1 pound fettuccine
1 1/2 cups heavy cream
6 tablespoons unsalted butter, cut into cubes
1/4 teaspoon freshly grated nutmeg
Freshly ground pepper
1 cup grated parmesan cheese (about 2 ounces), plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, combine the heavy cream and butter in a large skillet. Bring to a simmer over medium-high heat, whisking to combine. Whisk in the nutmeg and 1/2 teaspoon each salt and pepper. Keep warm over low heat.
  • Add the pasta and cheese to the sauce. Increase the heat to medium and toss to coat, adding the reserved cooking water as needed to loosen the sauce. Transfer the pasta to bowls and top with more parmesan.

1 1/4 cups 2% milk, or more, as needed
2 tablespoons heavy cream
1/4 teaspoon garlic powder
2 ounces Neufchatel cheese, cubed
1/4 cup freshly grated Parmesan cheese
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Melt butter in a saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in heavy cream and garlic powder until slightly thickened, about 1 minute. Stir in cheeses until melted, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste. Stir in pasta and gently toss to combine. Serve immediately, garnished with parsley, if desired.

1/2 cup unsalted butter, plus
1 tablespoon unsalted butter
1/2 cup grated parmigiano-reggiano cheese, plus additional for sprinkling (4 oz)
2/3 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook fettuccine in a 6- to 8-quart pot of boiling salted water* until al dente.
  • Reserve 1/4 cup cooking water, then drain pasta in a colander.
  • Melt 3/4 stick (6 tablespoons) butter in a 2- to 3-quart flameproof gratin dish over low heat.
  • Add cooked pasta and toss to coat, lifting strands.
  • Add cheese, reserved cooking water, cream, remaining 3 tablespoons butter (thinly sliced), salt, and pepper and toss to combine well.
  • Sprinkle with additional cheese and serve immediately.

1/2 cup fresh lemon juice

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Since going low carb, I'm always on the look out for something new that isn't going to blow my diet. I used some non-dairy products to lower the cholesterol as well. I did use some Romano cheese instead of the Parmesan. I also added a cut up piece of cooked turkey bacon to my dish. Having found these Shirataki low carb noodles was a God-send. I got the recipe from the back of the Tofu Shirataki package. This product has no cholesterol, sugar or gluten and is Vegan to boot, now I can have my noodles and eat them too.

1 -2 garlic clove, minced
1 1/2 cups 2% low-fat milk (or I have used skim)

1/4 teaspoon salt
