This is really easy and so very, very good. I like to add a dollop of vanilla yogurt on top of my piece of coffee cake. Yummy!

cooking spray
1 tablespoon flour, or as needed
¼ cup butter, softened
¾ cup brown sugar
1 large egg
¼ cup sour cream
¼ cup vanilla yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
¾ teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
2 cups diced Granny Smith apple
¼ cup brown sugar
¼ cup all-purpose flour
2 tablespoons butter
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking dish with cooking spray; dust with 1 tablespoon flour.
  • Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
  • Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
  • Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

My mom, or Gram, as her 10 grandkids lovingly refer to her, made this for her 5 kids when we were growing up. Even on our tight budget, she managed to convert those apples dropping off our tree into something wonderful every fall. Cover the coffee cake with plastic wrap to keep it moist.

4 cups peeled, cored, and diced apples
2 cups white sugar
½ cup vegetable oil
2 eggs, lightly beaten
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon

1 teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch glass baking pan.
  • Combine apples and sugar in a bowl and toss to coat. Stir in oil, eggs, and vanilla extract.
  • Stir flour, cinnamon, baking soda, salt, nutmeg, and allspice in a separate bowl. Add to the apple mixture and mix well. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool in the pan on a wire rack.

1 cup all-purpose flour
1/2 cup firmly-packed brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
1 cup milk or 1 cup half-and-half cream
2 eggs
1 1/2 cups chopped apples
1/4 cup melted butter
3/4 cup firmly-packed brown sugar
1 teaspoon cinnamon
1/2 cup chopped walnuts
1/2 cup graham cracker crumbs

Steps:

  • Set oven to 350 degrees.
  • For the topping: combine all ingredients; set aside.
  • To make the cake: in a large bowl, combine the graham cracker crumbs, flour, brown sugar, baking powder, cinnamon and salt.
  • Add in the butter or margarine (if using) and milk; beat at high speed for 2 minutes.
  • Add in eggs; beat for another 2 minutes more.
  • Spread batter in a greased 9-inch square baking pan.
  • Sprinkle the chopped apples on top of the batter.
  • Then sprinkle the crumb topping evenly over the apples.
  • Bake for 35-40 minutes.

I got this from Linda, my friend of 40 years! She has given the recipe to many people and once you try it, you'll know why. I've made it with a combo of white and whole wheat flour. I've also used applesauce in place of the oil - it still tastes great!

1 1/2 cups sugar
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups oil

1/4 cup brewed coffee
1 1/2 teaspoons vanilla
2 1/2 cups chopped apples (peeled or not)
1 cup raisins (or combo) or 1 cup cranberries (or combo)

Steps:

  • Sift dry ingredients together.
  • Combine remaining ingredients in a large bowl; gradually add dry ingredients and mix well.
  • Pour into a greased bundt pan and bake in a preheated 350F oven for an hour or until a cake tester comes out clean.

1/2 cup butter-flavored shortening
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1-3/4 to 2 cups chopped peeled tart apples
TOPPING:
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons cold butter
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture alternately with sour cream, mixing well after each addition. Stir in apples. Transfer to two greased 8-in. square baking dishes. , For topping, combine brown sugar and cinnamon. Cut in butter until crumbly. Stir in nuts; sprinkle over batter. Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. 3/4 cup chopped pecans

1 tablespoon milk

Steps:
