OKRA FRITTERS
These fried okra fritters are delicious! Easy to make and a wonderful way to eat okra. Great summer food!

Steps:
- In a large mixing bowl with a spoon mix together all ingredients except okra and oil. Fold in the okra. Heat the oil in a large skillet. Drop by spoonfuls into the hot oil. (I use a 1/4 cup measuring cup for each fritter). Fry on one side about 2 minutes or until good and crusty, turn and fry the other side. Drain on paper towels. Slather with butter and enjoy
OKRA PATTIES
My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully. NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with.

- Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides.

These fried okra patties are made from fresh okra and onion in a cornmeal batter. A delightful southern-style snack.

Steps:
- Heat 1 inch of oil in a large skillet to 375 degrees F (190 degrees C).
- In a large bowl, mix together the okra, onion, salt, pepper, water and egg. Combine the flour, baking powder and cornmeal; and stir that into the okra mixture.
- Carefully drop spoonfuls of the okra batter into the hot oil, and fry on each side until golden, about 2 minutes per side. Remove with a slotted spoon, and drain on paper towels.

AKKARA PATTIES
Steps:
- 1. make the batter: wash & drain peas, then soak overnight in cold water. Grind peas in a blender, adding water gradually to form a firm paste. Fold onion, salt & cayenne into mixture (use no more than 1/8 tsp. cayenne first unti you determine how hot you like it). 2. Fry the patties: in a large, deep non-stick skillet, heat a thin layer of the combined oils. Working in batches, drop spoonfuls of pea paste into skillet until it is full, but not crowded, with patties. Cook each patty 3-4 minute until browned on one side. Then turn to brown the other side. Add a few more drops of oil if necessary to ensure the edges of patty become slightly crispy. When both sides are browned, remove fritters witha slotted spoon and drain on paper towels. Garnish with sea salt flakes (optional). Serve warm with tomoato chutney or chili sauce.

- Soak the beans for about 30 minutes till the skin is swollen and peel off the skin by rubbing it between your palms, or simply use a blender by pulsing it a couple of times till the skin falls off.
- Put the beans into a large bowl and separate the skin from the beans by adding enough water and gently swirling the beans around so that the skin can float. Pour off the skins into a colander. Repeat this process until the beans are clean.
- Pour the clean beans inside the blender, add the water, red bell pepper, habanero pepper, salt, bouillon powder, and crayfish, and blend into a paste.
- Pour the batter into a large bowl and whisk it together until it's light and fluffy. Hand whisk for about 3 to 4 minutes or an electric hand mixer for about a minute or two.
