ALMOND GRAHAM CRUMB CRUST
This is a great crust for almond cheesecake, or ricotta cheesecake with amaretto. Or any pie or cake that toasted almonds go with. Toasting the almonds first adds another depth of flavour to the crust.

Steps:
- Toast the almonds by spreading them over the bottom of a cookie sheet and cooking in the oven at 350 degrees F for 10 to 15 minutes. Stir them a couple of times during cooking. Remove when you can see they are lightly toasted.
- Grind the almonds in a food processor or coffee grinder. Do the same with the graham wafers. Mix the almond and graham crumbs in a small bowl, and pour the melted butter over the crumbs. Mix the butter into the crumbs until it is evenly moist. Press crumbs into the bottom of a 9 or 10 inch springform pan. Or if you are making a pie, press over bottom and up sides of a pie plate. Bake at 350 degrees F for 10 minutes. Cool before adding filling.
ALMOND CRUMB CRUST

- In a large bowl, whisk together the flour, almonds, sugar, and salt. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs with a few larger clumps remaining. Using your fingers, squeeze the mixture together to create pea-size to 3/4-inch pieces. If not using right away, cover and chill until ready to proceed.
ALMOND CRUMBLE TOPPING
Steps:
- Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds.
- Stir in the butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2 inch crumbs. Set aside again while you prepare the filling.

- Make the crust:
- In a bowl combine well the crumbs, the almonds, the butter, and the sugar, press the mixture onto the bottom and side of a 10-inch pie plate, and bake the shell in the middle of a preheated 350°F. oven for 10 minutes, or until it is browned lightly. Let the shell cool on a rack.
- In a large bowl beat the yolks with the condensed milk and stir in the lime juice, a little at a time, stirring to combine the filling well. Spoon the filling into the shell and chill the pie for 1 hour. In a bowl beat the egg whites with a pinch of salt until they hold soft peaks, add the sugar, beating, 1 tablespoon at a time, and beat the meringue until it holds stiff peaks. Spread the meringue over the filling and bake the pie in the middle of a preheated 350°F. oven for 15 minutes, or until the meringue is just golden. Chill the pie for 2 hours.
CHOCOLATE ALMOND CRUMB CRUST
This is so good, and can be used with pies and cheesecakes. Try to use toasted whole almonds for this it really makes a huge difference in the taste, I make a triple recipe, divide into three equal potions, use one and then freeze the other two in freezer bags to have ready for when I need it for a recipe. This crust is well worth making.

- Heat oven to 350 degrees. To prepare filling, toss berries with sugar, lemon zest and tapioca (if using). Set aside.
