GREEN CHILI AND MONTEREY JACK QUESADILLAS

Number Of Ingredients 8

3 tablespoons plus 8 teaspoons vegetable oil
1 1/3 pounds poblano chilies,* seeded, thinly sliced (about 6 cups)
3 tablespoons (about) water
3 garlic cloves, minced
1/2 cup chopped fresh cilantro
8 9-inch flour tortillas
1 pound Monterey Jack cheese, grated
8 tablespoons purchased fresh tomato salsa

Steps:

  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Add chilies. Cover and cook until chilies are soft, adding water by tablespoonfuls if chilies become too dark, stirring occasionally, about 10 minutes. Uncover. Add garlic; sauté 1 minute. Transfer to medium bowl. Stir in cilantro. Season chili mixture to taste with salt and pepper.
  • Heat 2 teaspoons oil in each of 2 heavy large skillets over medium-high heat. Add 1 tortilla to each skillet. Top each with 1/4 of cheese and 1/4 of chili mixture, then 2 tablespoons salsa. Top each with 1 tortilla. Cook until bottoms are golden brown, about 3 minutes. Turn quesadillas over. Cook until bottoms are golden brown and cheese melts, about 3 minutes. Transfer to cutting board. Cut each quesadilla into 6 wedges. Transfer to platter. Repeat with remaining oil, tortillas, cheese, chili mixture, and salsa. Serve hot.
  • *Fresh green chilies, often called pasillas; available at Latin American markets and some supermarkets.

2 medium-firm flavorful tomatoes, thinly sliced
2 (4 ounce) cans chopped mild green chilies
to taste minced fresh cilantro
4 soft taco-size flour tortillas (8 to 10 inch)
1 -1 1/2 cup grated reduced-fat Mexican cheese blend

Steps:

  • To make quesadillas, preheat oven to 400 degrees F. Arrange the tomatoes, chilies, and optional cilantro on the entire surface of 2 tortillas. Sprinkle with the cheese, and cover with the remaining tortillas. Arrange the quesadillas on a nonstick baking sheet and bake until the tortillas become lightly golden and crisp on the outside, 12 to 15 minutes; or grill them on a nonstick griddle on both sides until golden. Cut each quesadilla into 4 equal wedges, allowing 2 wedges per serving, and eat out of hand.
  • To make soft tacos, arrange a single layer of tomato slices over one half of each tortilla, and sprinkle with the chilies, cheese, and optional cilantro. Arrange on individual plates. Heat each serving briefly in the microwave (about 1 minute) or preheated 400 degree F oven (about 3 minutes) to melt the cheese, then fold over. Eat at once with a knife and fork or cut into 2 wedges and eat out of hand.

2 tablespoons olive oil
1 pound tomatillos, papery skins removed, quartered
3 cloves garlic, roughly chopped
1 jalapeno, seeds and membrane removed if desired, diced
1 medium white onion, chopped
Kosher salt and freshly ground black pepper
One 7-ounce can roasted green chiles
1 teaspoon ground cumin
4 cups shredded chicken, skin removed
2 cups frozen corn, thawed
One 14-ounce can black beans, drained and rinsed
Sixteen 6-inch corn tortillas
Mexican crema or sour cream, for serving
Crumbled queso fresco, for serving
Sliced radishes, for serving

Steps:

  • For the chicken filling: Heat the oil in a large saucepan over medium-high heat. Add the tomatillos, garlic, jalapeno, onions and 1 teaspoon salt. Cook, stirring occasionally, until soft, about 15 minutes. Add the canned chiles, cumin and 3/4 cup water and bring to a boil. Season with salt and pepper. Reduce the heat, cover and simmer for 10 minutes.
  • Transfer the sauce to a blender (or use an immersion blender) and puree until smooth. (When blending hot liquid, first let it cool for 5 minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.)
  • Pour the sauce back into the saucepan (if using a blender) and add the chicken, corn and beans and warm through. Taste and season with additional salt and pepper if needed.
  • To serve, toast the tortillas over an open flame until just slightly charred (alternatively, wrap in a damp paper towel and microwave for 1 minute to heat through and make pliable). Add about 3 tablespoons of the chicken filling to each tortilla, top with a drizzle of crema, sprinkle with queso fresco and some sliced radishes.
