CLASSIC POSOLE



Classic Posole image

Hominy, or hulled corn kernels, is the backbone of this Mexican soup (pronounced poh-SOH-lay), which can easily be made vegetarian by using vegetable stock and omitting the pork. Either way, it's best garnished with lots of cilantro, cheese, and lime and served with warm flour tortillas.

Yield Makes 8 to10 servings

Number Of Ingredients 24

Pork:
1 tablespoon ground cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 2-pound boneless pork shoulder (Boston butt)
Kosher salt and freshly ground black pepper
1/2 red onion, sliced
Posole:
1/4 cup vegetable oil
1/2 red onion, chopped
3 garlic cloves, minced
2 plum tomatoes, diced
6 cups low-salt chicken broth
1 28-ounce can undrained pinto beans
1 28-ounce can white hominy, drained
1 28-ounce can diced tomatoes with juices, puréed in blender until smooth
1 tablespoon oregano (preferably Mexican)
2 teaspoons ground cumin
Kosher salt and freshly ground black pepper
Shredded mild cheddar
Chopped fresh cilantro
Lime wedges
Flour tortillas
Ingredient info: Smoked paprika and hominy are sold in most supermarkets.

Steps:

  • For pork:
  • Preheat oven to 275°. Line a small roasting pan with foil. Mix cumin, garlic powder, and smoked paprika in a small bowl. Rub spice mix all over pork. Sprinkle with salt and pepper. Place pork in pan and cover with sliced onion. Pour 1/2 cup water in the bottom of pan. Cover pan tightly with foil and roast until meat is very tender, 5-6 hours. Let pork rest until cool enough to handle.
  • Using 2 forks, shred pork into bite-size pieces. Skim fat from juices in roasting pan; reserve meat. DO AHEAD: Can be made 2 days ahead. Cover and chill pork and juices separately.
  • For posole:
  • Heat oil in a large pot over medium-low heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and cook, stirring often, until fragrant, about 2 minutes. Add the diced fresh tomatoes and stir until softened, about 2 minutes longer. Stir in broth and next 5 ingredients. Bring to a boil and reduce heat to low. Cover; simmer, stirring occasionally, for 30 minutes.
  • Add reserved pork to posole. Simmer uncovered 30 minutes longer for flavors to meld. Season to taste with salt and pepper, adding reserved juices from roast pork, if desired. Divide among bowls, garnish with shredded cheese, cilantro, and lime wedges, and serve with flour tortillas.

This is my version of The Shed's famous posole. If you can't make it to Santa Fe, try this on a cold night. If you can get New Mexico's red chile flakes...that's the way you want to go! If not, I believe McCormick makes the red chile flakes. Don't forget the warm corn tortillas!

1 1/2 lbs pork, cubed into bite size chunks
2 (15 1/2 ounce) chicken stock
2 (15 1/2 ounce) cans hominy, undrained (I use one white, one yellow)
1 lime, juice of
1 large onion, chopped
2 tablespoons red chili pepper flakes (Chimayo is nice)
4 garlic cloves, minced
1/2 teaspoon oregano leaves, crushed

Steps:

  • Simmer the pork in chicken stock, until tender (about 35-40 minutes).
  • Add onions, chile flakes, garlic, oregano, and lime juice.
  • Cover and simmer on low for 30-35 minutes.
  • Serve with lime wedges.
  • Don't forget the warm corn tortillas.

6 tomatillos, husked and stems removed
1 jalapeno pepper, halved
cooking spray
1 1/2 lbs boneless pork chops, cut into 1/2 inch cubes
1 cup of chopped onion
3 minced garlic cloves
2 teaspoons ground cumin
1 teaspoon ground coriander
1/4 teaspoon salt
2 (14 ounce) cans chicken broth
1 (15 ounce) can hominy, drained
2 (4 1/2 ounce) cans chopped green chilies

Steps:

  • Place tomatillos and jalapeno peppers in a food
  • processor, process 1 minute or until smooth.
  • Heat a large dutch oven coated with a cooking spray
  • over medium-high heat. add pork, brown on all sides.
  • Add 1 cup onion, saute 3 minutes, add garlic and saute 30 seconds stir in cumin and the balance of the items, bring to a boil; reduce heat and stir in tomatillo mixture.
  • Simmer, uncovered for 45 minutes or until pork is tender.

ANN'S EASY POSOLE

This is an easy meal to put on the table. I love to make this in the fall and winter. The chile powder from New Mexico makes a lot of difference, but you could make your own chile powder from chile pods, or buy it at the store. NOTE: If you buy chili powder (like McCormick) from the store, it is a blend of ingredients. Omit the oregano if you use it.

2 (15 ounce) cans hominy, undrained (I use one yellow, one white)
2 teaspoons dried oregano leaves, crushed
1 teaspoon salt
1/2 teaspoon garlic powder
1 -2 tablespoon chili powder (preferably New Mexican red chile powder, or store bought chili powder)
1 onion, chopped
cooked chicken (shredded or cubed) (optional)
cooked pork (shredded or cubed) (optional)
cilantro, chopped (optional)

Steps:

  • Combine all ingredients in a large pan.
  • Bring to a boil over medium heat.
  • Reduce heat and simmer on low, covered, for 20-25 minutes. (Add water or chicken stock, if necessary).
  • May garnish with cilantro, if desired.
  • For Vegetarian omit the Chicken and the Pork.

5 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon ground black pepper
2 1/2 lbs boneless pork shoulder butt, cut into 2 inch pieces
3 bacon, slices chopped
1 large onion, thinly sliced
1 cup diced smoked ham
1 medium carrot, peeled and chopped
6 cloves garlic, chipped
2 poblano chiles, seeded,cut into 2 x 1/4 inch strips
2 cups hominy, drained (2x15oz cans)
1 cup of mexican beer
1 cup of canned diced tomato, in juice
1 cup canned low sodium chicken broth
1 teaspoon dried marjoram
1/4 cup chopped fresh cilantro

Steps:

  • Mix 1 Tablespoon Chili powder, Salt, Pepper in a bowl.
  • Rub spice mixture all over pork.
  • Saute bacon in a heavy large pot over medium heat until crisp.
  • Transfer bacon to paper towels.
  • Working in batches, add pork (leaving space around each piece) to drippings in the pot and Saute until browned on all sides, about 10 minutes per batch, using slotted spoon to tranfer pork to a bowl.
  • Reduce heat to medium, add onions, ham, carrot, and garlic to the pot; cover and cook 5 minutes stirring occasionally and scraping up browned bits.
  • Add Chilies; stir 1 minute.
  • Stir in hominy, tomatos w/juices, beer, chicken broth, marjoram, pork, and remaining 2 teaspoons of chili powder and bring to a boil.
  • Reduce heat; cover and simmer until pork is very tender, about 1 hour.
  • Uncover stew and simmer until liquid is slightly reduced and thickened, about 10 minutes.
  • Season with salt and pepper.
  • Garnish with reserved bacon and cilantro.
