HOT SPICED TEA
Cool weather activities call for warm drinks. Whether you are throwing a game day party at home, tailgating at the stadium, or taking the family to the pumpkin patch for an outdoor picnic, your guests will be cheery and snug when you serve this Hot Spiced Tea. Remember the popular "Russian tea" recipes made with powdered orange drink and instant tea? This beverage tastes even better, because you make it with brewed chai tea, real orange, lemon, and pineapple juices, and cinnamon sticks, fresh cloves, or mulling spices. This tea can be made in less than 30 minutes and can be served hot or cold, which means you can make it a day before your party or just minutes before your guests arrive. Pour into a thermos to transport to a party, serve warm in mugs immediately, or chill the tea and serve it later over ice. Sometimes a warm drink is all you need to chase the chill. Steps:
- Bring 4 cups water to a boil over high in a large pot. Remove from heat; add tea bags. Cover pot; let tea steep according to package directions. Remove and discard tea bags.
- Stir sugar, cloves, cinnamon sticks, and 8 cups additional water into tea in pot. Bring mixture to a boil over high. Reduce heat to medium. Simmer, stirring occasionally, until sugar dissolves and mixture is fragrant, about 5 minutes. Remove spices using a small handheld fine mesh strainer, and discard.
- Stir pineapple juice, orange juice, and lemon juice into tea mixture in pot. Remove from heat. Serve immediately or chilled. Store, covered, in refrigerator up to 1 week.

- In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. Yield: 1 serving., To prepare punch: In a 3-qt. slow cooker, combine the juices, 1/4-1/3 cup tea mix and cinnamon sticks. Cover and cook on low for 4 hours. Yield: about 12 servings (6 ounces each).

SOUTHERN SPICED TEA
This is my mother's recipe, originally from the 1800's, modern conversions are in parentheses. I grew up drinking it in the winter but like it year round, even iced. I suggest letting the flavors in the tea blend before you serve it, the cloves will become more pronounced. No offense to you powdered spiced tea people, but this is the real thing!

- Make a syrup by boiling the sugar, cloves and water.
