SUPER VEGGIE SALAD WITH CREAMY ALMOND DRESSING
I just bought a 3 pound bag of almonds from Sam's club and this dressing is a wonderful way to use them! I hope you enjoy! This dressing thickens up after sitting for a few minutes, so you could actually use less oil(3/4 cup) and the rest water or maybe apple juice and it would be just as good and less calories! The dressing also makes a great dip!

- Dressing:.
- Place the almonds and water into a blender or food proccesor and turn on high speed to purée. Add remaining ingredients, except for oil, and run to blend and whip thoroughly.
- With the motor running, slowly pour in oil and run until the dressing is thick and creamy. (dressing can be prepared and refrigerated for up to 1 week.).
- As stated in the description, you may use 3/4 cup oil and 1/4 cup water or apple juice(or liquid of choice) and get a little thinner dressing. Let sit for a few minutes to thicken up.
- Salad:.
- Put 1/2 cup of the dressing in the bottom of your salad bowl.
- Add all ingredients, except lettuce, and toss to coat.
- Serve:.
- Put several lettuce leaves on each plate and add dressed salad. Serve extra dressing on the side. Enjoy!

HARE KRISHNA ALMOND SALAD DRESSING
This is an approximate duplicate of the salad dressing which is served at Gainesville community Hare Krishna House as well as the famous Krishna Lunch at The University of Florida. It is vegan, but in appearance similar to that of ranch dressing. This should only be made fresh.

I used to go to this delicious vegetarian buffet in college. They made the most amazing almond salad dressing that I (and everyone else!) would drench salads with, not to mention any other food. - Remove wilted exterior leaves from each head of lettuce. Cut stems from the lettuce heads, separate leaves and swish in a large basin of cold water, letting any sand or dirt sink to the bottom. Lift the leaves from the water and transfer to a colander. Shake away excess water. Wrap in kitchen towels to dry or use a salad spinner.
- Make the dressing: Put almonds, vinegar and garlic in a small bowl. Whisk in the olive oil. Season with salt and pepper.

- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
- Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
- Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.
