Steps:
- Add the chocolate chips and butter to a double boiler and cook over low heat until melted.
- Stir in confectioners, cream, vanilla extract and salt until smooth. Remove from heat.
- Taste and decide if you need more sweetness. Stir in optional walnuts if using.
- Spread batter into a parchment lined loaf pan.
- Refrigerate 30 minutes.

- Line an 8-inch square baking pan with aluminum foil.
- Place chocolate in a food processor; pulse until finely chopped.
- Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
- Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.
- Spread chocolate mixture in the prepared pan. Refrigerate until firm, about 2 hours. Cut into 1 1/2-inch squares.

- Melt white chocolate chips in a microwave. Stir in frosting then, add nuts if you desire.
- Line a pan or dish with wax paper, pour in mixture, and spread evenly. Sprinkle top with more nuts or candy sprinkles (optional.) Cut into squares and enjoy!

- Line a 20 x 20cm cake tin with baking parchment. Tip the sugar, cream, butter and glucose syrup into a medium to large saucepan. Heat to dissolve the sugar and melt the butter, stirring now and again.
- Once dissolved, put a sugar thermometer in the pan, making sure the end is completely covered by the syrup - if not, transfer the mixture to a smaller pan (with enough space for the syrup to bubble up). Increase the heat and bring the syrup to a steady boil. Keep bubbling, stirring occasionally to stop the sugar from catching, until the mixture reaches 116C - this is known as the soft ball stage.
- Remove the pan from the heat and leave to sit, undisturbed, for 5 mins, until the temperature drops to 110C. Stir in the vanilla and a good pinch of salt.
- Keep the sugar thermometer in the pan and begin beating the mixture with a wooden spoon, quite vigorously, until the temperature cools to about 60C. By this time the fudge will be really thick and will have lost it glossy shine. Remove the thermometer and continue beating for a few mins more. This process is very important when making fudge, as it creates small sugar crystals, which give the fudge its lovely smooth and creamy texture (see 'fudge know-how', below).
- Before it sets completely, quickly pour the fudge into your prepared tin and smooth over the surface. Leave to cool at room temperature overnight - don't put the fudge in the fridge as it will become sticky and won't set properly. Cut into bite-sized pieces and pop in a box to give as a present. Will keep, in a sealed container, for up to 2 months.

- Prepare a square baking pan for nonstick. I suggest using parchment paper that overlaps the pan itself. That will make it easier for you to lift the fudge out of the pan to serve.
- Melt the chocolate using a microwave safe bowl. Start by melting the chocolate on high, stopping to stir every thirty seconds and stirring. After the first minute microwave in ten second increments and stirring until melted.
- Alternatively, you can use a double boiler to melt the chocolate on the stove. Simply place the chocolate chips in the top of the double boiler over barely simmering water. This method keeps the chocolate away from direct heat, which allows it to melt at a low enough temperature to prevent scorching and separating. Do not forget to stir or whisk the melting chocolate.
- Remove the chocolate from the heat and stir in the remaining ingredients. Then evenly distribute the fudge into your prepped pan. Feel free to add optional nuts. Also, using a rubber spatula on its backside is an easy way to press the fudge into the pan.

- This recipe calls for the use of a microwave. However, you could make this on the stove using a double boiler or similar method. Also, you will need a large microwave-safe bowl for cooking this as well.
- Prepare a square glass baking dish with aluminum foil which also overlaps the sides of the dish. Grease or spray this lined baking dish to prevent sticking as well. You can set this aside.
- I like to start by spraying my bowl with nonstick before cooking in it. Place the chocolate chips into the bowl and cook for 30 seconds on medium. Covering the bowl loosely with a microwave safe paper towel can help prevent a possible mess (at least in my kitchen). Stir in the evaporated milks and then the sugar alternative, butter and vanilla. Cook for another 30 seconds and stir again. Continue this process until everything has melted and blended together- about 4- 4 1/2 minutes total.
- Obviously this will be hot so please take precautions. Remove the bowl from the microwave and pour the fudge into the prepped baking dish. Allow to cool at room temperature. Then refrigerate your fudge until you are ready to cut it into squares.
