LOW CARB CREAMY COLESLAW
The BEST creamy coleslaw is quick and easy to make with just a few simple ingredients. The perfect side dish for BBQs, parties, potlucks or part of an easy weeknight meal. Low carb and keto friendly!

Steps:
- Place the dressing ingredients into a bowl and whisk until combined. Chop the green onions and thinly slice the cabbage and carrots, if not using the prepackaged mix.
- Add the chopped green onions and cabbage mix to the bowl with the dressing. Use a spatula to toss the ingredients until the veggies are fully coated.
- The coleslaw can be enjoyed right away but tastes better after chilling in the fridge for at least 2 hours. Can be stored covered, in the fridge, for 3-4 days.

An absolutely delicious coleslaw, more tart and tangy than the creamy kind. Can make this up to 2 weeks ahead of serving and it only gets better.

- In a large bowl, combine cabbage, onion, carrots, and celery. Sprinkle with 1 cup sugar, and mix well. In a small saucepan, combine vinegar, oil, salt, dry mustard, and pepper. Bring to a boil. Pour hot dressing over cabbage mixture, and mix well.

I live in a wonderful Amish community and the ladies here are wonderful cooks. This is a lovely cole slaw recipe for those who like slaw without mayonnaise.

- In a large bowl, toss together the cabbage, onion, and 1 cup sugar. In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil. Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat. Refrigerate overnight for best flavor.

AMY'S COLESLAW
This is the result of my own trial and error in the effort to come up with a good, homemade slaw. If it's too tangy for your liking, you can always add more sugar. I've made it with red cabbage, which was really pretty, but it didn't taste as good as the green, so I would recommend sticking with the green cabbage.

Steps:
- Shred 3/4 of cabbage.
- Slice remaining cabbage into ribbons and chunkier pieces (you don't want it all finely shredded).
- Peel and shred carrot.
- In a large bowl, combine all ingredients thoroughly.
- Keep in refrigerator; the flavors will mingle and it will taste even better the next day.

AMISH COLESLAW DRESSING RECIPE
Steps:
- Add all of your ingredients into chopper/blender; that is, except for the cabbage and ramen, of course.
- Blend this together for about a minute.
- Pour the dressing over your coleslaw and mix well. Refrigerate for about an hour before serving.
- If you want an extra crunch on top of your coleslaw, you can toast the ramen noodles in about a Tbsp. of butter until slightly browned. Cool. Sprinkle the ramen on top of the coleslaw just before serving. Or you can skip this step, if you prefer.
- If you don't use all of the dressing at once, store it in an airtight container in the refrigerator, for up to a month.
