I love these cookies but I really wanted to try to make them a little lighter. I actually used sweet potato puree for some of the butter and juice squeezed from an orange for some of the sugar and they still taste great. It sounds a little odd but try it!!

½ cup butter, softened
¼ cup sweet potato puree
½ cup white sugar
1 cup packed brown sugar
½ cup orange juice
4 egg whites
2 teaspoons vanilla extract
1 teaspoon baking soda
2 teaspoons hot water
3 cups all-purpose flour
2 cups semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter, sweet potato, white sugar, brown sugar, and orange juice with an electric mixer in a large bowl until smooth. Add eggs whites one at a time, allowing each egg to blend into butter mixture before adding the next. Beat in vanilla extract. Dissolve baking soda in hot water in a small bowl. Add to sweet potato batter. Stir in flour, chocolate chips, and walnuts. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
  • Bake in preheated oven until edges are nicely browned, about 10 minutes.

I made this recipe based roughly on a few recipes I found and several of my favorite healthy ingredients. Don't want to talk it up too much, but the outcome was a pleasant surprise. My family liked it too, and none of us are the type of people to substitute flavor for health. It does have a few ingredients that you might not find around your kitchen (like chia or diatomaceous earth), even though they are good, healthy foods or supplements that should add to the health value. But I don't think it'd be too hard to omit them or replace with something of similar substance. I would not advise skimping on the chocolate chips. If you like darker chocolate, all the healthier, but I say get your favorite kind of chocolate chips, no matter how unhealthy. I'll also add this does not make a very good dough. If you're the type of person who make chocolate chip cookies as an excuse to eat cookie dough, stick to the old tollhouse recipe. Make sure the diatomaceous earth is "food grade." There is a non-food grade which you don't want to eat! Chia is a very healthy seed that has its roots in Aztec and other native cultures and is only now being grown in quantities enough for people to take it as a supplement. It's the same seed that you put on your chia pet, but you can get supplement chia seed at your health food store. Chia seed, when soaked, absorbs six times its weight in water. To make chia gel, put 1/3 cup of chia in a jar with 2 cups of water. Let soak overnight. You can add this healthy chia gel to all sorts of things for an extra health boost: mayonaise, jelly, eggs, cookie recipes, etc. This recipe calls for 1/2 cup chia gel. You can make just that amount or more, if you might use it other places. It will keep for a couple weeks in the fridge.

3/4 cup coconut flour
3/4 cup oat flour (old-fashioned oatmeal sent through a food processor)
1/2 cup powdered milk
1/2 tablespoon food-grade diatomaceous earth
1/4 cup unsweetened cocoa powder
1/3 teaspoon stevia powder
1/4 cup softened butter
1/4 teaspoon sea salt
3 eggs
1/2 cup yogurt
2 tablespoons honey
1 teaspoon vanilla
2 tablespoons chia seeds (or 1/2 cup chia gel)
2 cups chocolate chips
1 cup chopped raw walnuts

Steps:

  • If you don't have pre-made chia gel, soak 2 tablespoons chia seeds in 6 tablespoons water, to make 1/2 cup chia gel. This should be soaked several hours.
  • Preheat oven to 350°F.
  • Combine the coconut flour, oatmeal flour, powdered milk and diatomaceous earth, cocoa powder and stevia in a bowl. Mix and set aside.
  • Mix butter and salt in blender.
  • Add eggs to butter, but don't worry if it doesn't mix perfectly.
  • Add yogurt, honey, vanilla and chia seed and beat well.
  • Mix in chocolate chips and walnuts.
  • Place on cookie sheet and bake for 15-20 minutes.

These cookies are amazing but I wanted to add some grains and cut the fat. By adding some cheerios and kiwi puree I have done just that. They taste great and have vitamins and antioxidants.

1 kiwi, pureed
½ cup brown sugar
½ cup white sugar
2 eggs
2 teaspoons Mexican vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 cup toasted oat cereal (such as Cheerios ®), smashed
2 cups milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two baking sheets.
  • Cream together the butter, kiwi, brown sugar and white sugar in a large bowl, until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla extract. Combine flour, baking soda, and toasted oat cereal in a bowl; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared baking sheets.
  • Bake in preheated oven until light brown, about 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This recipe is from The Vegetarian Times magazine, I love them, this is the recipe that I found for my cookie monster husband who has cholesterol problems, and these cookies are excellent for him, no butter, no eggs and the omegas from the nuts, and of course they are delicious . Don't forget to wait until dough is cool to add the chocolate chips or they will melt.

3 tablespoons canola oil
2 cups walnuts
1 cup light brown sugar
2 teaspoons vanilla extract
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups rolled oats
1 1/2 cups semisweet vegan chocolate chips (I use only 3/4 cup chocolate chips, to cut calories)

Steps:

  • 1. Preheat oven to 350°F Coat 2 baking sheets with cooking spray, or line with parchment paper.
  • 2. Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil, and blend 2 to 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down sides of food processor occasionally. Transfer to bowl.
  • 3. Whisk together brown sugar and ½ cup water in small saucepan, and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract, and stir until no lumps remain.
  • 4. Whisk together oat flour, baking soda, salt, and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.
  • 5. Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

More complicated than your normal chocolate chip cookie....but the result is well worth it. Every new member needs their special indulgence type recipe, and this is mine. Note that I tend to improvise, so the exactness of the amounts is questionable.. just don't go over 2 tsp on the cornstarch. These cookies are delectable warmed in the microwave or dipped in milk.

1 cup butter
1 1/2 cups whole wheat flour
1 cup all-purpose flour
1 1/2 teaspoons cornstarch
1 1/4 teaspoons baking soda
3/4 teaspoon salt
1/2 cup firmly packed dark brown sugar
1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
1 -1 1/4 tablespoon vanilla extract
1 large egg
1 large egg yolk
2 cups chocolate chips
2 tablespoons milk (optional)

Steps:

  • Preheat oven to 375°.
  • Whisk together cornstarch, flours, soda and salt.
  • Melt the butter completely, but do not burn it, in the microwave or in a saucepan.
  • Cream the butter extremely thoroughly with all three sugars. Cream until you can cream no more.
  • Add egg and egg yolk, beat for an excessive time again.
  • Add vanilla (yes, that really is a tablespoon) and milk, if using. Again, cream together thoroughly.
  • Add flour mixture slowly, stirring together. Add more all-purpose flour if the dough is liquidy, but it shouldn't be as firm as a traditional cookie dough.
  • Stir in chocolate chips.
  • Chill for 2-4 hours or until quite firm.
  • Drop by scant 1/4 cups or by a cookie dropper onto greased baking sheets, bake in your 375° oven for about 13-16 minutes, until done puffing and pale golden brown.
  • Do yourself a favor and eat one warm.
