EASY VANILLA WAFFLE CAKE



Easy Vanilla Waffle Cake image

This vanilla cake is made in a waffle iron! Stack your cake waffles up and top them with delicious whipped chocolate ganache for an easy cake recipe that doesn't require an oven!

1 cup heavy cream
2 cups chocolate chips (milk or semi-sweet)
1/2 cup salted butter (softened)
3/4 cup granulated sugar
1 cup buttermilk
1 large egg
1 teaspoon vanilla extract
1 3/4 cup all-purpose flour
2 teaspoons baking powder
1 pound strawberries or raspberries (optional)

Steps:

  • Make the ganache: bring 1 cup heavy cream to a simmer in a small saucepan over medium heat. Once simmering, stir in chocolate chips until smooth. Transfer to refrigerator to cool until it reaches a spoon-able consistency, about 1 hour. Once cooled, use a hand mixer to beat the mixture until it reaches soft peaks. Ganache will stiffen when returned to the refrigerator.
  • Make the waffle batter: Use a hand mixer to beat together butter and sugar until creamy, about 2 minutes. Add in buttermilk, egg, and vanilla extract and beat until combined. Add in flour and baking powder and mix on a low speed until just combined, scraping the sides and bottom of the bowl to make sure everything gets mixed in.
  • Preheat a Belgian Waffle Maker. Scoop a heaping 2/3 cup of batter onto the waffle iron. Cook waffles one at a time. Transfer cooked waffles to a wire rack to cool completely.
  • Assemble cake: layer the cake with at least 4 waffles, frosted with whipped ganache between each layer. Garnish with fresh berries.

2 15oz Yellow cake mix (made according to package directions for 8 inch round cake pans. )
6 eggs
2 cups water
2/3 cups butter
3 frozen waffles
3 tbsp butter
Maple syrup
3 8 inch round cake pans

Steps:

  • Preheat oven to 350 degrees, and lightly spray 3 round 8 inch pan with non-stick spray and set aside.
  • Using your favorite yellow cake mix prepare as directions state and pour equal amounts into prepared cake rounds. Place one frozen waffle on top of batter and gently press down. Bake for 35 minutes or until a toothpick comes out clean from center of cake.
  • Allow to cool briefly, remove from pans and top the first layer with butter and maple syrup. Repeat butter and maple syrup layers as you stack the cakes on top of each other. Serve and enjoy.

Chocolate cake batter gets waffled in this super-impressive layer cake filled with a pink raspberry cream and chocolate ganache. And with such a short cooking time, you can even make and serve the cake for a special breakfast.

One 16.25-ounce box chocolate cake mix plus the ingredients for baking it
2 cups freeze-dried raspberries
1/4 cup confectioners' sugar, plus more for dusting, optional
1/2 cup mascarpone cheese
1 teaspoon pure vanilla extract
1 1/2 cups heavy cream
6 ounces semisweet chocolate chips
1/2 cup fresh raspberries

Steps:

  • Preheat a waffle maker that makes round waffles on medium. Prepare the boxed cake mix according to the package directions.
  • Pour 1/3 cup of the batter into the center of the waffle maker, close the lid and cook until the cake is lightly browned and springs back when you touch it, 1 to 1 1/2 minutes. Remove the cake from the waffle maker using a fork and set aside on a wire rack to cool completely. Repeat with the remaining batter; you should have 8 waffled cakes total. Let them all cool completely.
  • Pulse the raspberries with the confectioners' sugar in a food processor until it looks like dust. Add the mascarpone, vanilla and 1 cup cream and pulse until thick and creamy.
  • Put the chocolate chips in a medium bowl. Heat the remaining 1/2 cup cream in a small saucepan over medium heat until small bubbles form and it just begins to simmer. Pour the cream over the chocolate and stir until melted and smooth.
  • Put 1 waffled cake on a cake stand or plate. Use an offset spatula to evenly spread a 1/4 cup of the raspberry-cream mixture over the cake, pushing most of it to the edge of the cake, leaving a small well in the middle. Spoon 1 tablespoon of the chocolate ganache into the well and top with another waffled cake. Repeat with remaining waffled cakes, raspberry cream and ganache, finishing with some raspberry cream on top. Decorate the top with the fresh raspberries and drizzle with the remaining ganache (microwave the ganache for a few seconds and stir if it needs to be loosened). If desired, dust with confectioners' sugar before serving.

  • Heat waffle maker. (Waffle makers without nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.)
  • Make cake batter as directed on box, using water, oil and eggs.
  • For each waffle, pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake 3 to 5 minutes or until steaming stops. Carefully remove waffle.

1 cup (about 5 ounces) confetti cake mix or flavor of choice
2 tablespoons cornstarch

2 large eggs, room temperature
1-3/4 cups 2% milk
3/4 to 1 cup plain Greek yogurt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
CREAM CHEESE FROSTING:
4 ounces softened cream cheese or reduced-fat cream cheese
1/4 cup butter, softened
1-1/2 to 2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 300°. Combine the first 5 ingredients and, if desired, rainbow sprinkles. In another bowl, whisk eggs, milk, yogurt and extracts. Add yogurt mixture to flour mixture; mix until smooth., Preheat waffle maker coated with cooking spray. Bake waffles according to manufacturer's directions until golden brown. Transfer cooked waffles to oven until ready to serve., For frosting, beat cream cheese and butter on high until light and fluffy, 2-3 minutes. Gradually beat in confectioners' sugar, 1/2 cup at a time, until smooth. Beat in vanilla. Add enough milk to reach desired consistency. Spread over warm waffles. For a cakelike look, cut waffles into fourths and stack them; decorate with birthday candles.
