Apricot-Almond Bruschetta with Melted Brie image

Make this versatile appetizer on the grill. Or, toast the bread and melt the cheese under the broiler. In any case, this appetizer is sure to be a hit.

8 ounces Brie, thinly sliced
⅓ cup chopped almonds, lightly toasted
1 (8 ounce) loaf baguette-style French bread
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon snipped fresh rosemary
1 (8 ounce) jar apricot preserves
½ teaspoon finely shredded lemon peel

Steps:

  • Cut bread diagonally into 1/2-inch-thick slices. Stir together olive oil, garlic, and rosemary; lightly brush mixture over one side of each bread slice. Grill bread directly over medium heat for 5 minutes or until crisp and light brown, turning once.
  • Combine preserves and lemon peel. Spread preserve mixture onto the oiled side of the toasted bread slices; top with Brie and almonds. Return slices to the grill. Grill about 3 minutes or until heated through and cheese begins to melt. Serve warm.

My mother, who is a big apricot and almond fan, inspired me to create this recipe. The teachers at our children's school look forward to me making these pretty loaves each Christmas.

Number Of Ingredients 13

2-1/2 cups all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
3 teaspoons baking powder
1 teaspoon salt
1 package (7 ounces) apricots with mixed fruit baby food, divided
1 egg
3/4 cup plus 1 teaspoon milk, divided
3 tablespoons canola oil
1-1/8 teaspoons almond extract, divided
2/3 cup sliced almonds, coarsely chopped
1/2 cup diced dried apricots
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugars, baking powder and salt. Set aside 1 tablespoon baby food for glaze. In another bowl, beat the egg, 3/4 cup milk, oil, 1 teaspoon almond extract and remaining baby food. Stir into dry ingredients just until moistened. Fold in almonds and apricots. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from the pan to a wire rack to cool completely. , For glaze, combine the confectioners' sugar, reserved baby food, and remaining milk and extract until smooth. Drizzle over bread.

1 - 8 oz loaf baguette style french bread
3 Tbsp olive oil
4 garlic cloves, minced
1 tsp snipped fresh rosemary
1 - 8 oz jar apricot preserves
1/2 tsp finely grated lemon peel
8 oz brie cheese thinly sliced
1/3 c chopped almonds, lightly toasted

Steps:

  • 1. Cut bread diagonally into 1/2 inch slices. Stir together olive oil, garlic, and rosemary; brush mixture over bread. Bake at 400 degrees, until bread just starts to brown. Combine preserves and lemon peel and spread on top of garlic mixture, top with slice of Brie and toasted almonds. Return to oven and bake until cheese starts to melt.
  • 2. Take out of oven and enjoy!
