APPLESAUCE COBBLER
Not a spoonful of sugar is used in this fruit-filled, crumbly dessert-yet it tastes terrific, thanks to the sweetness of fresh apples. Using a variety of apples helps to create a delicious sauce. And the addition of golden raisins adds another layer of fruity sweetness. I found this recipe in Prevention magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Place the apple chunks, cider, lemon juice, and cinnamon stick in a large saucepan. Cover, and cook over medium heat, stirring occasionally, until the mixture begins to bubble. Reduce the heat to low, and cook for about 20 minutes, or until the apples are very tender.
- Remove the pan from the heat, discard the cinnamon stick, and stir in the raisins and nutmeg. Spoon the applesauce into a 9" pie pan or shallow baking dish. (Can be made a day ahead).
- Heat the oven to 400. In a medium bowl, stir together the flours, baking powder, salt, and cinnamon. In a small bowl, combine butter, apple juice, and yogurt. Pour the wet mixture into the dry, and blend gently with a fork for about 30 seconds. Remove to a floured surface, and knead for about 30 seconds.
- With floured fingertips, press and spread the dough over the applesauce, making the dough surface as even as possible. Reduce the oven temperature to 375, and bake for 20-25 minutes, or until the cobbler is golden brown. Serve warm or at room temperature.

After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

- 1. Preheat oven 350* degrees Mix first 3 ingredients while you are melting your butter in a 9X13 inch pan in the oven.
- 2. After butter is melted pour the dough mixture on top of the butter ( do not mix ) drop spoon fulls of applesauce all over the dough mixture or pour.( do not mix )
- 3. sprinkle the cinnamon over the applesauce ( do not mix) bake for 35-45min... ( check at 35min if not browned to your liking cook additional up to 10min) Enjoy!

- Peel, core and quarter the apples. In a Dutch oven, bring apples, water and cinnamon to a boil. Reduce heat; cover and simmer 10-15 minutes or until apples are tender. Remove from the heat.
