CHICKEN FLORENTINE PASTA

Chicken Florentine Pasta in a light creamy sauce (it actually doesn't have any cream in it at all!). The spinach in this pasta is vibrant, healthy and tasty. This pasta also reheats really well - creamy as ever!

Number Of Ingredients 14

8 oz linguine pasta (cooked to package instructions)
Olive oil to sauté
2 small/medium boneless skinless chicken breasts
1/2 lb button mushrooms (white or brown)
1 bunch green onion ((1 cup chopped) (green and white parts))
2 Tbsp unsalted butter
3 Tbsp all-purpose flour
2-3 garlic cloves (pressed)
1 cup chicken broth
1 cup whole milk
1/2 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)
4 cups fresh baby spinach (loosely packed)
Freshly grated parmesan to serve

Steps:

  • Cook pasta according to package instructions then drain and set aside (while pasta cooks, continue on).
  • Season chicken with salt and pepper. Heat a large, deep pan over medium heat and add 2 Tbsp oil. Add chicken and sauté the first side until golden brown (5 min), flip, cover and sauté another 5 min or until cooked through. Remove from pan and rest 10 min before slicing against the grain.
  • In the same pan, add 1 Tbsp oil if needed along with sliced mushrooms and green onion. Sauté until soft and golden (5 min). Remove from pan and set aside.
  • In the same pan, add 2 Tbsp butter, 3 Tbsp flour and pressed garlic then whisk 2 min. Slowly whisk in 1 cup chicken broth then 1 cup milk. Bring to a simmer and whisk until smooth and creamy (2 min). Add spinach and stir until wilted (1 min). Add 1/2 tsp salt and 1/8 tsp pepper or season to taste.
  • Add sliced chicken, sautéed mushrooms and drained pasta and toss to combine. Season to taste if needed and serve with parmesan cheese.

Leaves from 2 bunch fresh basil
2 tablespoons pine nuts, untoasted
1 garlic clove
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 pound angel hair pasta

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

SHRIMP AND ANGEL HAIR PASTA

Easy, healthy, and FAST. This is a great weeknight dinner adapted from Woman's Day magazine, although its elegant enough for a dinner party. Just make sure to do your prep work ahead of time, since this comes together quickly. Great served with peas/onions side dish.

1/2 lb angel hair pasta
2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)
2 teaspoons garlic, chopped
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)
1/8 teaspoon crushed red pepper flakes
1 tablespoon lemon peel, grated fresh
1/4 cup lemon juice, squeezed fresh
1/2 cup Italian parsley, chopped
1/3 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package instructions and drain.
  • While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
  • Add broth and crushed red pepper. Increase heat to high.
  • Add cooked shrimp (if not using uncooked shrimp in step 2).
  • Cook on high heat for 2-3 minutes (just one minute if you used uncooked shrimp earlier), until shrimp are warmed through.
  • Stir in lemon peel and juice.
  • Put the pasta in a serving bowl, add the remaining tablespoon olive oil and 1/2 teaspoon each salt and pepper. Toss to coat.
  • Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

1 egg, beaten
1 cup sour cream
2 cups heavy cream
4 tablespoons grated Parmesan cheese
1/2 medium-large onion, minced
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 (10-ounce) package chopped spinach, thawed and drained
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded sharp cheddar cheese
4 ounces angel hair pasta, cooked, drained

Steps:

  • Combine egg, sour cream, heavy cream, Parmesan, onion, salt, and pepper. Add spinach and blend well. Add cheeses and mix well. Fold in pasta. Put in oven-proof casserole, sprinkle with more Parmesan, cover with tin foil, and bake at 350° for 45 minutes to 1 hour or more, until set. Remove tin foil last 10 minutes of cooking.

2 cup(s) fresh chopped spinach
1/2 cup(s) milk
- garlic powder to taste
1 1/2 cup(s) cooked cubed chicken
1 can(s) 10.75 oz. cream of celery soup
- freshly grated parmesan cheese

Steps:

  • In a large skillet coated with cooking spray, brown chicken slightly and wilt the spinach.
  • Add soup, milk and seasonings. Heat stirring constantly, until well blended and hot. Cook pasta according to package directions. Serve the spinach cream sauce over the hot pasta. Top with freshly grated parmesan cheese. Enjoy completely!

  • Cook the pasta according to directions (reserving 1/4 cup pasta water as it cooks!), drain, and set aside. Do not rinse the cooked pasta.
  • In a stainless skillet over medium to medium-high heat, warm the oil. Add the mushrooms, stir to coat and then spread them across the pan. Let the mushrooms cook without stirring for 2-3 minutes, until browned. Stir and let cook a few more minutes until soft. Add the spinach. Sprinkle with salt and pepper, and stir to wilt. Add the cooked pasta back into the skillet.
  • Toss with tongs and taste the pasta. Add salt, if needed. Add a splash of pasta water, if the pasta is dry. Divide the pasta into bowls, sprinkle with cheese, and top each bowl with an egg. Enjoy!
