5 cups cooked rice ((see instructions))
3 tablespoons oil
2 large eggs ((beaten))
4 ounces fresh shrimp ((110g, 40-60 size, deveined and shells removed))
1 medium onion ((finely diced))
1/2 cup Virginia ham, cut into cubes ((about 4 ounces/110g))
1/2 cup Chinese Roast Pork
3/4 cup frozen peas ((thawed))
1 1/2 teaspoons salt
¼ teaspoon sugar
1 teaspoon Shaoxing wine ((optional))
2 scallions ((finely chopped))
2 cups romaine or iceberg lettuce ((finely chopped))
1/8 teaspoon freshly ground white pepper

Steps:

  • Cook the rice according to the directions on the package. With all fried rice recipes, it's best to use a little bit less water so as to prevent producing a mushy, sticky rice mess that you will not be able to stir-fry properly! After the rice is done, let it cool uncovered. When the steam stops wafting off the fresh-cooked rice, use a fork to fluff the rice up and break it apart. Don't worry of there are still clumps - you can deal with those in the wok later.
  • If you refrigerate the rice overnight, it will definitely clump; you can easily break up the cold rice clumps into individual grains with your hands. Just rinse your hands with cold water periodically if they get too sticky during the process.
  • Heat the wok over medium high heat, and add 1 tablespoon of oil, followed by the beaten eggs. Fold and scramble them gently, taking care not to scorch the eggs. Transfer the eggs back into the original egg bowl and set aside. In a pot of boiling water, blanch the shrimp and drain. Set aside.
  • Heat the wok now over high heat. Add 2 tablespoons of oil and the diced onion. Stir-fry until the onions are translucent. Next, add the diced ham and pork, and stir-fry for 30 seconds. Add the rice and stir-fry for 2 minutes, being sure to heat the rice uniformly. Use your wok spatula to flatten out and break up any remaining rice clumps. Add the shrimp and peas, and stir fry continuously for another 2 minutes until the rice is heated through.
  • Next sprinkle the salt and sugar over the rice. If using, drizzle the Shaoxing around the perimeter of the wok to get a good sizzle and to cook off some of the alcohol in the wine. Mix everything to ensure the seasonings are uniformly incorporated.
  • If the rice looks a little dry, feel free to sprinkle in some water or chicken stock, or if you want to be a bit more authentic, just a touch more oil (be careful with this-too much water content makes it soggy; too much oil makes it greasy). Adding some liquid directly to large clumps of rice will help to break them up.
  • Next, mix in the scrambled eggs, scallions, chopped lettuce, and white pepper. Stir fry to combine, until the lettuce is just wilted, and serve!

2 cups fresh bean sprouts
2 scallions, chopped, including green ends
1 cup lettuce, Shredded
2 eggs, slightly stirred
1/4 teaspoon pepper, Ground
1 teaspoon m.s.g.
1/4 cup soy sauce
1/4 cup vegetable oil

Steps:

  • Mix together pepper, m.s.g. and soy sauce and set aside. Heat wok or frying pan hot and dry.
  • Add one half of the oil.
  • Turn heat to medium.
  • Add the eggs, and stir lightly so the whites and yolks are mixed slightly.
  • Remove from pan while still a little soft, and put aside. Turn up heat; add remainder of oil and add the meats, bean sprouts and scallions.
  • Stir fry for 2 minutes.
  • Add the hot rice. Pour soy sauce mixture and mix thoroughly.
  • Put back the scrambled eggs.
  • Turn off heat and add the lettuce. Stir and serve. Substitutions and Variations: The fresh bean sprouts may not be obtainable in your area.
  • You may leave them out of the recipe and increase the amount of shredded lettuce to 2 cups.
  • A small green pepper, halved and finely diced is also a good substitute for the bean sprouts, and will brighten the color.

1 lb rice, cold, cooked, preferably from yesterdays leftover. Cold rice is not so sticky
2 eggs
2 ounces cantonese roast pork (cha xiu)
2 ounces shrimp, shelled and deveined, cooked
1 teaspoon fresh coriander leaves, chopped
7 -8 drops dark soy sauce
1/2 teaspoon light soy sauce
1/4 teaspoon salt
3 tablespoons oil
4 ounces chicken broth

Steps:

  • Break up the lumps in the cooked rice (the goal is to try to separate cooked rice into individual grains).
  • Dice roast pork.
  • Beat eggs.
  • Heat iron wok till smoking hot.
  • Swirl a ladle of cold oil in the wok to coat the inside evenly.
  • Pour off the oil
  • Add 2 Tbsp oil to wok.
  • Pour the beaten egg into the hot wok.
  • Before the eggs are completely set, put in the rice, then the roast pork and the fresh coriander.
  • Toss and turn the rice very quickly for about ten seconds with spatula.
  • Add the salt, light and dark soy sauce.
  • Toss and turn the rice very quickly for about another ten seconds.
  • When you see some the rice grains jumping up and down in the work (meaning the rice is really hot), add half the broth.
  • Toss quickly for another ten seconds, and add the other half of the broth.
  • Add another Tbsp oil and toss for a further 3 seconds.

1 tbsp of olive oil or ground nut oil
1 tsp of dark soy sauce (or more to taste)
a very small amount of sesame oil
3 cup sized portions of boiled rice
prawns (or chicken)
chopped ham
spring onion
2 beaten medium eggs

Steps:

  • heat the oil in a wok or large frying pan and keep on a high heat throughout
  • add the spring onions ham mushrooms and prawns stir fry for about one and a half minutes then add rice and soy sauce stir fry for another two minutes
  • make a well in the wok with the rice and pour in the beaten egg wait a few seconds then stir fry vigorously till scrambled and mixed
  • continue to stir fry till cooked through
  • serve & enjoy

For Christmas in 1968 my dad gave me Jim Lee's Chinese Cookbook. This rice is the first thing I ever cooked from my first cookbook. Still my favorite Fried Rice recipe today.

4 c hot cooked rice
1 c pork, roasted and diced or use char sui
1 c shrimp, cooked, diced
1 c chicken, cooked and diced
2 c bean sprouts, fresh
3 scallions, chopped including green
1 c lettuce, shredded
2 large eggs, slightly stirred
1/4 tsp freshly ground white pepper
1/4 c soy sauce
1/4 c canola oil, or bacon fat

Steps:

  • 1. Mix together pepper and soy sauce and set aside. Heat wok or frying pan hot and dry. Add one half of the oil. Turn heat to medium. Add the eggs, and stir lightly so the whites and yolks are mixed slightly. Remove from pan while still a little soft, and put aside.
  • 2. Turn up heat; add remainder of oil and add the meats, bean sprouts and scallions. Stir fry for 2 minutes. Add the hot rice. Pour soy sauce mixture and mix thoroughly. Put back the scrambled eggs. Turn off heat and add the lettuce. Stir and serve.
  • 3. SUBSTITUTIONS AND VARIATIONS: If the fresh bean sprouts are not be available you may leave them out of the recipe and increase the amount of shredded lettuce to 2 cups. A small green pepper, halved and finely diced is also a good and color or add a cup of frozen peas. Young Jewel is never made exactly the same way by different cooks, it gives us license to use your ingenuity and preference.
