CRAB AND AVOCADO DUET
Steps:
- Pit and peel the avocado and cut it into 1/2-inch chunks. In a small bowl toss the avocado chunks gently with 1 tablespoon of the lemon juice and season with salt to taste. In a medium bowl, whisk together remaining lemon juice, 1 teaspoon Dijon mustard, pinch of white pepper, and 1/4 teaspoon salt. Add crabmeat and toss.
- Stand an empty 15-ounce can with both top and bottom removed on a serving plate. Scoop a quarter of the avocado into the can. Place 1/4 of the crabmeat on top and press down gently into the mold. Gently pull the can off the avocado and crab mixture. Garnish with a half teaspoon of chives. Repeat with the remaining 3 servings and serve.

- To make the crab mix, flake the crabmeat into a small bowl and mix in the mustard and oil, then season to taste. Can be made the day ahead. Add the basil and chilli just before serving.
- To serve, halve and stone the avocados. Fill each cavity with a quarter of the crab mix, scatter with a few of the smaller basil leaves and eat with teaspoons.

I couldn't quite find a recipe with what I had in mind, so after looking at a few different ones, I tried this. I was surprised at how much I enjoyed this. It is rich, but such a treat!

- Saute onion and garlic in butter until onion is nearly translucent.
- Add oregano, basil, red pepper flakes and salt/pepper.
- Add half and half, bring to boil.
- Mix corn starch with enouch water to dilute it, and pour into boiling sauce until you get desired consistency.
- Stir in crab and shrimp, cook another minute and take off of heat.
- Spoon over angel hair pasta and enjoy!

- Bring several cups of water to a boil in a medium sized pot. Add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.
- Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the avocado, basil, and salt. Process until smooth and creamy.
- When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately.
- Please note: This dish does not reheat well due to the avocado in the sauce. Please serve immediately.

- Get the pasta cooking in a very large pot of salted boiling water. When it's finished, drain pasta from the pot, setting aside about 1/2 cup of pasta water. Return pasta to large pot and set aside.
- In a medium saucepan, melt the butter over medium heat. Add garlic and cook for about 1-2 minutes. Add a pinch of salt and the spinach to the saucepan (Yes, the pan will be full. Just stuff it all in.) Cover pot and reduce heat to medium-low. Let the mixture cook for about 4-5 minutes or until the spinach is completely wilted.
- Add the yogurt, avocado, lemon and 2 Tablespoons of reserved pasta water to the spinach mixture. Stir it a bit, then buzz it up with an immersion blender. (If you don't have one, transfer to a food processor or a blender. Blend well, and return sauce to the pot.) Stir in the cheese, and add more pasta water if it seems too thick. Add salt and pepper generously to taste.
- If your pasta is still hot, simply toss the pasta and sauce together in a large serving bowl. If it's not, then combine the past and sauce in one of the pots (preferably the larger one) and cook over medium low until everything is hot. To serve sprinkle with grated cheese.

WHITE SAUCE CRAB PASTA
This is a creation of my own that resulted from too much white sauce when I made another recipe from here. So, I played around with what I had in the house and came up with this tasty meal. It actually uses imitation crabmeat instead of real crab. It's very mild, so feel free to spice it up if you prefer.

- Cook the pasta as directed on the box.
- Meanwhile, in a saucepan, melt the butter over medium heat.
- Add the onion and cook, stirring often until softened, for about 5 minutes.
- Stir in the flour and cook for about 1 minute.
- Stir in the clam juice, cream and garlic powder.
- Bring to a boil, stirring continuously.
- Drain pasta and return to the pot.
- Stir in the imitation crab and cream sauce.
- Toss to combine all the ingredients.
- Garnish with cilantro or parsley if desired.

- Make salsa. mix red onion, avocade, tomatoes , coriander, lime juice and 1 tbso of olive oil. season and set aside.
- Heat the remaining oil in a pan and cook the garlic and chilli for 30 secnds. Add the crabmeat and heat through.
- Drain the pasta and return to the pan, stir in the carabmeat mixture and half of the salsa. Divide between for plates and spoon on the remaining salsa.
