SPINACH SALAD WITH CRANBERRY VINAIGRETTE



Spinach Salad with Cranberry Vinaigrette image

Delicious side dish ready in 25 minutes! Enjoy this spinach salad drizzled with cranberry vinaigrette and sprinkled with pomegranate seeds.

1/2 cup whole berry cranberry sauce
1/4 cup vegetable oil
2 tablespoons orange juice
2 tablespoons honey
2 tablespoons balsamic vinegar
1/4 teaspoon salt
1 bag (10 oz) fresh baby spinach leaves
2 avocados, peeled, pitted and sliced
1 tablespoon orange juice
1/2 cup pomegranate seeds

Steps:

  • In jar with tight-fitting lid, place all dressing ingredients; shake until well blended. Refrigerate.
  • Arrange spinach leaves on individual salad plates. Coat avocado slices with 1 tablespoon orange juice; arrange over spinach. Sprinkle with pomegranate seeds. Drizzle salads with dressing.

1/4 cup fresh or frozen cranberries, thawed
1/4 cup balsamic vinegar
1 tablespoon chopped red onion
1 tablespoon sugar
1 teaspoon Dijon mustard
1 cup vegetable oil
10 cups mixed baby greens
2 Red Delicious apples, cored, thinly sliced
1/2 cup chopped walnuts, toasted

Steps:

  • Puree cranberries in processor until smooth. Add vinegar, onion, sugar and mustard and process until well blended. With processor running, gradually add oil and process until well blended. Transfer to medium bowl. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to room temperature and whisk before using.)
  • Combine greens and apples in large bowl. Toss with enough dressing to coat. Sprinkle with walnuts. Serve, passing remaining dressing separately.

From Bon Appetit 1995. My sister discovered this, and our entire family has loved it ever since. Try throwing in some crumbled bleu cheese or gorgonzola - tremendous!

1/4 cup fresh cranberries or 1/4 cup frozen cranberries, thawed
1/4 cup balsamic vinegar
1 tablespoon chopped red onion
1 tablespoon sugar
1 teaspoon Dijon mustard
1 cup vegetable oil, see Note2
10 cups mixed baby greens
2 apples, cored, thinly sliced
1/2 cup chopped walnuts, toasted

Steps:

  • Puree cranberries in processor until smooth. Add vinegar, onion, sugar and mustard and process until well blended.
  • With processor running, gradually add oil and process until well blended.
  • Transfer to medium bowl. Season to taste with salt and pepper.
  • Dressing can be made one day ahead of time and refrigerated. Bring to room temperature and whisk before using.
  • Combine greens and apples in a large bowl. Toss with enough dressing to coat and sprinkle with walnuts.
  • Serve, passing remaining dressing separately.
  • Note1: I like Granny Smiths or Jonagold apples in this, although the original recipe calls for red delicious. I sometimes dice the apples, rather than slicing.
  • Note2: This is an older recipe, and I use much less oil in it these days - maybe 2/3 cup? I just pour it in and taste until it tastes right. I use about 2/3 grapeseed or other neutral oil and 1/3 olive oil.

1 tablespoon orange peel, grated
2 tablespoons rice vinegar
2 tablespoons fresh orange juice
1/4 teaspoon salt
2 medium apples, chopped
3 stalks celery, sliced
3/4 cup dried cranberries
8 lettuce leaves, Bibb
3/4 cup brie cheese, cubed
1/2 cup walnuts, toasted and chopped

Steps:

  • In blender place vinaigrette ingredients. Cover and process 15 to 20 seconds until smooth. Pour in container, cover and refrigerate up to 2 days. Let stand at room temperature about 1 hour before serving.
  • In large bowl, stir together apples, celery and cranberries. Divide evenly among 8 lettuce lined salad plates.
  • Top each salad with cheese and walnuts. Sereve with cranberry vinaigrette.
