Steps:
- Season the ground beef with the all-purpose seasoning salt and set it aside.
- Add the sweet ketchup and brown sugar to a small bowl and stir until the sugar dissolves. Set the ketchup mixture aside.
- Open the Instant Pot and turn on the sauté setting for 5 minutes.
- Keep the lid off and add the butter, onion, bell peppers, and garlic to the stainless-steel inner pot.
- Sauté the vegetables in the butter for about 2 minutes or until the onions and peppers have softened.
- Turn off the sauté setting and remove from the heat the inner pot with the onion and pepper mixture.
- In a large bowl, mix the bread crumbs and the milk.
- Then mix in the egg, Worcestershire sauce, onion powder, thyme, basil, parsley, paprika, pepper, and the sautéed vegetables.
- Gently mix the seasoned ground beef into the other ingredients until all the ingredients are well combined. (You can do the mixing by kneading with your hands, stirring by hand, or with a stand mixer on low.)
- Form a loaf with the ground beef meat mixture and place it in a pre-greased loaf pan that fits inside the Instant Pot inner pot. Or place the meatloaf on a piece of greased aluminum foil that you wrap around it like a boat. The foil should come above the meatloaf on all sides but not cover the top of the loaf. Pro tip: You can make multiple little meatloaves and place them side by side or stacked in the Instant Pot. If you have multiple trivet racks, you can use another one as a shelf to stack!
- Spoon or brush the top of the meatloaf with the set-aside ketchup mixture.
- Pour the water into the Instant Pot stainless steel inner pot and add the Instant Pot trivet rack to the pot.
- Place the foil-wrapped meatloaf or meatloaf in a pan on the trivet rack.
- Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 35 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 5 minutes.
- To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
- Use an oven mitt to remove the meatloaf using the trivet rack handles.
- Remove the meatloaf from the foil or pan, being very careful because the drippings will be hot!
- Optionally garnish your meatloaf with fresh chopped parsley or fresh sprigs of thyme.
- Then slice this Black folks' Southern soul food meatloaf on a platter, serve, and enjoy!

Steps:
- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
- Serve with additional warm BBQ sauce alongside.

Steps:
- Preheat oven to 400 degrees. Remove crusts from bread, and place slices in the bowl of a food processor. Process until fine crumbs form, about 10 seconds. Transfer breadcrumbs to a large mixing bowl. Do not substitute dried breadcrumbs in this step, as they will make your meatloaf rubbery.
- Place carrot, celery, yellow onion, garlic, and parsley in the bowl of the food processor. Process until vegetables have been minced, about 30 seconds, stopping to scrape down the sides of the bowl once or twice. (Chopping vegetables this way saves time and ensures that vegetables will be small enough to cook through and not be crunchy). Transfer vegetables to bowl with the breadcrumbs.
- Add 1/2 cup ketchup, 2 teaspoons dry mustard, pork, veal, beef, eggs, salt, pepper, Tabasco, and rosemary. Using your hands, knead the ingredients until thoroughly combined, about 1 minute. The texture should be wet, but tight enough to hold a free-form shape.
- Set a wire baking rack into an 11-by-17-inch baking pan. Cut a 5-by-11-inch piece of parchment paper, and place over center of rack to prevent meat loaf from falling through. Using your hands, form an elongated loaf covering the parchment.
- Place the remaining 3 tablespoons ketchup, remaining 2 1/2 teaspoons mustard, and brown sugar in a bowl. Mix until smooth. Using a pastry brush, generously brush the glaze over loaf. Place oil in a medium saucepan set over high heat. When oil is smoking, add red onion. Cook, stirring occasionally, until onion is soft and golden in places. Add 3 tablespoons water, and cook, stirring, until most of the water has evaporated. Transfer onion to a bowl to cool slightly, then sprinkle onion over the meatloaf.
- Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking loaf until an instant-read thermometer inserted into the center of the loaf registers 160 degrees. about 25 minutes more. Let meatloaf cool on rack, 15 minutes.

UPSIDE-DOWN BARBEQUE MEATLOAF
When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

Steps:
- Preheat the oven to 400°F.
- Crush the crackers. I use the food processor to get finer crumbs.
- Mix the meat, soup, and egg together with the seasonings.
- Add cracker crumbs until the texture is firm but not dry.
- Press the meatloaf mixture into a loaf pan.
- Bake until almost done.
- Top with barbecue sauce and American cheese. Continue baking until sauce is heated, cheese is melted and meatloaf is done (160° on the meat thermometer).
- Muffin variation: Divide meatloaf mixture into 6 even portions.
- Press into large size muffin tin that has been sprayed with non-stick cooking spray.
- If adding a sauce, form a well in the top of each muffin.
- Check baking time carefully, as the smaller size allows the dish to bake more quickly. I have found that baking time is reduced to about 35 minutes in this form.

ALL-AMERICAN BARBECUE SAUCE
I'm very excited to show you my take on America's most popular style of barbecue sauce--which of course originated in and around Kansas City. After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.
