An easy and great tasting appetizer. You can not just have one.... You will have garlic breathe when you are finished, but it's worth it.

Number Of Ingredients 5

1/2 cup green olives, drained
1/2 cup black olives, drained
1 tablespoon capers, drained
1 -2 clove garlic, mashed (to your taste)
1/4 cup olive oil

Steps:

  • Put all ingredients, except olive oil in the food processor and pulse until chopped.
  • Turn processor on low setting and gradually add olive oil until you get a grainy texture.
  • I stop and start and scrape down the sides as I am going.
  • I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
  • Serve with slices of grainy baguette.
  • This is wonderful and easy.

This recipe was given to me by a coworker for the holidays. It is best when made with olives purchased at a deli. Serve with your favorite cracker, baguettes or thin italian bread slices.

1 cup pitted black olives
1 cup pitted green olives
1 cup pitted kalamata olives
2 cloves garlic, peeled
3 tablespoons balsamic vinegar
3 tablespoons olive oil

Steps:

  • Combine the black olives, green olives, kalamata olives, and garlic in the container of a food processor. Pulse to chop, then add balsamic vinegar and olive oil. Process until smooth. Refrigerate for at least one hour, or overnight if possible, before serving.

Number Of Ingredients 11

3/4 cup olive oil, divided
2 cups onions, chopped
1/4 cup garlic, chopped
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
2 teaspoons cumin
4 eggs, beaten
4 cups olives in brine (green or black)
2 -4 tablespoons water (optional)

Steps:

  • In a medium saute pan, heat one-fourth cup of oil and sauté the onion and garlic till golden, about 5 minutes. Set aside to cool slightly.
  • Meanwhile, in a large bowl, sift together the flour, baking powder, baking soda, salt and cumin. Beat in the eggs and onion and garlic mixture with a fork. Stir in the olives and add water, as needed, if the mixture seems too thick.
  • Heat one-fourth cup of the remaining oil in the pan and use a small cup or soup ladle to form 3 to 4 latkes. Fry on both sides till golden. Repeat until all the batter is used, adding additional oil as needed for frying. Transfer the latkes to a paper towel-lined plate to drain. Serve with thick yogurt or sour cream.
