Number Of Ingredients 5

45ml (3 tbsp) butter
30ml (2 tbsp) fresh angelica leaves, finely chopped
15ml (1 tbsp) lemon zest
½ garlic clove, chopped
white pepper, to taste

Steps:

  • Soften the butter in a small bowl. Mix in the remaining ingredients. Spread the mixture on a sheet of plastic wrap and refrigerate until firm. Roll into a log shape and wrap in plastic wrap. The log can be frozen until needed. Slice into coin-sized pieces and melt over grilled or sautéed fish before serving.

I first had this fluffy spread at church, and now it is a family hit. Great on homemade breads and bagels. It's slightly sweet and has great texture. You can adjust the honey and brown sugar according to your personal taste.

½ cup honey
½ cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Beat softened butter, honey, brown sugar, cinnamon, and vanilla extract together in a mixing bowl, using an electric mixer, until butter mixture is fluffy, 2 to 3 minutes.

HOMEMADE CRYSTALLISED ANGELICA



Homemade Crystallised Angelica image

I have a recipe in my cookbook for homemade angelica liqueur but you need crystallised angelica which can be hard to find. If you have your own plant, you can make your own.

12 ounces angelica, stalks
1 cup granulated sugar

Steps:

  • Choose stalks that are young and tender.
  • Cut the stalks into into 3-4 inch lengths, put them into a pan, cover with water and bring to a boil.
  • Drain and scrape away tough skin and fibrous threads with a potato peeler.
  • Return the angelica to the pan, pour on fresh boiling water and cook until green and tender (about 5 minutes or less).
  • Drain the stalks and dry them.
  • Put them into a bowl and sprinkle granulated sugar between layers.
  • Cover and leave for 2 to 3 days.
  • Slide contents of the bowl into a heavy-based pan. Bring very slowly to the boil and simmer until the angelica is tender and looks clear.
  • Drain, then roll or toss the shoots on greaseproof paper with sugar.
  • Then dry off the angelica in the oven, using the lowest temperature about 3 hours.
  • Wrap and store after cooling completely.

With its soft, buttery crumb, this classic French cake is similar to a giant shortbread, though moister and more tender. Its hidden prune filling is traditional, although you can use other dried fruit, such as apricot, instead. In France you sometimes even see bakers sandwiching melted chocolate or caramel between the layers. This keeps well if you want to bake it 1 or 2 days ahead. Store it well wrapped at room temperature.

3/4 cup/100 grams pitted prunes or dried apricots (about 16)
2 tablespoons/30 milliliters rum
2 1/4 cups plus 2 1/2 tablespoons/300 grams all-purpose flour
1 cup/200 grams superfine sugar
Large pinch flaky sea salt
8 1/2 ounces/240 grams unsalted butter (2 sticks plus 1 tablespoon), diced, more for greasing pan
6 extra-large egg yolks

Steps:

  • In a small pot over medium-high heat, combine prunes, rum and 2 tablespoons water. (Use 1 cup/240 milliliters water if using dried apricots.) Cook until most of the liquid has been absorbed (about 5 minutes for prunes, 10 to 15 for apricots). Use a fork to mash into a thick purée. Cover and chill.
  • In a food processor, pulse to combine flour, sugar and salt. Add butter and pulse until mixture resembles bread crumbs. Add 5 egg yolks and pulse until mixture comes together as a dough. Divide in half, form into disks, and wrap in plastic wrap. Chill at least 2 hours or until firm.
  • Heat oven to 350 degrees. Grease and line an 8-inch round cake pan with parchment paper. Between two sheets of parchment paper or plastic wrap, roll one of the dough halves into an 8-inch circle. Transfer dough to prepared cake pan, pressing into edges. Spread prune or apricot purée across dough, leaving 3/4 inch border around outside edge. Roll second piece of dough into an 8-inch circle, transfer to cake pan, press around outside edge to stick the pieces together and seal in fruit purée.
  • In a small bowl, combine remaining egg yolk with 1 teaspoon water and beat lightly. Brush over top of cake, then use a fork to score a crisscross pattern into the dough. Bake until golden brown, about 50 minutes (cover with foil if cake is browning too quickly). Cool in pan 15 minutes. Flip onto a plate, then invert onto a wire rack and let cool completely.

EASY BUTTERFINGER® CAKE

Angel food cake, Butterfinger® candy bars and Cool Whip® are the well known favorites in this delightful (and easy) no-bake dessert. Looks great in a trifle bowl. I don't even like Butterfinger® bars and I thoroughly enjoy this stuff!! You can do this in a 9x13-inch pan as well, but the trifle looks so nice!

2 cups confectioners' sugar
½ cup butter, softened
4 egg yolks
1 (16 ounce) package frozen whipped topping, thawed
1 (9 inch) prepared angel food cake, torn into bite-size pieces, divided
4 (2.1 ounce) bars chocolate-covered crispy peanut butter candy (such as Butterfinger®), crushed, or more to taste

Steps:

  • Beat confectioners' sugar, butter, and egg yolks together in a large bowl with an electric mixture until creamy. Fold whipped topping into the mixture.
  • Spread 1/2 the angel food cake pieces on the bottom of a trifle dish. Pour 1/2 the whipped topping mixture in an even layer over the cake pieces. Sprinkle 1/2 the crushed candy bars over the top. Repeat layers with remaining cake, whipped topping mixture, and crushed candy. Cover dish with plastic wrap and refrigerate for at least 1 hour before serving.
