4 large baking potatoes (2 lbs)
2 extra-large eggs, lightly beaten
1 medium onions or 1 large onion, grated
6 tablespoons flour
2 1/2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup creme fraiche or 1/2 cup sour cream
4 ounces good black caviar or 4 ounces salmon roe
6 tablespoons clarified butter (see note)

Steps:

  • Peel the potatoes and grate them lengthwise.
  • Place them in a colander or kitchen towel and squeeze out as much liquid as possible.
  • Combine the potatoes in a bowl with the onion, egg, flour, salt and pepper; mix well.
  • Melt 2 tablespoons of clarified butter in a skillet.
  • Drop a heaping tablespoon of the potato mixture into the sizzling butter.
  • Flatten with spatula and cook for 2 minutes.
  • Turn, flatten again, and cook for another 2 minutes, until crisp of the outside and golden brown.
  • Serve the pancakes hot from the skillet with a dollop of créme fraiche or sour cream and a teaspoon of caviar.
  • *Note: To make 6 tablespoons of clarified butter, slowly melt 8 tablespoons of butter in a small saucepan. Set it aside until the milk solids settle. Spoon of any solids that rise to the top and then carefully pour off the golden liquid, leaving the milky part in the bottom of the pan. Clarified butter has a higher burning temperature than melted butter.

4 McIntosh apples, chunked
2 tablespoons brown sugar
2 cups all natural apple juice or fresh cider
1/2 teaspoon ground cinnamon, a few pinches
1/2 teaspoon nutmeg, freshly grated or a few pinches ground
3 medium to large Yukon Gold potatoes, peeled and shredded with hand grater
1 medium yellow skinned onion, peeled and grated
1 egg, beaten
1 teaspoon coarse salt
1 teaspoon baking soda
1/2 teaspoon nutmeg, freshly grated or a few pinches ground
A few tablespoons butter, for frying pancakes

Steps:

  • Place chunked apples, brown sugar, juice or cider, cinnamon and nutmeg in a medium pot over medium-high heat and let cook 15 minutes, stirring occasionally and reducing heat to medium when mixture comes to a boil.
  • Preheat nonstick griddle pan or skillet over medium to medium high heat.
  • Put the potatoes and onion in a colander. Squeeze liquid out of potatoes/onion. Place potatoes/onion in a bowl and work quickly to avoid discoloring potatoes. Add egg, salt, baking soda, and nutmeg.
  • Combine pancake mixture and place bowl near stove. Melt a pat of butter on skillet pan and drop 3 to 4 inch circles of potato mixture onto hot surface. Cook pancakes 3 or 4 minutes on each side and repeat process until pancake mixture is gone.
  • Stir hot, chunky applesauce to break up cooked apples and remove from heat. Layer pancakes with warm apple mixture and serve.

1 pound Yukon Gold potatoes, peeled
1 large egg
2 tablespoons all purpose flour
1 teaspoon fresh lemon juice

1/4 cup finely chopped red onion
2 ounces American sturgeon caviar

Steps:

  • Using largest holes on box grater, shred potatoes into large bowl. Mix in egg and next 4 ingredients. Transfer potato mixture to strainer set over same bowl.
  • Add enough oil to heavy medium skillet to reach depth of 1/4 inch. Heat oil over medium-high heat.   • Preheat oven to 350°F with a rack in center. Bake potatoes directly on rack until darkened slightly, beginning to wrinkle, and easily pierced with the tip of a knife, 1 to 1 1/2 hours (depending on size).

5 cups vegetable stock (light-colored looks nicest)

1 garlic clove, coarsely chopped
1 dash salt
1 dash pepper
1 cup pitted black olives, finely chopped
2 tablespoons minced flat leaf parsley
2 garlic cloves, minced
1 dash ground pepper
1 pinch red pepper flakes (optional)

Steps:

  • Melt butter in soup pot over medium-low heat. Add onions; cook, stirring occasionally, until tender, about 10 minutes.
  • Stir in vegetable stock, potatoes, garlic, salt & pepper. Increase heat to high; bring to a boil. Reduce heat, cover & simmer until potatoes are very tender (about 10 minutes).
  • Make "caviar": stir all ingredients together in a small bowl, and set aside.
  • Puree the soup in a blender until smooth(will need to do in several batches).
  • Return soup to pot set on medium heat; return to serving temperature.
  • Garnish each serving with a small mound of "caviar". Non-vegans: You can also garnish with finely crumbled hard-cooked eggs and/or sour cream.

Eating caviar in a restaurant or supplying it for a group of people is extravagant to the point of recklessness. Buying a small tin and demolishing it entirely yourself is hedonistic heaven. I love these pancakes with caviar. Unlike regular blini, they do not need yeast, so they take only a few minutes to rustle up. I think of them as potato pancakes, but actually they use only a little potato starch, not real potatoes. They are very plain and not enormously potatoey, but they are the best carrier imaginable for anything salty. (Try them with sour cream and lox.)

1/4 cup potato starch
1/2 cup all-purpose flour
Pinch of salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2/3 cup buttermilk
1 large egg
1 tablespoon melted butter, more for greasing griddle

  • In mixing bowl, combine potato starch, flour, salt, baking powder and baking soda. In separate bowl, mix buttermilk, egg and 1 tablespoon melted butter. Pour wet ingredients into dry, and whisk into a batter.

1 1/2 pounds Yukon Gold potatoes, scrubbed
1/2 medium onion, peeled
Salt and fresh black pepper to taste
3/4 cup creme fraiche
12 spring roll wrappers, each about 6 inches square
1 large egg, beaten
Canola oil for frying
About 2 ounces osetra caviar

Steps:

  • Place potatoes in a large saucepan, and cover with cold water. Bring to a boil, reduce heat and cook at barest simmer until a skewer glides easily through potatoes, about 1 hour. Drain potatoes, cool slightly and peel. Run potatoes through a food mill and into a bowl. Grate onion on the large holes of a box grater directly into bowl with potatoes. Season with plenty of salt and some pepper. Stir in 1/2 cup creme fraiche. Cool to room temperature. (Potatoes can be covered and refrigerated for up to 1 day.)
  • Set one wrapper on a work surface with one corner facing you. Spread scant 1/4 cup potatoes about 2 inches above bottom corner so that potatoes form 1-inch-wide strip that extends almost from one side of wrapper to the other. Fold bottom corner of wrapper over potatoes. Roll wrapper, folding in sides to enclose potatoes. When you get three-quarters of the way to the top, brush remaining edges with beaten egg and continue rolling to seal. Repeat with the rest of the wrappers and filling. (Knishes can be refrigerated, uncovered, for up to 1 day.)
  • Heat 1 inch oil in a large, deep saucepan until very hot but not quite smoking, about 375 degrees. With tongs, add several knishes, and fry, turning once or twice, until golden brown all over, about 1 minute. Remove from oil, and drain on paper towels. Fry remaining knishes in batches.
  • With serrated knife, trim a thin slice from either end of each knish. Cut each knish crosswise into three pieces. Arrange pieces, with one cut side up, on a platter. Top each piece with a dollop of remaining creme fraiche and a little caviar. Serve immediately.
