Easy Keto Korean Beef with Cauli Rice image

Try this delicious keto Korean beef with cauliflower rice; it is just so quick and easy to make and will become a family favorite! This makes the perfect weeknight meal.

2 teaspoons sesame oil
1 pound lean ground beef
3 cloves garlic, minced
¼ cup soy sauce
1 tablespoon coconut sugar
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
2 cups cauliflower rice
2 tablespoons chopped green onions
1 tablespoon sesame seeds

Steps:

  • Heat sesame oil in a large skillet over medium-high heat. Cook and stir ground beef and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Combine soy sauce, coconut sugar, ginger, and black pepper in a bowl; whisk until well combined. Pour over ground beef; simmer until the sauce thickens, about 3 minutes.
  • Serve over cauliflower rice. Sprinkle with green onions and sesame seeds.

2 tablespoons olive oil
1 1/2 lbs lean round steak, cut into 1-inch cubes
3 cups beef broth
1 small head cauliflower, separated into florets
1 green pepper, cut into chunks
1/4 cup light soy sauce
1 garlic clove, minced
1 1/2 teaspoons grated fresh gingerroot (optional)
2 -3 tablespoons cornstarch
1/2 teaspoon sugar
1/4 cup water
cooked rice

Steps:

  • In a skillet, brown meat on all sides.
  • Add the broth and cover and simmer until beef is tender, about an hour.
  • Add cauliflower, green pepper, soy sauce, garlic, and ginger root if using.
  • Cover and simmer until the veggies are tender.
  • Combine cornstarch, sugar and water.
  • Stir into meat mixture.
  • Bring to a boil, stirring constantly.
  • Cook until thickened.
  • Serve on rice.

  • Make the sauce: Whisk together the water and cornstarch in a bowl until smooth. Whisk in the remaining sauce ingredients (soy sauce, rice vinegar, and sesame seed oil). Set aside.
  • In a large skillet, heat to medium high heat. Add 2 Tablespoons of oil, onion, garlic and ginger. Cook until soft and translucent. Add the cauliflower florets and cook until tender, stirring constantly (this is where you should add the water if you want softer cauliflower). When cauliflower is cooked, remove all ingredients from pan.
  • Add remaining 1 Tablespoon of oil to pan. Heat pan to high heat. Add beef and sear until cooked through. Add cauliflower back into the pan with the beef and stir.
  • Stir in the green onion slices. Stir the sauce one more time to make sure the cornstarch is incorporated, then pour the sauce over the beef and cauliflower. Heat the sauce to a strong simmer. Cook for about 1-2 minutes to thicken the sauce, stirring occasionally to make sure all beef and cauliflower is coated with sauce. Serve it warm over rice, pasta or noodles (optional).
