TORTILLA ROLLUPS IV
These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

Steps:
- In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
- To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

Steps:
- 1. Take 3 tortillas and spread pineapple cream cheese on top and lay ham slices over. Roll up and seal with cream cheese
- 2. Take 3 tortillas and spread with chive and onion cream cheese and lay turkey slices on top. Roll up and seal with cream cheese.
- 3. Take 3 tortillas and spread with blueberry cream cheese. Top with goat cheese roll up and seal with cream cheese
- 4. Take 3 tortillas and spread plain cream cheese over. Top with shredded cheddar. Roll up and seal with cream cheese
- 5. Refrigerate at least 2 hours. Cut off end and cut into rounds. About 4 rounds each tortilla

Steps:
- 1. Let cream cheese come to room temperature
- 2. Take one tortilla at a time, lay flat and spread with cream cheese. You can mix flavors and fillings.
- 3. Spread tortilla with pineapple cream cheese and lay ham slices on top. Roll the tortilla and seal the flap with cream cheese.
- 4. Spread tortilla with chive and onion cream cheese and lay turkey slices on top. Roll the tortilla and seal the flap with cream cheese.
- 5. Spread tortilla with blueberry cream cheese and roll the tortilla to seal the flap with cream cheese.
- 6. Spread tortilla with plain cream cheese and lay shredded cheddar cheese over whole thing. Roll and seal the flap with cream cheese.
- 7. Mix and match the flavors using the ingredients you have assembled. After they are all rolled, slice them with sharp knife into one inch slices. About 6 per roll.
- 8. Arrange them on a platter and cover. Refrigerate until ready to serve. They will disappear and your guests will love the variety!
