Delicious typical Israeli breakfast, that really can be eaten as lunch or even dinner! Sauce can be made in a advance to be reheated at the time that eggs are done. In this recipe, I've reduced the amount of oil used to make it low fat, but you can use more if you need to.

2 teaspoons olive oil
4 extra large ripe tomatoes, chopped
2 red bell peppers, diced
1 large onion, diced
1 green jalapeno pepper, finely diced
26 1/2 ounces pomi brand chopped tomatoes (nothing works like this!)
kosher salt, to taste
black pepper, to taste
6 large eggs (or as many as will fit on your sautà pan)

Steps:

  • You need a large nonstick deep sauté pan that has a cover. Sauté onions in olive oil until opaque and tender.
  • Add red bell pepper and continue sauteeing until it softens up.
  • Reduce heat to low. Add the fresh chopped tomatoes, cook until they are breaking apart.
  • With a slotted spoon, add the chunkiest parts of the contents of the "Pomi" - the majority of the sauce should remain in the carton. Add the jalapeno now also.
  • Cook for 30-40 minutes, partially cover, and stir every once in a while. If it starts to look dry, add some of the sauce from the carton, slowly , as you need it. Add the salt and pepper - I like a lot because I love salt on tomatoes.
  • The final product should be a thick sauce that just looks like a whole lot of tomatoes stuck together - with very little to no juice, that is about 1-1 1/2 inches high.
  • Crack open the eggs on top of the shakshuka, one by one, giving each their own space. The whites should overlap, but the yolk should be spaced about 4 fingerwidths from each other. My pan can fit 6-8 eggs very comfortably.
  • Cover tightly with a lid and simmer for 20 minutes.

2 green banana peppers
4 large vine-ripened tomatoes, cut into large pieces
3 garlic cloves, chopped
2 teaspoons sweet paprika
salt
1/3 cup olive oil
4 large free-range eggs
fresh ground black pepper
300 g halloumi cheese, cut into 4 thick slices
4 slices toasted sourdough bread (thick slices)
fresh ground black pepper

Steps:

  • Preheat a grill on high and cook banana chilli until black and blistered. Alternatively lay chillies over a naked flame, and turn occasionally until blackened and blistered. Place into a plastic bag or cover with a tea towel until cool. This will allow the skins to be removed easily.
  • Peel off blackened skins and scrap out seeds. Cut flesh into 1cm thick strips and set aside.
  • Combine chopped tomatoes, garlic, paprika, salt and ¼ cup olive oil in a frying pan over medium heat. Cover and simmer for 10 minutes or until tomatoes have collapsed. Remove lid and stir through chopped chilli. Simmer a further 8-10 minutes or until all the juices have evaporated and the sauce is quite thick.
  • Push the sauce to the sides of the pan, allowing space for the eggs to be cracked into. Break eggs into pan, season with freshly ground black pepper, cover and cook 3-4 minutes or until the egg is cooked to your liking (soft yolk).
  • Meanwhile, heat a char-grill pan over medium heat, brush haloumi and bread with remaining oil and cook until golden and haloumi has just softened.
  • To serve, top toasted bread with shakshuka and egg and serve with fingers of grilled haloumi.

Shakshuka is a traditional Tunisian dish (now a popular Israeli breakfast) of eggs poached in tomato sauce. This version is for those times when you need your shakshuka to be just a little more substantial ;) Serve with cornbread or sturdy white bread.

3 tablespoons butter (or bacon drippings or schmaltz)
2 onions (chopped)
3/4 lb ground beef
4 garlic cloves (minced)
2 teaspoons tomato paste
2 tablespoons chili powder (or harissa or pilpelchuma)
5 cups very ripe tomatoes (about 5 large, or a 28 ounce can of whole peeled tomatoes, chopped)
1 (14 1/2 ounce) can kidney beans
4 eggs
1 cup cheddar cheese (grated)
1/2 cup sour cream (or labneh or Greek yogurt)
1/2 cup parsley (chopped)

Steps:

  • Heat the fat over medium-low heat and caramelize half of the onion in it, reserving the other half of the onion for garnish.
  • Break the ground beef into the pan and brown, stirring occasionally, until cooked through.
  • Add the garlic, tomato paste, and chili powder, harissa, or pilpelchuma, stirring and cooking with the ground beef for about a minute or until fragrant.
  • Add the tomatoes and the beans and simmer for 10-20 minutes or until the sauce is thickened, stirring occasionally.
  • Make four indentations in the sauce. One at a time, crack the eggs gently into a measuring cup then pour into each indentation. With a fork, carefully break up the egg whites and swirl them with the sauce.
  • Sprinkle the cheese on top and continue to simmer gently for another 8-10 minutes, covering if necessary, until the whites are set and cheese is melted. Spoon into bowls, top with sour cream, parsley, and raw onions, and serve.

A hot breakfast meal that's definitely a new favorite of mine to make in the morning. A different way to make eggs interesting and delicious again with a little southwestern influence. Personally I prefer mine with a hotter salsa to liven things up as well as mushrooms mixed into the salsa. A modified recipe from one on Foodnetwork. I've also upped the amount of salsa based on the review and I think mushrooms added to this would be great as well.

1/2 cup salsa, plus maybe a tad more (your choice of hotness)
4 eggs
salt, to taste
black pepper, to taste
1/4 cup green onion (optional)
1/4 cup shredded cheese
1 tablespoon cilantro, chopped
vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • Lightly oil or spray a medium nonstick skillet with an ovenproof handle.
  • Spoon salsa into the pan.
  • Lightly press down salsa to make 4 evenly spaced shallow nests and break an egg into each.
  • Add green onions and season eggs with salt and pepper.
  • Bake about 15 minutes or until the egg whites are cooked and the yolks are still runny.
  • Sprinkle the cheese over the eggs and continue baking until just melted, about 1 minute more.
  • Top with the cilantro and serve immediately.

This is a sort of an Israeli take on huevos rancheros, minus the tortillas. I found the recipe in the Sunday paper a few months ago and only recently gave it a try. I have to admit I was a little leery, but it turns out to be really tasty.

2 tablespoons olive oil
4 garlic cloves, crushed
1 (14 ounce) can diced tomatoes
1 jalapeno, seeded and minced
1/2 teaspoon paprika
1/2 teaspoon cumin
2 tablespoons tomato paste
1/2 teaspoon kosher salt
black pepper, to taste
6 eggs

Steps:

  • Heat the olive oil in a large skillet. Add the garlic and sautee for about a minute, then add the tomatoes, jalapeno, paprika, and cumin. Cook, partially covered for about 15 minutes. Add tomato paste, kosher salt, and pepper, then cook for a further five minutes or so.
  • Break the eggs into the tomato mixture. Cook, partially covered, until the egg whites are set (five minutes or so). Serve hot with unleavened bread, such as matzo.

REAL ISRAELI SHAKSHUKA

This is a classic Israeli/Sephardic dish. In hebrew Le'Shakshek means "to shake," after you see the finished product you'll understand why it is named this. This is a very easy dish to make and is extremely good for a college student's budget. This is a classic food that always reminds me of Israel. I scoured the internet one night looking for a good recipe and after a lot of experimentation found my favorite recipe. Most of the recipes I found make a lot, but I only needed for one serving, so this just that. In the recipe I say to use a third of a 28 oz can of tomatoes. I personally like more tomatoes, but obviously you can change the recipe according to your tastes, try using only half of the can. I also don't like onions, so I only put very little in, chopped finely. Good Luck and Bete'avon!

19 ounces canned tomatoes (I like Rao's Homemade Italian Peeled Tomatoes)
1 garlic clove, finely diced
1 slice white onion, finely diced
1 teaspoon salt (to taste)
1 teaspoon sweet paprika (to taste)
1/2 teaspoon red cayenne pepper (to taste)
1 teaspoon tomato paste
1/4 cup olive oil
2 large eggs

Steps:

  • Drain most (but not all) liquid from the tomatoes.
  • With your hands break apart tomatoes, keep uneven and chunky.
  • Put the tomatoes in the pan along with the garlic, salt, paprika, cayenne pepper, tomato paste and olive oil.
  • Bring to a simmer and cook uncovered over low heat until thick (about 15 minutes while stirring occasionally).
  • When tomato sauce is thick, break egg over cup or bowl (make sure there is no blood or pieces of the shell) then dump the egg into the pan (making sure not to break the yolk). Put the eggs on opposite sides of the pan so they don't blend together.
