3 tablespoons unsalted butter plus additional for greasing
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1 (12-ounce) package frozen winter squash purée, thawed
1 cup coarsely grated Swiss cheese (1/4 pound)
1 tablespoon packed brown sugar
3/4 teaspoon salt, or to taste
1/4 teaspoon cayenne
3/4 teaspoon freshly grated nutmeg
3 large egg yolks
4 large egg whites

Steps:

  • Generously butter a 2-quart shallow ceramic or glass baking dish.
  • Put oven rack in middle position and preheat oven to 425°F.
  • Melt butter (3 tablespoons) in a 2-quart heavy saucepan over moderate heat until foam subsides, then add flour and cook roux, whisking, 2 minutes. Add milk in a slow stream and boil, whisking, then reduce heat and simmer, whisking occasionally, until thickened, about 3 minutes. Whisk in squash, cheese, brown sugar, salt, cayenne, and nutmeg until combined (mixture may not be completely smooth), then transfer to a large bowl and whisk in yolks.
  • Beat whites with a pinch of salt in another bowl with an electric mixer until they just hold stiff peaks. Fold one fourth of whites into squash mixture to lighten, then fold in remaining whites gently but thoroughly. Spoon into baking dish and bake, uncovered, 15 minutes. Loosely cover top with foil and bake until puffed, golden brown, and just set, 25 to 30 minutes. Serve immediately, with freshly ground pepper.

1/4 cup butter, melted
2 tablespoons brown sugar

Steps:

  • Separate eggs. Let eggs and squash stand at room temperature for 30 minutes. Grease a 1-1/2-qt. souffle dish and lightly sprinkle with flour; set aside., In a large bowl, combine the egg yolks, squash, butter, brown sugar, salt, orange zest, nutmeg and pepper., In a large bowl with clean beaters, beat egg whites until stiff peaks form. With a spatula, stir a fourth of the egg whites into squash mixture until no white streaks remain. Fold in remaining egg whites until combined. Transfer to prepared dish., Bake at 350° for 55-60 minutes or until the top is puffed and center appears set. Serve immediately.

1 tablespoon white sugar, or as needed
1 butternut squash, halved and seeded
¼ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter at room temperature
¼ cup white sugar
¼ cup brown sugar
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
3 eggs at room temperature, separated

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Lightly butter a souffle or ceramic baking dish and sprinkle 1 tablespoon white sugar over butter, tapping excess sugar out of dish. Store buttered and sugared dish in the refrigerator.
  • Place butternut squash, cut-side down, onto the prepared baking sheet.
  • Bake in the preheated oven until very soft, 1 to 1 1/2 hours. Allow squash to cool to room temperature.
  • Sift flour, baking powder, and salt together in a bowl.
  • Scrape flesh from butternut squash into a in a food processor until smooth. Add flour mixture, 1/4 cup white sugar, brown sugar, vanilla extract, cinnamon, and nutmeg and process until smooth. Add egg yolks, 1 at a time, to squash mixture while continually processing.
  • Beat egg whites in a bowl using an electric mixer until stiff peaks form; fold into squash mixture. Pour mixture into the chilled dish.
  • Bake in the preheated oven until browned and top springs back after pressing, about 1 hour.

2 cups applesauce
1/4 cup brown sugar
1/2 teaspoon salt
1/2 cup heavy cream
1 1/4 cups mashed cooked squash, fresh or 1 (10 ounce) package frozen squash
1/8 teaspoon nutmeg
6 tablespoons butter, melted
2 eggs, beaten
1/2 cup soft white breadcrumb
1/2 cup slivered almonds

Steps:

  • Mix together applesauce, brown sugar, salt, heavy cream, squash, nutmeg, 4 Tbsp of the melted butter, and eggs.
  • Place in buttered, 1 1/2 quart, shallow casserole.
  • Mix together bread crumbs, remaining 2 Tbsp butter, and almonds.
  • (This can be made a day ahead up to this point.) Bake uncovered at 375 degrees for 35 minutes.
  • Or it can be frozen and baked later at 375 degrees for 55-65 minutes (if still frozen).

Originally from the Boston Globe's Confidential Chat in the 1960s. My children weren't crazy about yams in any form so I used this squash recipe instead. I ended up having to double the recipe because they absolutely loved it!

12 ounces frozen cooked squash
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons light brown sugar
1/2 teaspoon salt
1/4 cup unsweetened applesauce
2 eggs, separated
1/8 teaspoon cream of tartar

Steps:

  • Heat squash over low heat, breaking it up and stirring occasionally, until just heated through.
  • Remove from heat and beat in butter, sugar, salt and egg yolks.
  • Gently stir in applesauce. Set aside to cool slightly.
  • Beat egg whites with cream of tartar until stiff but not dry.
  • Gently fold into squash mixture.
  • Turn into buttered 1-quart souffle dish with a collar of buttered foil around the dish to allow room for safe rising.
  • Bake in middle of 325 degree oven for 35 minutes. When done it will be high, light and still slightly soft in the center. Serve immediately.

  • In a 2 quart saucepan over medium heat, combine apples, water, cinnamon, and cloves. Bring to a boil, reduce heat, and simmer 10 minutes. Stir in sugar, and simmer 5 more minutes.

This is a delicious healthy side dish. Pretty enough for company, but kids enjoy the sweet taste! Fresh squash is easy to cook in the microwave, but frozen tastes just as good. For the milk, I used nonfat, my neighbor uses Mocha Mix to make it non-dairy. From my neighbor, Tiffanie, who is the best kosher cook ever!!

  • preheat oven to 350.
  • if using fresh squash, microwave- cut in half, remove seeds, place cut side down in small amount of water, cover with plastic wrap and cook on high 15 minutes.
  • Scrape flesh from skin- should be 3-4 cups.
  • beat together flour, sugar, oil, eggs, and milk.
  • add squash and mix well.
  • bake in 9x13 glass or ceramic baking dish for 60 minutes.
  • can sprinkle cinnamon sugar on top after 30 minutes in oven (kids like it!).

These summery savory soufflés are an elegant step up from zucchini pancakes and make a great first course. Be sure to have your guests seated at the table before serving. The soufflés will rise nicely, but they do fall rather quickly. If you have a zucchini patch, you're all set for this recipe; otherwise get just-picked squash at the farmers market. It should have shiny smooth skin. Choose zucchini that is small but not tiny (so-called baby squash can be bitter).

4 tablespoons unsalted butter, plus more for greasing ramekins
1/4 cup flour
1 1/2 cups whole milk or half-and-half, more as needed
1 thyme sprig
1 bay leaf
Salt and pepper
Pinch of cayenne
A little freshly grated nutmeg
2 pounds small fresh zucchini, coarsely grated, about 4 cups
4 large eggs, separated
1 small green serrano chile, finely chopped (optional)
4 ounces Emmentaler or Gruyère cheese, grated, or a mixture with 1/4-part Parmesan
1 tablespoon finely cut chives
2 tablespoons rough-chopped basil
6 to 8 squash blossoms, tough part removed, torn into 1/2-inch strips

Steps:

  • Butter ramekins well and set aside. Heat oven to 400 degrees.
  • Make a thick béchamel sauce: Melt 4 tablespoons butter in a heavy bottomed saucepan. Stir in flour and cook together over medium heat for a few minutes, without browning. Slowly add milk or half-and-half, stirring constantly with a wire whisk. Add thyme sprig and bay leaf and simmer over very low heat for 15 minutes, whisking occasionally, and adding a little more milk or half-and-half if the sauce gets too thick. Remove and discard thyme sprig and bay leaf. Season sauce well with salt and pepper, then add cayenne and nutmeg. Remove from stove and let cool slightly.
  • Meanwhile, sprinkle grated zucchini with 1 teaspoon kosher salt and mix well. Put zucchini in a colander and let drain for 15 minutes. Working with one handful at a time, squeeze all excess liquid from zucchini. Discard liquid or use for another purpose (such as soup).
  • Pour egg yolks into béchamel sauce and beat until smooth. Add zucchini, chopped chile and grated cheese and mix well with a wooden spoon or spatula. Add a bit more salt and pepper, then add chives, basil and squash blossoms. Mix to distribute.
  • In a separate bowl, beat egg whites until stiff. Stir 1/4 of the beaten whites into the zucchini mixture to lighten it, then carefully fold in remaining whites. Quickly spoon soufflé batter into ramekins. Place ramekins on a baking sheet and bake at 400 degrees for 10 minutes. Lower heat to 350 and rotate baking tray. Bake an additional 10 to 15 minutes, until tops are nicely browned and a small knife inserted emerges dry. Serve immediately.

2 lbs yellow squash, sliced
1 medium onion, sliced
1 teaspoon salt
1/2 teaspoon sugar
6 tablespoons butter, melted
3 tablespoons flour
2 eggs, slightly beaten
1 cup milk
1/2 lb sharp cheddar cheese, grated
1/2 box Ritz cracker, crumbled

Steps:

  • Combine first four ingredients and simmer with water to cover for 20 minutes.
  • Drain and mash.
  • Add flour, eggs, milk, cheese and 3T butter.
  • Bake at 350 degrees in a buttered 1 1/2 quart cassserole for 30 minutes.
  • Melt remaining 3T butter and mix with cracker crumbs.
  • Top the casserole with the cracker crumb mixture and bake 10 more minutes.

2 1/2 lbs hubbard squash or 2 1/2 lbs butternut squash, peeled, seeded and cut into 2-inch chunks
3 tablespoons butter
1 tablespoon vegetable oil
1/4 cup flour
3/4 cup milk
1/4 cup heavy cream
4 eggs, separated, plus
1 egg white
2 teaspoons sugar
1/2 teaspoon freshly grated nutmeg
salt
fresh ground white pepper

Steps:

  • Pour enough water into a large pot to come about 1 inch up the side. Set a vegetable steamer in the pot, and put the squash chunks into the steamer. Cover the pot, bring the water to a boil over moderately high heat, and steam the squash for 25 to 30 minutes or until it is tender and shows no resistance when pierced with the tip of a small knife.
  • Puree the squash through a food mill or fine sieve set over a bowl lined with dampened cheesecloth. Wrap the cloth around the squash and, holding the ends in both hands, squeeze vigorously to remove as much of the moisture from the squash as possible. There should be about 2 cups of puree. Set it aside in a bowl.
  • Meanwhile, preheat the oven to 375°F With a pastry brush, spread a light coating of melted or softened butter evenly over the bottom and sides of a 2-quart soufflé dish.
  • In a heavy 2 to 3 quart saucepan, melt the 3 Tablespoons of butter in the oil over moderate heat. Stir in the flour and mix to a paste. Stirring constantly with a wire whisk, pour in the milk and cream, and cook over high heat until the mixture comes to a boil, thickens heavily and is smooth. Reduce the heat to low and simmer for two or three minutes. Remove the pan from the heat and stir in the squash. Then beat in the egg yolks, one at a time. Stir in the sugar, nutmeg, 1 1/2 teaspoons of salt and 1/4 teaspoon of white pepper, and taste for seasoning.
  • With a whisk or a rotary or electric beater-and in an unlined copper bowl, if possible-beat the 5 egg whites until they are firm enough to stand in peaks on the beater when it is lifted from the bowl. Stir two or three large spoonfuls of the whites into the squash mixture to lighten it, then gently but thoroughly fold in the remaining whites.
  • Pour the soufflé mixture into the buttered dish, and smooth the top with a rubber spatula. Bake in the middle of the oven for 40 minutes or until the soufflé puffs up well above the rim and the top is lightly browned. Serve at once. Serves 4 to 6.

1 acorn squash
vegetable oil cooking spray
1 cup applesauce
4 teaspoons butter
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground pepper (to taste)
1/2 cup water

Steps:

  • Preheat oven to 350f degrees.
  • Cut squash in half, crossways, scrape out the seeds. Spray baking dish with veggie spray. Place skin side down, cut side up in baking dish.
  • Put 1 teaspoon of butter in each half of squash, sprinkle each half with salt and freshly ground pepper.
  • Fill each squash half with 1/2 cup applesauce, top with remaining butter and sprinkle again with salt and pepper.
  • Pour water around squash.
  • Roast on middle rack of oven for approximately 1 hour or until golden brown and caramalized.
