APPLE MEAT LOAF
"This is a little twist on the great meatloaf my mom made when I was a kid," says Deborah Williams of Peoria, Arizona. "The apple gives it a bit of a sweet flavor and helps keep it moist."

- In a small skillet, saute onion in butter until tender. In a large bowl, combine the apple, bread crumbs, egg, ketchup, mustard, salt, pepper and allspice. Stir in onion. Crumble beef over mixture and mix well. Shape into a 6x5-in. loaf., Place in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 40-45 minutes or until no pink remains and a thermometer reads 160°.

MOIST APPLESAUCE MEATLOAF
Steps:
- Preheat oven to 350 F.
- Lightly grease a 9 x 5 x 3-inch loaf pan.
- In a large bowl, combine the 2 kinds of ground meat with the chopped onion, egg, applesauce, breadcrumbs, 3 tablespoons of ketchup, salt, and pepper; mix thoroughly with your hands.
- Pat the meatloaf mixture into the prepared loaf pan.
- Bake the meatloaf in the preheated oven for 1 1/2 hours.
- If using the optional topping, take the meatloaf out of the oven about 10 to 15 minutes before it's done. Carefully pour off excess grease and spread the 4 tablespoons of ketchup or barbecue sauce over the top. Return the loaf to the oven and continue baking until it's done.
- The minimum safe temperature for ground beef and ground pork is 160 F (71.1 C). If in doubt, check the temperature by inserting an instant-read thermometer into the center of the loaf.
- Let the meatloaf cool for 10 minutes and then remove it to a platter. Slice and serve.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in buttermilk and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture. Fold in apples and walnuts. Pour into a greased 9x5-in. loaf pan., For topping, combine the sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. , Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Place butter, sugar, and 1 egg in large bowl. Beat well. Beat in second egg. Stir in milk and vanilla.
- In another bowl measure in flour, baking powder, and salt. Stir in raisins. Pour all at once into batter. Stir to moisten only. Spoon into greased loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour or until it tests done. Cool 10 minutes. Turn out of pan. Cool on rack. Wrap to store. Allow to ripen a day or two to improve flavor. Serve buttered.

- In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on a floured surface until smooth and elastic, about 10 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down and turn over in bowl. Cover and let rise 30 minutes. In a small bowl, combine the apples, raisins and lemon juice. Divide dough into 3 parts; knead a third of the apple mixture into each part. Shape each into a round flat ball. Place each in a greased 8-in. round baking pan that has been sprinkled with cornmeal.
