1 cup pecans, coarsely chop
3 eggs
8 slices raisin bread, diced
2 cups half-and-half or 2 cups milk
2 medium apples, green
1/4 cup Bourbon or 1/4 cup brandy
1 cup sugar
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon cinnamon
to taste vanilla ice cream (optional)
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Spread pecans in a shallow baking pan and bake until golden, about 8-10 minutes, stirring occasionally.
  • Meanwhile, place bread cubes in a greased 3 qt. or larger slow cooker.
  • Peel, core and thinly slice the apples.
  • Mix lightly together the sugar, cinnamon and nutmeg, add eggs and mix well.
  • Blend in half and half or milk and then stir in bourbon or brandy.
  • Lightly mix pecans with bread and apples.
  • Pour egg mixture over bread. Drizzle with butter.
  • Cover and cook on low until apples are tender when pierced and custard is set; about 3 1/2 to 4 1/2 hours.
  • Let pudding stand, covered, for about 15 minutes. Serve warm with ice cream, if desired.

Got this recipe from the Panera Bread web site. I love bread pudding and always looking for great recipes. I haven't made it yet but wanted to store it here.

4 tablespoons unsalted butter
1/2 loaf cinnamon, raisin white bread torn into bite-size pieces
1/2 cup brown sugar, packed
1/2 cup pecan halves
1 orange, juice and zest of, large
1/4 cup apple cider
1 tablespoon vanilla extract or 1 tablespoon rum
8 small baking apples, peeled, cored and thinly sliced (Fuji, Gala or Granny Smith)
1/2 cup blackberry jam or 1/2 cup jelly

Steps:

  • Preheat oven to 400 degrees.
  • Melt the butter in a medium saucepan over medium heat.
  • Add the bread and cook for 2 to 3 minutes, or until well coated.
  • Add the sugar, pecans, orange zest and juice, cider, and vanilla extract.
  • Cook an additional 2 to 3 minutes until a sauce begins to form.
  • In a 9 x 13-inch baking dish, layer the bread mixture with the apples and dot the top with the jam or jelly.
  • Bake 30 to 40 minutes, or until bubbly.

8 ounces day-old cinnamon rolls, cubed
1/2 cup pecans, chopped
1 cup apple, peeled and sliced
2 eggs
2 cups milk
1/2 teaspoon vanilla
1/2 cup sugar (optional)
maple syrup

Steps:

  • Coat an 8 or 9-inch cake pan with nonstick spray. Place the bread cubes in the pan and toss in the pecans and apples.
  • Blend the eggs, milk and sugar (optional) in a medium bowl. Add vanilla.
  • Pour the mixture over the bread and let stand for about 20 minutes.
  • Bake in a 350°F oven for about 45 minutes, until golden brown. Cut into squares to serve.
  • Serve with warm maple syrup.

8 pieces bread
4 eggs
1/4 cup cream (or 2 tblsp. butter with milk)
1/2 cup brown sugar (or tsp. molasses with white sugar)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 small apple, diced
1/2 cup raisins (or any dried fruit)
1/4 cup pecans, chopped
1/4 cup honey

Steps:

  • set oven to 325 deg.
  • spray oil on square baking pan.
  • blend eggs, cream, sugar and spices in blender.
  • tear bread into small pieces and lay in baking dish.
  • spread diced apple and raisis over bread
  • pour egg mixture over all.
  • sprinkle chopped nuts on top.
  • let sit for 5 minute while oven reaches temperature.
  • bake for 60 minutes.
  • let cool, dish and serve with honey drizzled on top.
  • suggestion: use cinnamon raisin bread - yum!
