cheese as preferred.
- Serve Chilled with Nacho Chips (Bite Size are best!).
EASY BEEF NACHO CHEESE DIP
While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

- Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
- Chunk the Velveeta and add to crockpot.
- Pour in jar of salsa and add the prepared meat.
- Let melt together in the crockpot, stirring occasionally.
- At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
- We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

- Cut Velveeta into small cubes.
- Brown meat until fully cooked. Should be very little grease.
- When meat is fully cooked slowly add cubes of Velveeta, while stirring frequently.
- Turn burner to medium/high.
- When Velveeta is melted turn burner to medium/low.
- Add Rotel Tomato mix. Mix well.
