APPLE CHEDDAR BREAD
This recipe was given to me a while back and it is great on Sunday mornings. My boys just love it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, combine the sugar, flour, cinnamon walnuts, apples, and cheese. Add the eggs, melted butter or margarine, and milk; stir until well blended. Pour into prepared loaf pan.
- Bake in preheated oven for 1 hour, or until done. If loaf starts to brown too much, cover with foil.

- Preheat oven to 375°. In a large skillet, heat butter over medium-high heat. Add onion; saute until tender. Set aside., Beat eggs; add sour cream, both cans of corn, salt and pepper. Stir in cornbread mix just until blended. Mince 1 jalapeno pepper; fold into corn mixture with sauteed onion and 1-1/2 cups of cheese. , Transfer to a greased shallow 3-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, until a toothpick inserted in center comes out clean, 35-40 minutes; cool slightly. Slice remaining jalapeno; sprinkle over dish.

This spoon bread can act as an amazing Thanksgiving side, but the addition of hearty, healthy quinoa and vegetables make it a well-rounded casserole. - Preheat oven to 375°. In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Fluff with a fork; cool slightly., Meanwhile, in a large skillet, heat oil over medium heat; saute apple, onion and parsnip with celery seed and 1/2 teaspoon salt until softened, 4-5 minutes. Remove from heat; stir in sage., In a large bowl, whisk together cornmeal, flour, sugar, baking powder and remaining 3/4 teaspoon salt. In another bowl, whisk together egg and 1 cup milk. Add to cornmeal mixture, stirring just until moistened. Fold in quinoa and apple mixture., Transfer to a greased 8-in. square baking dish. Pour remaining milk over top., Bake, uncovered, until edges are golden brown, 25-30 minutes. Let stand 5 minutes before serving.

Steps:
- Preheat oven to 375 degrees.
- In a medium skillet, cook onion in hot butter about 5 minutes or until just tender.
- In a large bowl stir together corn muffin mix, egg, water, applesauce, sour cream, cheddar cheese, snipped sage leaves, and a few dashes pepper.
- Stir in onion mixture.
- Pour mixture into a 2-quart square baking dish.
- Bake at 375 for 25 minutes. Brush apple slices with melted butter and arrange on top of spoon bread in a pleasing pattern.
- Continue baking 25 to 30 minutes more or until spoon bread is golden brown across the top.
- Let cool in pan on a wire rack for 15 minutes before serving; spoonbread may sink slightly in center while cooking.
- Sprinkle on sage leaves before serving.

APPLE CHEESE CASSEROLE
From Martha Nesbit's book, Savannah Celebrations. She says, "This recipe is not only perfect for brunch, but is also delicious with any menu featuring pork." In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!

- Preheat oven to 325°F. Grease a 1 ½ quart casserole with vegetable spray.
- In a medium mixing bowl, cream together butter and sugar. Using a spoon, stir in grated cheese. Add flour and combine using fingers or a spoon. Batter should be stiff.

- In a large bowl cream together the butter and the sugar and beat in the honey and the eggs. Into the butter mixture sift together the flours, the baking powder, the baking soda, and the salt, stir the mixture until it is combined well, and stir in the apples, the cheese, and the walnuts. Spoon the batter into a buttered loaf pan, 9 by 5 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 50 to 60 minutes, or until a tester comes out clean. Turn the bread out onto a rack, and let if cool completely, and serve it sliced with the cream cheese.

- In a large bowl of the bowl of a stand mixer fitted with a kneading hook, combine 2 cups of the flour, the salt, sugar and instant yeast. Mix to combine. Add the lukewarm water, milk and melted butter or oil. Mix to combine. Begin adding the remaining flour, 1/4 cup at a time, until you have a soft and smooth dough that is moist, but not tacky. Remove dough to a greased bowl, cover with plastic wrap and allow to rise until doubled, 45-60 minutes.
- Remove dough to a floured surface. Roll in to a rectangle, approximately 12 inches wide by 18 inches long. (*Note: If you shredded apples are really moist, spread onto some paper towel and top with more paper towel to blot up excess moisture, before putting on the dough). Spread the shredded apples over surface, in a single layer, leaving a 1-inch margin on the longest sides (apple should cover dough well in a single layer. You may need to add a bit more). Top with shredded cheese. Starting with the long sides, roll the dough jelly-roll style (the best technique here is to lift gently and flop forward), until you reach the end. Pinch seams and ends together.
- Using a sharp knife, cut down the centre of the roll from one end to the other. Carefully place the two pieces side by side, with the cut side facing up. Pinch together the two pieces of dough at one end. Proceed to braid the two pieces together, by lifting on piece over the other and then repeating a couple of times. Pinch together the other end.
- Grease a 9×5-inch loaf pan. Using a spatula or a bench scraper, carefully lift the braided dough in to the pan. Spray a piece of plastic wrap with cooking spray and place over top of pan. Allow to rise until dough has risen about an inch above the pan in the centre.
