This is a sweet, tart and delicious apple pie. Guaranteed to please. Be sure to use Granny Smith apples since they work the best.

¾ cup white sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon lemon zest
7 cups thinly sliced apples
2 teaspoons lemon juice
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie
4 tablespoons milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix together the sugar, flour, cinnamon, nutmeg and lemon peel.
  • Line one crust in a 9-inch deep-dish pie pan. Layer 1/3 of apples into pie crust. Sprinkle with sugar mixture and repeat until done. Sprinkle with lemon juice and dot with butter.
  • Place second pie crust on top of filling and flute the edges. Cut vents in top crust and brush with milk for a glazed appearance if desired.
  • Bake at 425 degrees F (220 degrees C) for 40 to 50 minutes.

2 ½ cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon Kosher salt
1 cup very cold or frozen unsalted butter, cut into small cubes ((2 sticks))
⅓ cup cold buttermilk
4 pounds apples ((about 8-9 large apples, see note below about recommended types of apples))
2 tablespoons cold unsalted butter, divided
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon ground cinnamon, plus more if desired
⅛ teaspoon ground nutmeg, plus more if desired
⅛ teaspoon ground allspice, plus more if desired
¼ teaspoon salt
Zest of 1 lemon
2 tablespoons fresh lemon juice
2 tablespoons cornstarch
1 large egg
1 tablespoon heavy cream or whole milk
Coarse sugar or turbinado sugar (for sprinkling)

Steps:

  • Combine flour, sugar, and salt in a food processor by pulsing a few times. Add the very cold butter cubes (2 sticks, equivalent to 1 cup) and pulse a few times until a pea-size coarse meal forms. Add the buttermilk and run the food processor continuously for several seconds until a dough forms. At first, it will look like it's not coming together but it will.
  • Transfer onto a non-floured clean surface. Press to form a dough. Divide the dough in half. Roll each half into balls and flatten into thick disks. Wrap each disk with plastic wrap and chill in the fridge for at least 1 hour or overnight. Before using, let it sit on the counter for 15 minutes to slightly soften it.
  • Peel apples and cut out the core. Then cut into 1/4 inch slices. They should all be cut to the same size for even cooking.
  • In a large deep skillet or Dutch oven over medium heat, melt 1 tablespoon unsalted butter and add the sliced apples, brown sugar, granulated sugar, cinnamon, nutmeg, allspice, salt, lemon juice and lemon zest. Cook, stirring for about 10-15 minutes until apples have slightly softened but not lost their shape.
  • Sift and sprinkle 1-2 tablespoons cornstarch and mix (start with 1 tablespoon and add more if needed. The amount of cornstarch depends on the amount of juices released by the apples). Bring to a simmer and cook for an additional 3-5 minutes until juices thicken. If not thick enough, add more cornstarch little by little, stirring. Note: sifting the cornstarch beforehand prevents clumps from forming.
  • Set aside and let cool at room temperature. Tip: to speed up the cooling process, transfer the apple filling to a large shallow bowl or a large pan.
  • After the filling has cooled down, preheat oven to 400 degrees F.
  • Cut remaining 1 tablespoon of cold butter into small cubes. Set aside.
  • Get a 9-inch round pie pan ready. Roll out the dough to a 12-inch circle using a rolling pin on a floured surface to about ¼ inch thick. Repeat for the second disk.
  • Transfer dough to a 9-inch pie pan. Fill with the cooled apple pie filling and dot with the remaining 1 tablespoon butter cut into small cubes. Cover the pie with the second rolled out dough. Trim any overhang or excess dough. Seal edges with a fork or with your fingers. Make a few slits at the top to let the steam escape. Alternatively, you can make a lattice pattern. For instructions, see the "How to Make a Lattice Pie Crust" above.
  • If you made a lattice top, refrigerate the pie for about 15-20 minutes. If you did not, skip this step.
  • Make the egg wash by whisking the egg with heavy cream or milk. Brush the pie dough with egg wash and sprinkle with coarse sugar if desired.
  • Place pie on a large baking sheet and bake for 25 minutes at 400 degrees F. Remove pie from oven and put a pie crust shield or cover edges with foil. Lower oven temperature to 375 F and bake for an additional 30-35 minutes until golden brown and bubbly.
  • Let it cool on a wire rack for 3 hours before serving. Trust me, if you cut into it before it has cooled down, it will fall apart (been there, done that). Enjoy!

I normally wouldn't post a recipe I haven't tried but this one is really a cute idea and I just that it was a good one to share. It was posted on my wall by one of my facebook friends. It was from a site called Ultimate Women's Expo. The picture also belongs to Ultimate Women's Expo

1 pie crust
6 granny smith apples,
1/4 c cup sugar
1 Tbsp brown sugar
1/4 tsp cinnamon (more or less make adjustment as desired)

Steps:

  • 1. Heat oven to 375%
  • 2. Cut off the top of 4 apples off and discard. Remove the inside of each apple with a spoon very carefully, as to not puncture the peel.
  • 3. Remove skin from 2 additional apples and slice very thinly. These apple pieces will give you filling needed to fill the four apples you are baking.
  • 4. Mix sliced apples with sugars and cinnamon in a bowl. If you prefer more or less cinnamon and sugar, make adjustments as desired.
  • 5. Scoop sliced apples into hollow apples.
  • 6. Roll out pie crust and slice into 1/4 inch strips.
  • 7. (You can also add a strip of pastry inside the top of the apple almost like a liner to add a little more texture/sweetness to the pie. )
  • 8. Cover the top of the apple in a lattice pattern with pie crust strips.
  • 9. Place apples in an 8×8 pan. Add just enough water to the cover the bottom of the pan. Cover with foil and bake for 20-25 minutes.
  • 10. Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.

Steps:

  • Preheat oven to 375°F (190°C).
  • Cut the cinnamon roll dough into 3 even strips, then cut those strip in 3 pieces, making 9 pieces total per cinnamon roll. Set aside the icing.
  • In a medium bowl, combine eggs, milk, cinnamon, and extract, stirring until smooth. Set aside.
  • In a pan over medium-high heat, combine butter, apples, and brown sugar, cooking until sugar starts to caramelize, about 10 minutes. Remove from heat.
  • Sprinkle the cinnamon roll dough pieces evenly in a 9×9in (23 x 23cm) baking tray. Pour the egg mixture on top, followed by the apples. Drizzle the reserved icing on top.
  • Bake for 25-30 minutes, until golden brown. Serve with ice cream!

Perfect Apple Pie image

With a crisp, flaky crust and thick, cider-flavored apple filling, this is my idea of the perfect apple pie.

2¾ cups all-purpose flour, spooned into measuring cup and leveled with a knife
3 tablespoons sugar
1 teaspoon salt
¼ teaspoon baking powder
14 tablespoons cold unsalted butter, sliced into 1-inch pieces
¼ cup cold vegetable shortening, in 4 pieces
7 tablespoons ice cold water
3½ pounds baking apples (see note), peeled, cored, sliced ¼-inch thick
1 teaspoon lemon zest and 1 tablespoon lemon juice, from 1 lemon
½ cup granulated sugar
6 tablespoons packed dark brown sugar
Heaping ¼ teaspoon salt
¼ teaspoon cinnamon
2 tablespoons all-purpose flour
2 tablespoons cornstarch
A beaten egg, cream, or milk, for brushing over crust
2 tablespoons granulated sugar, for topping the pie

Steps:

  • Combine the flour, sugar, salt and baking powder in the bowl of a food processor fitted with the metal blade. Pulse a few times to combine. Add the pieces of butter and shortening and pulse until the mixture is crumbly with lots of pea and chickpea-size clumps of butter and shortening within.
  • Add the water and pulse until the mixture is evenly moistened and very crumbly. Dump the dough crumbles onto a work surface and divide into two piles, with one pile about 15% bigger than the other (13 oz and 11.5 oz). Make two balls of dough and pat each one into a 5-inch disc. Wrap the discs in plastic and refrigerate for at least 45 minutes.
  • Take the larger disc of dough out of the refrigerator. Dust your work surface lightly with flour and place the dough on top; sprinkle a little flour over the dough. Use your hands to quickly knead the dough into a soft and malleable disc (don't overwork it; you want it just supple enough to roll).
  • Roll the dough, adding more flour as necessary under and on top of the dough so it doesn't stick, into a 13-in circle. Carefully drape the dough over the rolling pin and transfer it to a 9-in deep-dish pie pan (it should be at least 1½ in deep). Gently fit the dough into the pan, easing it inwards rather than stretching it outwards. Trim the edges to ½ inch beyond the lip of the pie pan. Turn the edges under to create a rim on the crust. Press the rim against the lip of the pan, forming it into an even edge. Use any scraps to patch in any tears or thin areas. Place the crust in the refrigerator for 30 minutes while you heat the oven.
  • Preheat the oven to 375°F. Set an oven rack in the middle position.
  • Remove the pie crust from the refrigerator and place on a baking sheet (this makes it easy to move in and out of the oven). Cover the crust with a piece of parchment paper and fill it with dried beans or pie weights. Bake for 20 minutes. Take the crust out of the oven; remove the parchment paper and beans/pie weights and tent the edges with a few strips of aluminum foil. (The foil will protect the edges from getting too dark.) Bake for another 15 to 20 minutes, until the dough is dry and golden. Don't worry if the bottom puffs up; just press it down gently with a flat spatula, such as a pancake turner, taking care not to puncture it. Let the crust cool to room temperature.
  • Increase the oven temperature to 425°F.
  • Meanwhile, combine the apples, lemon zest, lemon juice, granulated sugar, brown sugar, salt, and cinnamon. Toss until the sugar is dissolved and the apples are evenly coated. Let sit for at least 30 minutes.
  • Drain the apples, collecting the syrupy juice in another bowl. Pour the syrupy juice into a 2-cup microwave-safe liquid measuring cup. Take note of the quantity and then heat on high power in the microwave, checking frequently, until the syrup is reduced by half. This will take about 4 minutes but keep a close eye on it as all microwaves are different. You don't want to cook it for too long, or it will turn into sticky caramel (see note below on how to correct this if it happens). The syrup should be just slightly thickened and still pourable. (Alternatively, you can boil the juices in a small pan on the stove.)
  • Add the syrup back to the apples, along with the flour and cornstarch; toss to combine.
  • Take the other piece of dough out of the fridge and roll into an 11-inch circle, using the same process described above. If necessary, use a little dough to patch up any holes in the bottom crust. Add the apple filling to the baked pie shell, compacting the apples as tightly as possible. (Too many air pockets will cause the crust to dome, creating a gap between the apples and the crust.) Place the rolled dough over top. Crimp the edges with a fork or flute with your fingers, sealing the top and bottom crust together. Work quickly, dusting your fingers with flour as necessary, so the dough doesn't get too warm.
  • Brush the top crust with the beaten egg (or cream or milk). Sprinkle the remaining 2 tablespoons sugar over the top crust. Cut a few slits in the top crust to allow the steam to escape.
  • Bake for 15 minutes, then reduce the heat to 375°F, and bake for an additional 45 minutes, or until the top is golden and the filling is bubbly. Let the pie cool completely on a wire rack before cutting, about 4 hours.
  • Note: Be sure to use baking apples that hold their shape when cooked, such as Honeycrisp, Jonagold, Fuji, Granny Smith, or Golden Delicious. And use a mix of different varietals for the best flavor.
  • Note: If you accidentally over-reduce the syrup and it seizes up when you pour it over the apples, transfer the apple mixture to a large sauté pan and cook over high heat until the caramel melts. Let cool completely in the fridge before proceeding with the recipe.
  • Freezer-Friendly Instructions: The pie can be frozen for up to 3 months before or after baking it. (If freezing it unbaked, hold off on brushing the top crust with the beaten egg and sprinkling it with sugar; you can do that right before baking.) If baked, let it cool completely and place it in the freezer uncovered. When fully frozen, wrap the pie securely in foil and freeze. If the pie is unbaked, wrap it securely in foil and freeze. When ready to serve, proceed with baking instructions above (pie is likely to take a bit longer in the oven).

4 apples such as Pippin, Mutsu or Braeburn, plus 1 more if needed
1 tablespoon lemon juice
3 tablespoons dark brown sugar
2 tablespoons granulated sugar

1 store-bought refrigerator pie crust (half of a 14.1-ounce box)
1 egg, beaten

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the top 1/2 inch from the 4 apples. Using a melon baller or spoon, dig out the insides of the apples and reserve, leaving 1/4 inch flesh next to the skin. Remove the cores and seeds and discard.
  • Coarsely chop the scooped fruit and add it to a medium bowl; you should have at least 1 1/2 cups. If not, peel, core and dice the additional apple and add it to the bowl. Sprinkle the lemon juice over top and toss to coat. Add the brown sugar, granulated sugar, flour, cinnamon, nutmeg and salt to the bowl and mix. Divide the filling among the hollowed-out apples.
  • Roll out the pie crust and using a pastry wheel, cut it into 1/4-inch-thick strips. Brush a light coating of egg wash along the top edge of each apple. Weave the strips into a lattice atop each apple, using the egg wash to adhere (see Cook's Note). Lightly brush the top of each lattice with the egg wash.
  • Place the apples in an 8-by-8-inch baking dish. Add 1 inch of water to the bottom of the dish. Cover with foil and bake for 20 minutes. Remove the foil and bake until the crusts are golden brown and the filling is bubbling, an additional 25 minutes. Place the apples on a cooling rack to cool to room temperature before serving.
