- Place the dried navy beans in a large pot covered by a few inches of water and leave to soak overnight. Drain the beans then place them back in the pot with fresh water and bring to a boil. Simmer the beans for one hour, or until tender, then drain, reserving all the liquid. Preheat your oven to 325 degrees F. In a 6 qt Dutch oven fry the bacon until crispy. Add the onions and cook until soft and translucent, stirring often. Add the garlic and cook for one minute. Add ground beef and cook until the beef is no longer pink. Drain the fat from the pan. Stir in the BBQ sauce, molasses, brown sugar, Worcestershire sauce, smoked paprika, and salt. Add 2 cups of the reserved bean water and all the beans. Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken more. Add more salt and pepper to taste.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
- At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
- Cook on Low, stirring often, about 4 hours.

- Pour beans into a colander and rinse. Look over beans and make sure they are clean and free of any stones or dirt that might have made its way into the bag. Place beans and approximately 2 quarts (8 cups) of water into a large pot and bring to a boil over high heat.
- Once boiling, carefully transfer the beans and water into a slow-cooker. Add oil, onion, and season with about 1/2 tablespoon of salt. Cook for at least 6 hours on high, although you can leave for a few hours more. I’ve also had success cooking them on low for 10-12 hours if that works better for you.
- When beans in the slow cooker are ready, cook the bacon in a large pot over medium/medium-low heat until crisp, stirring to avoid burning. Once bacon is crispy, remove some of the bacon grease, leaving only about 1 tablespoon in the pot. Don’t throw away that liquid gold! Store in refrigerator for future use.
- Add the garlic and cook for about 1 minute, stirring constantly. Add the can of fire-roasted tomatoes and a pinch of salt, and with a wooden spoon, scrape up any browned bits that are stuck to the bottom of the pan from cooking the bacon. Let mixture cook for about 3-4 minutes, stirring occasionally.
