2 1/2 lbs fully cooked boneless smoked ham (pre-sliced)
1/2 cup light brown sugar
1/4 cup honey
2 tablespoons orange juice
2 tablespoons cider vinegar
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon smoked paprika
1/4 teaspoon cayenne
1/4 teaspoon salt

Steps:

  • Remove the ham from its wrapping and pat dry. Cut two pieces of aluminum foil large enough to wrap the ham, and place the ham on top of the foil.
  • Combine the remaining ingredients in a small bowl and whisk to blend. Drizzle 1/4 cup of the glaze over the ham, then wrap the ham in the foil, and place it in the basket of the air fryer. Set the temperature to 320°F and cook for 15 minutes.
  • Remove the basket from the air fryer and carefully open the foil packet, pushing the foil edges down to expose the top and sides of the ham, but making sure that the ham is still sitting on the foil (so that the foil can catch any juices as they drip). Brush the ham with more glaze, and cook for 5 minutes at 320°F. Remove the ham and brush again with more glaze. Repeat this two more times, until the ham is nicely glazed on top and sides, 15 to 20 minutes total. Take care not to overcook the ham or it will dry out.
  • Remove the ham from the air fryer and allow to rest briefly, then serve.
  • Note: This recipe was developed for the Emeril 5.3 quart Digital Air Fryer.

1 fully cooked bone-in ham, shank end (about 10 pounds), at room temperature 1 to 2 hours
1/2 cup honey
1/4 cup apricot jam
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
4 cloves garlic, smashed
2 jalapenos, seeded and diced small
Zest and juice of 1 orange
Freshly ground black pepper
Cheeses (such as Swiss and Cheddar), deli-sliced and cut into triangles
Hawaiian sweet rolls, split
Mustards (such as whole-grain mustard, Dijon, yellow mustard)
Mayonnaise
Sliced cornichons
Pickled Red Onions, recipe follows
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
1 bay leaf
Red pepper flakes
1 large red onion, halved and sliced into 1/4-inch-thick half-moons

Steps:

  • For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
  • Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
  • Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
  • Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
  • Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
  • Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
  • For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
  • To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

GLAZE:
1/2 cup orange juice, divided
1 teaspoon Chinese five-spice powder
1/3 cup packed brown sugar
1 tablespoon honey
4 teaspoons cornstarch
2 medium oranges, peeled and sectioned
1 can (20 ounces) unsweetened pineapple tidbits, drained

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 2-1/2 to 3 hours., Meanwhile, in a small saucepan, combine 1/4 cup orange juice and Chinese five-spice powder; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 1-2 minutes. Stir in brown sugar and honey. In a small bowl, mix cornstarch and remaining orange juice until smooth; stir into brown sugar mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. , Remove ham from oven. Brush with half of the glaze. Bake ham, uncovered, until a thermometer reads 140°, 15-20 minutes. Just before serving, stir fruit into remaining glaze; heat through. Serve with ham.

  • Make the Glaze: In a small saucepan or microwave safe bowl, combine the brown sugar & honey glaze ingredients (brown sugar, honey, orange juice, optional mustard or apple cider vinegar, cinnamon, clove, and black pepper). Heat (can be done on the stovetop or gently heated in the microwave) and whisk until brown sugar is dissolved and glaze is well combined. Set aside.
  • If the ham has a netting, remove it from the ham. If ham is not pre-sliced, score the ham with shallow 1/2-inch criss-cross cuts.
  • Line the air fryer basket with 2 pieces of long, overlapping foil sheets (see step-by step photos on website write up above). Lay the ham on top of the foil and then brush about 1/3 of the glaze over the ham. Close the foil over the ham and wrap tightly.
  • Air Fry at 300°F/150°C for 20 minutes. Open the foil and brush the ham with more glaze (make sure to reserve some glaze for finishing & serving). Close the foil tightly, and Air Fry again at 300°/150°C for 20 minutes.
