APPLE-MARINATED CHICKEN & VEGETABLES



Apple-Marinated Chicken & Vegetables image

I actually invented this chicken with vegetables dish at a campground, so you know it's easy. Using the same marinade for the meat and veggies keeps it simple so we can spend more time outside and less making dinner. -Jayme Schertz, Clintonville, Wisconsin

Number Of Ingredients 11

1 cup apple juice
1/2 cup canola oil
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
3 tablespoons lemon juice
2 tablespoons minced fresh parsley
3 garlic cloves, minced
6 boneless skinless chicken breast halves (6 ounces each)
4 large carrots
2 medium zucchini
2 medium yellow summer squash

Steps:

  • In a small bowl, whisk the first seven ingredients until blended. Place 1 cup marinade and chicken in a large resealable plastic bag; seal bag and turn to coat. Refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Cut carrots, zucchini and squash lengthwise into quarters; cut crosswise into 2-in. pieces. Toss with 1/2 cup reserved marinade., Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until a thermometer reads 165°, basting frequently with remaining marinade during the last 5 minutes. Keep warm., Transfer vegetables to a grill wok or basket; place on grill rack. Grill, covered, over medium heat 10-12 minutes or until crisp-tender, stirring frequently. Serve with chicken.

2 quarts apple juice
1 cup orange juice
1 cup brown sugar
½ cup Worcestershire sauce
½ cup soy sauce
½ cup olive oil
½ cup lemon juice
½ cup agave nectar
½ cup apple cider vinegar
½ cup kosher salt
¼ cup sriracha sauce
¼ cup garlic powder
2 tablespoons Chinese five-spice powder
2 tablespoons ground allspice
1 tablespoon ground cinnamon

Steps:

  • Combine apple juice, orange juice, brown sugar, Worcestershire sauce, soy sauce, olive oil, lemon juice, agave nectar, apple cider vinegar, salt, sriracha sauce, garlic powder, five-spice powder, allspice, and cinnamon in a large bowl. Refrigerate; remove from refrigerator for 1 hour prior to using.

2 tbsp Worcestershire sauce

1 minced garlic clove
1 tsp fine sea salt
1 tbsp vegetable oil

Steps:

  • Mix all ingredients together. Marinade meat in mixture for at least 2 hours to as long as overnight.

3/4 cup unsweetened apple juice
1/2 cup beer or nonalcoholic beer
1/2 cup canola oil
1/4 cup packed brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon pepper
1/2 teaspoon cayenne pepper
3 pounds boneless country-style pork ribs

Steps:

  • In a small bowl, combine the first 10 ingredients. Pour 1-1/2 cups marinade into a large resealable plastic bag. Add pork; seal bag and turn to coat. Refrigerate 5 hours or overnight. Cover and refrigerate remaining marinade for basting., Prepare grill for indirect heat. Drain pork, discarding marinade in bag. Grill ribs, covered, over indirect medium heat for 10 minutes on each side. Baste with some of the reserved marinade. Grill 20-25 minutes longer or until ribs are tender, turning and basting occasionally. Freeze option: Freeze cooled ribs in heavy-duty foil. To use, partially thaw in refrigerator overnight. Place foil packet on a baking sheet and open packet. Reheat in a preheated 350° oven for 20-30 minutes or until heated through.
