These are delightful... and easy.... meringue cookies. I think I got the recipe from Seventeen magazine, oh, about 35 years ago!

Number Of Ingredients 4

3 egg whites
1 cup sugar
1 (6 ounce) bag butterscotch chips
1 1/2 cups chopped walnuts

Steps:

  • Preheat oven to 400 degrees. Beat egg whites until stiff. Add the sugar gradually and beat well. Fold in the butterscotch bits and the walnuts. Grease two cookies sheets (or easier, yet, line the cookie sheets with parchment paper and apply a little shortening to the paper). Drop mixture by teaspoonfuls onto sheets in peaks, leaving a space between each. Put sheets in oven. TURN OFF HEAT. Leave in oven a minimum of four hours, or overnight for best results.

2 cups sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 cup chopped walnuts
1 cup flaked coconut

Steps:

  • Sift flour, baking powder, soda and salt. In a separate bowl cream butter until fluffy; add sugars, eggs and vanilla. Beat well.
  • Add flour mixture to butter mixture. Mix well. Stir in oats, nuts, and coconut. Mix until well blended.
  • Bake on ungreased cookie sheets for 10-12 minutes at 350 degrees F (180 degrees C).

WOULDN'T THAT MAKE A PERSON SICK? WHAT I DIDN'T REALIZE IS THAT AMMONIA CARBONATE IS A BAKERS INGREDIENT. I HAVE NEVER MADE...

2 1/2 c white sugar
1/2 c butter, softened
3 eggs
1 1/2 c sour cream
1/2 c milk
1 tsp peppermint extract
1/2 tsp salt
2 tsp baker's ammonia (found in the drug store or pharmacy)
3 c all purpose flour

Steps:

  • 1. PREHEAT OVEN TO 350F. GREASE COOKIE SHEETS.
  • 2. IN A LARGE BOWL, CREAM TOGETHER THE WHITE SUGAR AND BUTTER TILL SMOOTH. BEAT IN EGGS ONE AT A TIME, THEN STIR IN THE SOUR CREAM, MILK AND PEPPERMINT EXTRACT. COMBINE THE SALT AND BAKER'S AMMONIA WITH 2 CUPS OF FLOUR AND BLEND INTO MIXTURE. GRADUALLY ADD MORE FLOUR TO MAKE DOUGH STIFF. LEAVE THE DOUGH SOFT FOR SOFT COOKIES OR ADD MORE FLOUR FOR CUT-OUT COOKIES. DROP DOUGH FROM HEAPING SPOONFULS ONTO THE PREPARED COOKIE SHEETS.
  • 3. BAKE FOR 8-10 MINUTES OR UNTIL GOLDEN BROWN. WHEN COOL, ICE WITH A SIMPLE CONFECTIONER'S GLAZE THAT HAS BEEN FLAVORED WITH PEPPERMINT.

2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups quick-cooking oats
1 teaspoon grated orange peel
1 cup chopped dates
1 cup golden raisins
1 cup flaked coconut
1 cup chopped pecans

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray.
  • In medium bowl, mix flour, baking powder, baking soda and salt; set aside. In large bowl, beat butter with electric mixer on medium speed until creamy. Gradually add granulated sugar and brown sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla. On low speed, gradually beat in flour mixture just until blended.
  • Stir in oats, orange peel, dates, raisins, coconut and pecans. Onto cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes. Remove from cookie sheets to cooling racks.

"And it's fun telling people what they are called." (Ammonia cookies are in fact made with ammonium carbonate, a form of baking soda, not cleaning ammonia, which is poisonous.)

1 cup solid vegetable shortening
2 1/2 cups sugar
1 cup shredded coconut
3 cups flour
2 teaspoons baking ammonia, crushed (see note)

Steps:

  • Preheat oven to 350 degrees.
  • Mix butter and shortening. Add sugar, coconut, flour and baking ammonia. Mix well. Form into small balls about the size of a walnut. Flatten with a fork. Place on ungreased cookie sheets.
  • Bake 11 minutes, or until cookies turn light brown.
