SWISS CHEESEBURGER SLIDERS

Steps:
- Heat the grill or grill pan to medium heat (350 degrees F) and rub the grate with a towel dipped in oil.
- In a large bowl, mix together the meat, salt, and pepper until well combined. Shape into 8 (1/4-inch thick) patties and brush the patties with vegetable oil.
- Cook the patties until browned on first side, about 1 to 2 minutes. Flip, top with cheese, close grill top and cook until cheese is melted and patty is cooked through, about 1 to 2 more minutes. If you are using a grill pan, tent the burgers with foil to melt the cheese.
- Serve the patties on the slider buns with optional toppings.
AGED-CHEDDAR-AND-SWISS CHEESEBURGERS
For these burgers, Martha loves Milton Creamery's Prairie Breeze cheddar and Challerhocker Swiss, both available at Murray's Cheese. Grate the horseradish and add it to the cheeses right before grilling; it quickly loses its potency once grated.

- Preheat grill to medium. Combine both cheeses and horseradish. Gently form beef into 8 patties, each about 4 inches in diameter. Season generously with salt and pepper. Brush grates with oil; grill burgers 4 minutes. Flip; top each with just over 1/4 cup cheese mixture. Cover grill and cook, about 4 minutes more for medium-rare. Remove burgers from grill; let rest 5 minutes before assembling.
- Combine mayonnaise and ketchup. Brush split sides of buns with butter; grill until lightly toasted. Season tomato with salt and pepper. Sandwich burgers in buns with mayonnaise mixture, tomato, bacon, lettuce, and pickles.

- Heat grill to medium-high. In a large bowl, gently fold together beef, Worcestershire sauce, 1 tablespoon salt, and 1 teaspoon pepper. Form into 8 equal-size mounds.
- Shape cheese into 8 equal-size disks. Press a small well in the center of each beef mound. Place cheese in well; wrap beef around cheese, pinching to seal.
- Lightly oil grates. Place burgers on grill; cover. Cook until grill marks are visible on first side, 4 to 6 minutes. Turn burgers with a spatula; cook until grill marks are visible on other side and meat is just slightly pink in the middle, 4 to 6 minutes more for medium-rare.
- To serve, layer bottom roll halves with spinach, burgers, tomato, and mushrooms, if using, dividing evenly. Spreadtop roll half with mustard and Roasted Red-Pepper Sauce, as desired.
