Yield Enough for one 8-inch cake

Number Of Ingredients 7

One .25-ounce packet unflavored powdered gelatin
1 cup good-quality white chocolate discs or chopped white chocolate (at least 30 percent cocoa butter)
1/2 cup sweetened condensed milk
1 teaspoon liquid white food color gel
1 cup granulated sugar
1/3 cup light corn syrup
Powdered food colors in assorted colors

Steps:

  • Bloom the gelatin by pouring 3 tablespoons of cool water into a small bowl and sprinkling the gelatin evenly over top. Allow the gelatin to sit until it has absorbed the water.
  • Place the white chocolate, sweetened condensed milk and white food color into a medium heat-proof bowl.
  • Combine the sugar, corn syrup and 1/4 cup of water in a small saucepan. Stir gently to ensure that the sugar is moistened. Heat the mixture over high heat until boiling and allow to boil for a minute or two until the syrup is clear. Remove the pot from the heat and stir in the bloomed gelatin. Pour the syrup and gelatin mixture into the bowl of chocolate and milk and allow to sit for 30 seconds before stirring until smooth.
  • Use an immersion blender to emulsify the glaze, making sure that the head of the blender stays below the surface of the glaze. This will ensure your glaze doesn't become aerated. Pour the glaze through a fine sieve if there are any lumps or air bubbles.
  • Color the glaze with powdered food colors by separating the desired amount of glaze into individual containers and stirring in the color. Mirror glaze should be poured when the temperature reaches 94 to 95 degrees F.

For those of us who prefer to sweeten with agave, this glaze, which can also moonlight as a dipping sauce, is a godsend. You'll need to store it at room temperature to prevent it from getting too thick.

Yield makes about 1 3/4 cups

Number Of Ingredients 7

1/2 cup coconut milk
1/3 cup agave nectar
1/3 cup Better Than Milk Rice or Soy Powder
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
3/4 cup melted refined coconut oil or canola oil
1 tablespoon lemon juice

Steps:

  • Combine the coconut milk, agave nectar, rice- or soy-milk powder, cocoa powder, and vanilla in the bowl of a food processor and blend on medium speed for 1 minute. While the processor is running, gradually add 1/2 cup of the coconut oil and 1/2 tablespoon of the lemon juice and blend until thoroughly incorporated. Add the remaining 1/4 cup coconut oil and 1/2 tablespoon lemon juice and process for 1 minute more. The glaze can be stored, covered tightly, at room temperature for up to 4 days.

Although replacing the sugar in the donut recipe with agave nectar takes the crunch factor down a level, these are equally as important to your breakfast arsenal. If you still want that crispiness and are open to experimenting, try switching out the agave for coconut sugar (helpful substitution suggestions on page 24!). Either way, you can't go wrong. The donut here is shown topped with the Agave-Sweetened Chocolate Glaze (page 124).

1/3 cup melted refined coconut oil oir canola oil, plus more for brushing the trays
3/4 cup rice flour
1/3 cup sorghum flour
1/2 cup potato starch
1/4 cup arrowroot
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
1/4 teaspoon xanthan gum
3/4 cup agave nectar
6 tablespoons unsweetened applesauce
1/4 cup vanilla extract
1/4 cup hot water

Steps:

  • Preheat the oven to 325°F. Brush 2 six-mold donut trays with coconut oil and set aside.
  • In a medium bowl, whisk together the flours, potato starch, arrowroot, baking powder, salt, baking soda, and xanthan gum. Add the agave nectar, coconut oil, applesauce, vanilla, and hot water and mix with a rubber spatula just until the ingredients are incorporated. Continue mixing until the batter is smooth. Using a melon-baller or tablespoon, drop 2 1/2 tablespoons of batter into each donut mold. Using a toothpick, spread the batter evenly around the mold.
  • Bake for 8 minutes, rotate, and continue baking until the donuts are golden brown, about 8 minutes more. Let cool in the molds for 5 minutes if sprinkling with toppings such as cinnamon sugar, or 15 minutes if using glaze or icing. Run a knife around the donuts in the molds, lift them out, and place them on a baking sheet. Coat them with your choice of topping (see page 131).

¾ cup white sugar
½ cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
¾ cup milk
2 tablespoons milk
2 egg
2 tablespoons butter, melted
1 teaspoon vanilla extract
¼ cup butter
1 tablespoon heavy cream
1 tablespoon milk
2 teaspoons corn syrup
1 teaspoon vanilla extract
1 ounce bittersweet chocolate, chopped
1 ounce semisweet chocolate chips
1 ¼ cups powdered sugar

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray 11 donut cups with cooking spray.
  • Mix flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl. Beat in 3/4 cup plus 2 tablespoons milk, eggs, 2 tablespoons melted butter, and vanilla extract using an electric mixer. Beat until well blended.
  • Pour batter into a zip-top bag and cut off 1 corner. Fill each donut cup about 3/4 full using the zip-top bag.
  • Bake in the preheated oven until a toothpick inserted into a donut comes out clean, about 10 minutes. Allow to cool slightly, 5 to 10 minutes.
  • While donuts cool, combine 1/4 cup butter, cream, milk, corn syrup, and vanilla extract in a small saucepan over medium-low heat until butter is completely melted, 2 to 3 minutes. Reduce heat to low and stir in bittersweet and semisweet chocolate until melted, 2 to 3 minutes more. Remove from heat and whisk in powdered sugar to combine. Dip each cooled donut into the glaze and let cool and set, about 15 minutes.

  • Begin by melting the cocoa butter. I use my glass measuring cup in the microwave to do this and heat for 1 minute, stir, and then heat for 1 more minute. At this point there will still be some unmelted pieces, but after a couple minutes of stirring, they will melt too with no need to heat again in the microwave.
  • Place the cocoa powder in a bowl. Pour the melted cocoa butter over the top and stir. If the mixture is too thick at this point, put it back in the microwave for 10 seconds. You want the mixture to be very liquid.
  • Pour the mixture into candy molds and let them set at room temperature for 3 to 4 hours to harden. Once hardened, the chocolates can be popped out of the molds.
