2 ounces sesame oil
4 garlic cloves, minced
2 shallots
1 stalk lemongrass, minced
2 ounces fresh ginger, peeled and minced
1 lb lobster meat, chipped fine
4 tablespoons soy sauce
2 tablespoons chili sauce
1 bunch scallion, chopped
2 tablespoons mint
2 tablespoons basil
32 pieces dumpling wrappers
2 eggs, whipped
3 cups peanut oil

Steps:

  • In a medium saucepan, sauté in sesame oil the garlic, shallots, lemongrass and ginger until slightly browned. Remove from heat and transfer to mixing bowl. Fold in the lobster meat, soy sauce, sambal, scallions, mint and basil.
  • Lay out dumpling wrappers evenly on a flat surface, then brush a thin layer of egg on each wrapper. Place a small amount of the mixture in the center of the wrapper. Fold the edges of the wrappers up around the mixture and squeeze the edges to seal the dumpling. Deep fry dumplings in 350°F peanut oil until golden brown.

4 pounds salted butter, clarified
4 to 6 fresh Maine lobster tails
3 garlic cloves
4 fresh lemons, juiced

Steps:

  • Reserve 1 cup of clarified butter and try to keep warm.
  • Place lobster tails in a large pot and cover with the remaining butter. Add 3 cloves of garlic to the pot. Poach on a low heat until the lobster shell changes color and meat is cooked. Allow to cool slightly and harvest meat from tails. Chop meat into bite-size pieces.
  • While meat is still warm, assemble the shooters. In shot glass pour a bit of the reserved warm butter into each glass. Top with lobster meat and drizzle with a bit of the lemon juice.

SHOOTER'S SANDWICH

A very thick rump steak the size of a loaf
1 sandwich loaf
Some big fat field mushrooms
Salt
Black pepper, freshly ground

Steps:

  • The steak should be about 2 inches thick, cut from some fine animal. Cut one end off the bread and remove as much center crumb as necessary to allow the steak and mushrooms to fit in snugly when cooked. Quickly sear the meat in a very hot pan, keeping the meat rare. Take from the fire and season well on both sides, then insert it into the hollowed loaf. Grill enough mushrooms to cover the meat and place them over the steak. Replace the removed crust end of the loaf.
  • Wrap the whole thing in a double sheet of white blotting paper and secure with string. Then secure again with parchment paper and more string. (Or use foil and film). Place under a weighted board for 6 hours. When eating this sandwich just cut off a slice as required.

  • Cut off the mouth portion of the lobster head with a cleaver or chef's knife. Cut or twist off the lobster claws, and cut off the smaller legs. Set those aside.

  • Split the lobster lengthwise from the head portion to the end of the tail, so you have two halves. Take each half and cut off the upper section, separating it from the tail portion (there's actually quite a bit of meat in that piece). Cut each tail half into 3 equal pieces, giving you 6 total tail meat pieces. You can adjust this according to the size of the lobster.
