PRALINE APPLE CRISP
An easy almond-flavored yogurt sauce tops this brown sugar 'n cinnamon caramelized crisp.

Steps:
- Heat oven to 375°F. Spray 1 1/2-quart casserole with cooking spray. In small bowl, mix water and 1 teaspoon almond extract. In casserole, toss with apples.
- In small bowl, mix flour, brown sugar and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Stir in crackers and pecans. Sprinkle over apples.
- Bake uncovered about 30 minutes or until topping is golden brown and apples are tender.
- In small bowl, mix topping ingredients until well blended. Serve warm apple crisp with topping.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.
APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Butter 11-inch round pie pan.
- Combine 1/2 cup sugar and cinnamon in large bowl.

Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference.
