APPLE GLAZED BAKED SALMON



Apple Glazed Baked Salmon image

Moist and quick baked salmon with an apple and horseradish glaze. Sweet and savory for the perfect weeknight dinner idea!

12-14 ounce salmon fillet
1/2 cup apple jelly
1 tablespoon champagne vinegar ( , or white wine vinegar )
2 tablespoons prepared horseradish
1 tablespoon chives ( , minced plus more garnish )
1/4 cup apple juice
Fine sea salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Rinse fish, pat dry and place in a deep glass baking dish coated in cooking spray. Season fish with kosher sea salt and freshly ground pepper.
  • In a small bowl, combine apple jelly, vinegar, horseradish, apple juice and chives. Mix well, however there may be lumps and it will be a little milky. This is normal.
  • Baste over salmon filet, reserving anything leftover, you'll baste it again.
  • Bake uncovered, for 10 minutes. Remove, baste again and turn oven to high broil. Broil for 1-2 minutes until edges brown slightly.
  • Remove and allow to sit for 5 minutes before serving. Garnish with additional chives and/or chopped parsley.

1 salmon fillet (1 pound)
1 tablespoon butter, melted
1 tablespoon prepared horseradish, drained
2 teaspoons lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

  • Place salmon skin side down in an 11x7-in. baking dish coated with cooking spray. In a small bowl, combine the butter, horseradish, lemon juice, garlic powder and pepper; spread over salmon. , Bake, uncovered, at 375° for 20-25 minutes or until fish flakes easily with a fork.

1/3 cup apple jelly
1 tablespoon chopped chives
2 tablespoons prepared horseradish
1 tablespoon vinegar (any)
1/2 teaspoon salt, divided
4 (6 ounce) salmon fillets, 1 inch thick, skinned
1/4 teaspoon pepper
2 teaspoons olive oil

Steps:

  • Preheat oven to 350°F.
  • Combine apple jelly, chives, horseradish, vinegar,and 1/4 tsp salt, stirring well with whisk.
  • Sprinkle salmon with 1/4 tsp salt and pepper.
  • Heat oil in large nonstick skillet over medium heat.
  • Add salmon, and cook 3 minutes. Turn salmon over; brush with half of apple mixture.
  • Pour salmon and juices into baking dish; bake at 350°F for 7 minutes and turn fillets over and brush with mixture again. Bake 7 more minutes.

1 loaf black bread, sliced into wedges
Lemon wedges

Steps:

  • Steam broccoli in a colander over simmering water or in the microwave until tender-crisp. Set aside.
  • Meanwhile, in a medium bowl, whisk together apple, yogurt, mayonnaise, mustard, and horseradish. Arrange salmon on a serving platter. Arrange black bread slices alongside and garnish with lemon wedges and capers. Serve half of the broccoli with this meal and reserve remaining broccoli (about 2 cups) for another recipe.

3 tablespoon butter, softened
2 tablespoon horseradish
1 cup fresh bread crumbs

Steps:

  • Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. Season salmon and mound breadcrumb mixture on top and press down to cover top of salmon. Preheat broiler. Heat oil in nonstick skillet. Lay salmon pieces into skillet and cook over medium high heat until browned on bottom. Slide under broiler and cook for 3-4 minutes or until golden brown on top. 1 skin-on salmon fillet (2 lb.), 1 inch thick
2 Tbsp. olive oil
1 Tbsp. chopped Italian parsley

Steps:

  • Heat greased grill to medium heat.
  • Mix first 4 ingredients until blended.
  • Skewer potatoes. Brush potatoes and fish with oil. Grill potatoes and fish, flesh-side down, 10 min., turning after 5 min. Brush flesh side of fish with horseradish mixture; grill 10 min. or until fish flakes easily with fork, turning potatoes occasionally.
